In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

5 small peaches, cut into 1/4-inch-thick slices (about 5 cups)
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 teaspoons fresh lemon juice
1/2 stick (4 tablespoons) unsalted butter
3/4 cup all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
3/4 cup milk, at room temperature

Steps:

  • For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
  • For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
  • Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
  • Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
  • Let cool to room temperature before serving.

1 cup self-rising flour
1 cup white sugar
1 egg
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange peach slices in a 9-inch round baking dish. Pour about half the reserved peach juice on top; discard remaining juice. Beat egg, flour, and sugar in a bowl until combined; pour over peaches. Drizzle melted butter over flour mixture.

¾ cup unsalted butter, softened
1 (15 ounce) can peaches in heavy syrup
1 ½ cups white sugar, divided
½ cup brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
¼ teaspoon vanilla extract
1 cup milk
1 cup all-purpose flour
1 tablespoon baking powder
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place 1/2 cup butter in a casserole dish.
  • Place casserole dish in the preheating oven until butter is melted. Remove.
  • Mix remaining 1/4 cup butter, peaches, 1/2 cup white sugar, brown sugar, cinnamon, nutmeg, and vanilla extract together in a bowl. Spread over melted butter in the casserole dish.
  • Mix remaining 1 cup white sugar, milk, flour, baking powder, and salt together in a bowl to make a smooth batter. Pour over peach mixture.
  • Bake in the preheated oven until golden brown, about 45 minutes. Let stand for 10 minutes before serving.

1 cup flour
3/4 cup sugar
2 teaspoons baking powder
3/4 cup milk
5 -6 peaches, sliced
3/4 cup sugar

Steps:

  • Preheat oven to 350°.
  • Pour melted butter into an 8x8 pan.
  • Whisk together the flour, 3/4 cup of sugar, baking powder and milk.
  • Pour over melted butter.
  • Cover with peach slices.
  • Cover with 3/4 cup sugar (I know this will seem like a lot, but use it all.).
  • Bake until batter rises to top and forms a nice brown crust, about 20 - 30 minutes.

2 cups flour
1 teaspoon salt
3/4 cup Crisco
1/3 cup ice water
1/2 cup unsalted butter
4 lbs fresh peaches or 4 lbs frozen peaches, peeled, pitted and sliced
4 cups sugar
4 tablespoons flour
1/2 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon vanilla
12 scoops vanilla ice cream

Steps:

  • Preheat the oven to 350 degrees F.
  • In mixing bowl, combine flour, salt and shortening.
  • Mix until the mixture becomes mealy; Add water and mix well.
  • Form into a ball and cover with plastic wrap; Refrigerate until ready to use.
  • For the filling: Melt the butter in a large saucepan, over medium heat.
  • Add peaches and mix well; In a small bowl, combine sugar, flour, cinnamon and nutmeg. Add to the peaches and mix well; Reduce the heat to low and continue to cook for 8 to 10 minutes.
  • Remove from the heat and cool completely; Stir in the vanilla and set aside.
  • Remove the dough from the refrigerator and divide in half.
  • On a floured surface, roll out half of the dough into a rectangle, 12 by 10 inches.
  • Using a knife, cut the dough to fit the pan, reserving the excess trim.
  • Place the dough in an 11 by 9 x 4 inch pan and press down to mold.
  • Pour half of the filling over the crust; Cut reserved dough into nickel-size pieces.
  • Dot peach filling with dough; Pour remaining filling over the dough pieces.
  • Roll out remaining ball of dough and place on top of the peaches, pinching the edges to seal in the juices.
  • Make 3 slits in the top crust and place in oven; Bake for 30 to 40 minutes or until golden brown.
  • Remove from oven and rest for 10 minutes before serving; Spoon cobbler into individual bowls and serve with a scoop of ice cream.

  • In a medium saucepan over low heat combine peaches, cornstarch, water, lemon zest, lemon juice, and ½ cup sugar in a medium saucepan. Raise the heat to medium and cook until thick and bubbly, stirring often.
  • Add the flour, cinnamon, nutmeg, and baking powder to a sieve and sift into a large bowl.
  • In a small bowl, combine sugar, milk, vanilla extract, almond extract, and 1 tablespoon of melted butter and stir to combine.
  • Pour the wet ingredients into the dry and mix well.
  • Grease a 12x8 inch (30x20 cm) (4.8 quart) baking dish with the remaining butter.
  • Pour the batter into the bottom of the greased baking dish and smooth into an even layer with a spatula.
  • Transfer the peaches gently by placing them on top of the batter. Do not stir.
  • Bake for 50 minutes to 1 hour or until golden brown.

2 (14 ounce) cans sliced peaches, drained (reserve 1/4 cup syrup) or 5 cups peaches, sliced and peeled (about 3 lb)
1/4 cup water or 1/4 cup syrup, reserved from canned peaches
1/2 cup sugar
2 tablespoons flour
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 tablespoons margarine or 2 tablespoons butter
1/2 cup all-purpose flour (unsifted)
1/2 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
