A delicate meat recipe from the Southern chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Vary this dish by adding a cup of chopped, fresh-roasted peanuts just before serving.

2 beef sweetbreads
2 tablespoons flour
2 tablespoons butter
salt and pepper, to taste
2 cups milk
1 lb mushroom, cleaned and sliced
panko breadcrumbs or soft breadcrumbs, toasted
3 tablespoons butter

Steps:

  • Poach sweetbreads for 20 minutes in water to cover (adding 1 teaspoon salt and 1 tablespoon vinegar per quart of water).
  • Drain and cover with very cold water or chipped ice until firm.
  • When firm enough to handle, remove all loose membranes.
  • Saute sweetbreads in 1 tablespoon of butter.
  • Blend in 1 tablespoon of flour; add salt and pepper to taste and 1 cup of milk.
  • Simmer until thickened.
  • Saute mushrooms in remaining butter, blend in remaining flour, add sale, pepper and milk.
  • When thickened, combine with sweetbread mixture and turn into an oven-proof casserole.
  • Cover with toasted bread crumbs and dot with butter.
  • Bake in a 400F oven for 5 to 8 minutes.

FONDANT CANDY

An old-fashioned candy from the Mississippi Valley chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. From David S in Nashville: Candies are usually stirred constantly until they come to a boil. The sugar needs to be completely dissolved before it comes to a boil. After the candy comes to a boil you need to let it boil without stirring. It's also important that the candy cool down undisturbed to the proper temperature before beating it.

4 cups sugar
2 cups water
1/4 teaspoon cream of tartar (it makes a whiter candy)
4 tablespoons light corn syrup (Karo)

Steps:

  • Place all ingredients in a saucepan and boil, rather slowly, to 236F on a candy thermometer or until mixture reaches soft-ball stage.
  • Remove from heat to stop boiling; brush down sugar crystals with a dampened pastry brush (this is the important first step to prevent candy from being hard, grainy or sugary).
  • Pour the hot candy at once onto a platter which has been lightly dampened with cold water (to help prevent sticking) and allow it to cool to lukewarm (about 110F) without disturbing.
  • It will take about an hour at room temperature for fondant to cool sufficiently.
  • Beat hard until fondant loses it's transparency and becomes white and opaque.
  • Stop beating and knead with the hands until there are no lumps.
  • When fondant is smooth, place in a tightly covered jar and it will keep for a long time.
  • Fondant becomes more creamy as it stands, if covered tightly. If not covered, it dries out.
  • Let stand at least 24 hours before using, for best flavor.

BUNNY SALAD

1 (3 ounce) package lime gelatin
2 cups water
6 pear halves
4 tablespoons cottage cheese
mayonnaise (use a good quality, such as Hellmann's)
1 tablespoon blanched almond, chopped
lettuce
24 almonds, blanched
paprika
parsley, for garnish
1 leaf lettuce

Steps:

  • Dissolve gelatin in warm water.
  • Pour into an 8" x 8" pan and chill until firm: shred with tines of a fork or force through a ricer to resemble grass.
  • For each salad, fill a pear half with cottage cheese mixed with mayonnaise and chopped almonds.
  • Place a piece of leaf lettuce on a chilled plate and top with gelatin "grass"; place pear half rounded side up on the gelatin.
  • Make bunny's ears, mouth and tail from almonds.
  • Make eyes by dipping the tip of a knife into paprika then gently into pear where you'd like the eyes to be.
  • If you wish to garnish, form a "carrot" from yellow cheese or cheese salad with a sprig of parsley for "carrot greens".
  • Serve with mayonnaise.

2 cups cornmeal
1 teaspoon salt
2 teaspoons fat, melted (bacon fat adds flavor, but lard, butter or vegetable shortening may also be used)
2 cups water, boiling

Steps:

  • Preheat oven to 400°F.
  • Combine corn meal, salt and fat; add boiling water and beat thoroughly.
  • Spread batter in pie plates 1/2 to 3/4 inch thick.
  • Bake for 30 minutes or until crisp and brown.
  • Serve hot with butter, gravy or as a side to stews.

  • To blanch sweetbreads, first wash in cold water, then place in a bowl and soak for about 2 hours in several changes of cold water . Pull off as much membrane and filament as you can without tearing the flesh. Soak for another 2 hours, this time adding 1 tablespoon of vinegar per quart of cold water. Pull off the filament and remove connecting tubes between lobes, if present. Place sweetbreads in a saucepan and cover by about two inches with boiling water. Add the salt and lemon juice (1 tsp salt and 1 tablespoon lemon juice per quart of water). Bring to a bare simmer and cook for 15 minutes. Drain and plunge into cold water for 5 minutes. Drain.
  • When ready to cook, cut the blanched sweetbreads into bite-size cubes and brown them in the butter in a roomy skillet (You may need to brown them in two batches so as not to crowd them). Remove the sweetbreads to a plate. In the same skillet quickly brown the mushrooms over a brisk flame, adding more butter if needed. Add the lemon juice to the skillet and cook, covered, for 3 minutes.
  • Return the sweetbreads to the skillet and add the chicken stock, tomato paste, sherry (I actually prefer dry marsala -- port or madeira would probably be OK, too), and bay leaf. Simmer, uncovered, over medium heat for 15 minutes. Add pepper. Dissolve the arrowroot in the white wine and add to skillet to thicken.
  • The sweetbreads may be prepared ahead of time and refrigerated. Return to room temperature before reheating.
