1 cup butter, softened
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1/4 teaspoon salt
3/4 cup chopped pecans
Additional confectioners' sugar

Steps:

  • In a large bowl, cream butter and confectioners' sugar until light and fluffy, 5-7 minutes. Beat in vanilla. Combine flour and salt; gradually add to creamed mixture and mix well. Stir in pecans. Refrigerate until chilled., Preheat oven to 350°. Roll into 1-in. balls and place on ungreased baking sheets. Bake 10-12 minutes or until set. Roll warm cookies in additional confectioners' sugar; cool completely on wire racks. Roll cooled cookies again in confectioners' sugar.

These are light sandies, they almost melt in your mouth. This recipe makes a bunch, perfect for pot luck or Christmas cookie platters. You can add semi or white chocolate chips to mix it up.

Number Of Ingredients 12

1 cup butter, softened
1 cup vegetable oil
1 cup granulated sugar
1 cup confectioners' sugar, sifted
2 eggs
1 teaspoon vanilla extract
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt
2 cups pecans, chopped
1/2 cup granulated sugar, for decoration

Steps:

  • Preheat oven to 375 degrees.
  • In a large bowl, cream together the butter, vegetable oil, 1 cup of white/granulated sugar and confectioners sugar until smooth.
  • Beat in eggs one at a time.
  • Add vanilla. Stir until blended.
  • Combine flour, baking soda, cream of tartar and salt.
  • Stir into the creamed mixture. Mix until completely blended.
  • Mix in the pecans.
  • Roll dough into 1 inch balls and roll each ball in remaining white sugar.
  • Place cookies 2 inches apart onto ungreased cookie sheet. (you may top each cookie with a pecan half if you like).
  • Bake for 11 to 13 minutes in the preheated oven, or until the edges are golden.
  • Remove from cookies sheet to cool on wire racks.

1/2 c butter, softened
1 box yellow cake mix
2 large eggs
1 Tbsp water
1 pkg heath toffee bits
1/2 to 1 c pecans, chopped

Steps:

  • 1. pre-heat oven to 350*F.
  • 2. Mix butter, add cake mix, eggs & water. Mix well with hand mixer.
  • 3. Add toffee bits and pecans, mix by hand. If you like lots of nuts, feel free to add 3/4 to 1 Cup of pecans.
  • 4. Spoon onto ungreased cookie sheet and bake at 350* for 10 minutes for small cookies. For larger cookies bake for 12-13 minutes. Transfer to cooling rack. They won't look done, but when they cool, they solidify, still being a soft chewy cookie.

"They can be made a couple of weeks in advance, but it's hard to keep them in the house that long." Be sure to chill the dough overnight before shaping and baking the cookies.

Yield Makes about 3 dozen cookies

Number Of Ingredients 7

2 cups all purpose flour, sifted
1 cup pecans, toasted
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
3/4 cup powdered sugar
2 teaspoons vanilla extract
Additional powdered sugar

Steps:

  • Preheat oven to 325°F. Combine 1 cup all purpose flour, toasted pecans and salt in processor. Using on/off turns, finely chop pecans. Using electric mixer, beat butter, 3/4 cup powdered sugar and vanilla extract in large bowl until well blended. Add pecan mixture and remaining 1 cup flour and mix thoroughly. Divide dough in half. Wrap each half in plastic and refrigerate overnight.
  • Working with 1 tablespoon dough at a time, shape dough into 3-inch-long logs. Pinch ends of logs to taper and turn in slightly, forming crescents. Place cookies on ungreased baking sheets, spacing 1 inch apart (cookies will not spread).
  • Bake cookies until light brown around edges and firm to touch, about 18 minutes. Cool cookies 10 minutes on baking sheets. Roll cookies in additional powdered sugar. Cool completely on racks. (Cookies can be prepared 2 weeks ahead. Store in airtight container.)

1 1/2 cups flour
1/2 cup icing sugar

Steps:

  • Preheat oven to 350°F.
  • Combine all ingredients and mix for a FULL 10 minutes.
  • Yes, I said a full 10 minutes!
  • Mixture will start out very dry and crumbly but will become batter like after the full 10 minutes.
  • I like to use my stand mixer for this, but a hand mixer will do the trick if it is a strong one.
  • Drop from teaspoons or a piping bag onto a cookie sheet, I find teaspoons work best.
  • Decorate with maraschino cherries or sprinkles if you feel fancy.
  • Bake for approx 15 minutes or until bottoms are very lightly brown.
  • Watch that the tops don't turn brown!

  • Shape cookies and chill: Roll dough into 1 tablespoon sized balls and place on lined baking sheets. Freeze for 10 minutes.
  • Bake: In the meantime, preheat the oven to 350°F. Bake the cookies in batches (only one baking sheet in the oven - or the cookies on the bottom could melt away!) for around 15 minutes or until lightly golden brown in color.
  • Roll in powdered sugar: Cool for 5 minutes on the baking sheet. Place 1 cup powdered sugar in a medium bowl. Roll the cookies in the sugar and set on a cooling rack to cool completely. Roll in the powdered sugar again.
