MELTING POT CHEESE FONDUE

Another RecipeZaar member posted this recipe after seeing it made on TV. I'm posting it a second time to clarify the measurements. My husband and I love the Melting Pot and we think this cheese fondue tastes just like theirs!

Number Of Ingredients 6

4 ounces beer
1 teaspoon chopped garlic
3 shakes mustard powder
8 ounces cheese (cheddar, colby, monterrey jack all work well)
pepper, to taste
3 -4 shakes Worcestershire sauce

Steps:

  • In a double boiler, pour in beer.
  • Add garlic and mustard powder. Stir.
  • Add cheese, a little bit at a time. Mix, let melt, then add more. Continue until all cheese has been added.
  • Add pepper and wostershire sauce. Fold.
  • Dip different varieties of bread (white, rye, pumpernickel), cauliflower, carrots, apples, broccoli into cheese fondue and ENJOY!

4 ounces skim milk or 4 ounces broth
1 teaspoon chopped garlic
6 ounces cheddar cheese
pepper
mustard powder
Worcestershire sauce
apple (cut up to dip)

Steps:

  • start with 4 oz of base (beer, milk or broth).
  • add garlic.
  • add 3 shakes of mustard powder.
  • stir.
  • add small amount of cheddar cheese.
  • mix thoroughly (using whipping motion until cheese is melted).
  • add five turns of pepper grinder.
  • add three to four shakes of worcestershire sauce.
  • fold in pepper & worcestershire.
  • remove mixing fork.

How can you go wrong with bread and hot melted cheese? This is the actual recipe used at The Melting Pot. It's not exactly a secret since they make it at the table, but our waitress even told me the exact amounts and I wrote them down!

12 ounces beer
8 ounces swiss cheese, shredded (mild Irish swiss works best)
4 ounces sharp cheddar cheese, shredded
1/4 cup flour
1 tablespoon Worcestershire sauce
2 garlic cloves, minced
1/4 teaspoon mustard powder
1/4 teaspoon pepper

Steps:

  • Mix cheeses with flour.
  • Heat beer in fondue pot until steaming.
  • Add Worcestershire, garlic, mustard and pepper; mix well.
  • Add cheese and stir until melted.
  • Use chunks of bread, veggies and apples for dipping in cheese mixture.

1 lb swiss cheese, grated
1/2 lb gruyere cheese, grated
3 tablespoons all-purpose flour
1 teaspoon ground nutmeg
1/2 teaspoon white pepper
1 1/4 cups dry white wine (about)
3 garlic cloves, minced
1 lb crusty French bread or 1 lb sourdough bread, cut into 1 1/2 inch cubes

Steps:

  • Combine both cheeses, flour, nutmeg, and white pepper in large bowl; toss to coat.
  • Bring 1 cup wine and garlic to simmer in a heavy large saucepan over low heat.
  • Add cheese mixture by handfuls, whisking until melted and smooth after each addition.
  • Mix in more wine by tablespoonfuls to reach desired consistency.
  • Transfer to fondue pot.
  • Set fondue over candle or canned heat.
  • Serve fondue with bread.

1 1/2 teaspoons finely chopped fresh thyme
1 tsp. finely chopped garlic
1 tbsp. unsalted butter
2 cups heavy cream
8 ounces Brie
1/4 tsp. freshly ground pepper

Steps:

  • Cook the thyme and garlic in the buter over medium heat for 2 minutes or until the garlic is soft but do not brown the garlic. Add the cream and increase the heat to medium high Bring to a simmer. Decrease the heat and simmer until the cream is reduced by one-third, stirring frequently. Stir in the cheese using the fork. Cook until the cheese is melted, stirring constantly. Stir in the pepper. Keep warm over low heat.
