SWISS VEGETABLE MEDLEY
Great dish when you are tired of the same old thing. I always get asked for the recipe if I bring it to a potluck. I usually use the frozen bag of mixed broccoli, cauliflower and carrots.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Set aside 1/4 cup of cheese, and 1/4 cup of onions.
- In a medium-size mixing bowl, combine thawed vegetables, mushroom soup, 3/4 cup Swiss cheese, sour cream, remaining fried onions, and pepper. Pour ingredients into a 2 quart casserole dish.
- Bake for 30 minutes. Sprinkle reserved cheese and onions on top of the casserole and bake additional 5 minutes, or until the cheese has melted.

MELTED SWISS CHEESE WITH VEGETABLES

- Preheat oven to 350°F. Cook potatoes in large pot of boiling salted water 8 minutes. Add carrots and boil 7 minutes. Add broccoli and boil until all vegetables are tender, about 3 minutes longer. Drain vegetables. Arrange potatoes, carrots, broccoli, bell peppers, beets and onions on large platter. Place bread in basket.
- Divide sliced cheese among 6 ovenproof plates. Bake until cheese melts and bubbles, about 10 minutes. Serve with vegetables and bread.

- On griddle or 12-inch nonstick skillet, heat 1 tablespoon of the butter over medium heat. Place sandwiches in skillet. Spread tops of bread with remaining 2 tablespoons butter. Cook 6 minutes, turning once, until cheese is melted and bread is golden brown.

- In a heavy-bottomed medium saucepan melt butter over medium heat.
- Blend/whisk in flour; cook whisking 1 minute.
- Reduce heat to medium-low and slowly add in the half and half cream, stirring until thickened.
- Add in the Swiss cheese, Worcestershire sauce and hot pepper sauce to taste; mix with a wooden spoon until the cheese has melted.
- Season with salt and pepper.

- Place 1 in. of water in a saucepan; add vegetables. Bring to a boil. Reduce heat; cover and simmer for 5 minutes or until vegetables are crisp-tender. Drain. In a saucepan, saute onion in butter until tender. Stir in the flour, salt and pepper until blended. Gradually whisk in milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat; stir in cheese until cheese is melted. Stir in vegetables., Transfer to a greased 2-1/2 cup baking dish. Bake, uncovered, at 350° for 20-25 minutes or until bubbly and vegetables are tender. Let stand for 3-5 minutes before serving.
