Prosciutto, Brie and Apricot Crostini image

Brie melts to perfection on top of pieces of baguette under a broiler. Ribbons of prosciutto, dollops of apricot jam and chives are easy and elegant toppers.

1 baguette, cut diagonally into 1/4-inch slices
8 ounces Brie
4 ounces thinly sliced prosciutto (about 6 slices), cut crosswise into 1/3-inch-wide ribbons
1/4 cup apricot jam
1 tablespoon chopped chives

Steps:

  • Preheat the oven broiler. Put the baguette slices on a baking sheet lined with foil. Cut the Brie into 1/4-inch-thick slices and top each piece of bread with a slice. Broil until the cheese melts, 1 to 2 minutes.
  • Top each cheese toast with some prosciutto and a dollop of apricot jam and a sprinkle of chives.

Store-bought puff pastry, rolled into 1 (10 by 12-inch) rectangle
2 large egg yolks
1 large egg
1/4 cup whole milk
1/2 cup ham, diced

Steps:

  • Preheat oven to 400 degrees. Place the 10 by 12-inch rectangle puff pastry on a lightly floured work surface with the short side in front of you and cut it into four 3-inch wide strips from left to right. Next cut each strip into 6 triangles. Arrange the triangles on the work surface with the tips facing you. Gently pull each tip toward you; this light stretch adds layers to the finished croissant without adding density. Place a small amount of chopped ham on the wide side of each triangle, about 1/2-inch from the edge. Use the tips of your fingers to roll the triangle from the base to the tip. Place the croissants seam side down on a parchment paper-covered baking sheet. Combine egg wash ingredients and brush the tops of the croissants. Bake until well risen and golden brown, about 20 minutes. Cool on a wire rack before serving. All of these puff pastry items are best eaten the day they are made.

I made this by combining a recipe found on here previously (#188466) with a baked brie recipe found in Pillsbury's Complete CookBook. DELICIOUS! The warm brie is complemented by fruity sweetness and savory crescent roll top.

8 ounces round brie cheese
1 (8 ounce) can refrigerated crescent dinner rolls
1 egg, beaten
1 1/2 tablespoons minced dried apricots
2 tablespoons apricot preserves
2 teaspoons dried cranberries
2 teaspoons sliced almonds

Steps:

  • Heat oven to 350°F Unroll dough, separate crosswise into 2 sections, seal perforations. Place one square on ungreased cookie sheet.
  • Cut brie horizontally using a very sharp knife to create 2 equally thick rounds. Place one round (cut side up) in the middle of the pastry square on the cookie sheet.
  • In a small bowl, combine apricots, preserves, cranberries and almonds. Spread fruit mixture on the cut center of the brie, top with the other half (cut side down).
  • Place the other square of crescent roll dough on top of the cheese round. Press dough evenly around the cheese and fold the bottom edges over the top, to seal. Seal completely.
  • Brush with beaten egg.
  • Bake at 350 F for 20-25 minutes until golden brown. Cool for 15-20 minutes before serving.

4 croissants
1/4 pound wedge Brie
12 sun-dried tomatoes
8 sprigs arugula, rinsed and patted dry

Steps:

  • Split the croissants in half, sandwich fashion
  • Cut the wedge of cheese into four slices of equal size. Top four of the croissant halves with one slice of cheese. Top each portion of cheese with three sun-dried tomatoes. (You can, of course, use more cheese and sun-dried tomatoes depending on taste and appetite).
  • Cover each serving with two sprigs of arugula and cover with the second croissant half. Press lightly and serve.

Perfect-for-Parties Baked Brie in Puff Pastry with Apricot Jam image

This is a classic dish for any type of gathering, and one we always put out. Imagine a croissant filled with melted Brie cheese and sweet fruit and jam. That's what this dish is. It's a pull-apart appetizer that can be spread on toast points or eaten as is. It's one of those centerpiece starters that is the talk of the party. Puff pastry is a cook's friend. It's great for making quick pastries and even beef Wellington. We always keep a pack in the freezer.

1 (8-ounce [224-g]) wheel of Brie
1 sheet puff pastry, frozen
3 tablespoons (60 g) apricot preserves
1 small Granny Smith apple, peeled, cored and cut into small dice
1/4 teaspoon ground cinnamon
1 large egg beaten with 1 tablespoon (15 ml) milk
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400°F (200°C).
  • Using a large chef's knife, cut the white rind off the top of the wheel of Brie and discard. Put the disk into the freezer and at the same time pull out the sheet of puff pastry. Allow the puff pastry to thaw until it is pliable but still cold, about 30 minutes.
  • Roll the puff pastry to a 14-by-14-inch (35.5-by-35.5-cm) square. Using a pizza cutter or knife, cut a 1/2-inch (1.3-cm) wide strip from one edge of the pastry. Transfer the dough to a parchment-lined baking sheet. Place 1 tablespoon (20 g) of the preserves at the center of the pastry and then the frozen Brie wheel. Top with the apple and cinnamon, then dollop the remaining 2 tablespoons (40 g) of preserves on top. Gather the four corners of the dough, one at a time, across the Brie to enclose it completely. Tie a simple knot with the strip of dough to make a purse.
  • Brush the entire top and sides of the purse with the egg wash. Sprinkle with salt and pepper. If at any point the pastry seems like it's melting or too soft, put it in the freezer for 5 to 10 minutes before continuing. Make sure the pastry is well chilled before baking.
  • Bake on the middle rack of the oven for 30 to 40 minutes, turning the baking sheet halfway through, until the pastry is golden brown and cooked through. Transfer to a wire rack and let cool for 8 to 10 minutes before serving warm.

1 tablespoon butter
½ white onion, thinly sliced
1 pinch salt
1 sprig fresh thyme
2 large croissants
4 tablespoons apricot preserve
½ wheel of brie, sliced
10 slices Castle Wood Reserve® Uncured Honey Ham
1 cup baby arugula
2 strawberries, cut on half, for garnish

Steps:

  • Preheat the oven to 350ºF.
  • Melt butter in a medium pan over medium heat. Add onion and salt and cook until onion is golden brown, about 10 minutes. Add in the sprig of thyme and cook for another 2 minutes.
  • Slice croissants in half and place on a parchment-lined baking sheet, cut side up. Spread apricot preserves on the top half and place 3 pieces of brie cheese. On the bottom croissant half, place caramelized onions and folded slices of Castle Wood Reserve® Uncured Honey Ham. Repeat with the other croissant.
  • Bake open-face for 10 minutes.
  • Remove from the oven and add arugula. Close the sandwiches and serve with a skewered strawberry for a garnish.
  • Enjoy!
