MELON AND OLIVE MINI SKEWERS WITH BLACK PEPPER HONEY

Steps:
- For the honey: Stir together the honey, 1/4 cup water, the pepper, thyme and rosemary in a small saute pan over medium heat. Bring the mixture to a boil, then reduce the heat to low and simmer for about 8 minutes. Remove from the heat and set aside to cool slightly. Strain the honey into a small bowl and set aside while you assemble the skewers.
- For the skewers: Using a melon baller, scoop out 24 rounds from the peeled melon. Thread each skewer with a melon ball, basil leaf, mozzarella ball, another basil leaf and an olive. To serve, place the skewers on a platter and drizzle with the honey.
GRILLED CHICKEN SKEWERS WITH LEMON AND HONEY

- For the sauce: In a small bowl, whisk together the yogurt, mayonnaise, zaatar and salt. Set aside.
- For the chicken: In a medium bowl, whisk together the lemon zest, lemon juice, honey, olive oil, salt and coriander seeds. Slice the chicken breasts lengthwise into 1/3-inch strips; add to the bowl and toss to coat. Let sit at room temperature for about 15 minutes to marinate.
- Preheat a grill pan over medium heat. Thread the chicken strips onto 8-inch skewers. Grill for about 4 minutes per side, until the chicken is cooked through and golden brown. Remove to a platter. Serve warm with the dipping sauce.
WATERMELON CAPRESE APPETIZER
A refreshing appetizer for the summer, my family loved this so much they ate more than a serving each. Also great for those who love the flavor of caprese but aren't huge fans of tomatoes.

Steps:
- Trim basil leaves into small circles about 1 inch in diameter.
- Thread watermelon and mozzarella cheese on toothpicks, sandwiching a basil leaf in between. Arrange on a serving plate.
- Pour olive oil and balsamic vinegar over toothpicks. Sprinkle salt and black pepper on top.

MELON, PROSCIUTTO, AND FRESH MOZZARELLA SKEWERS

Steps:
- Place first 5 ingredients in a blender or food processor.
- Blend or pulse until the shallot and basil are finely chopped.
- Cut melon in half and scoop out the seeds. Using a small melon baller (about the same size as the cheese balls), create as many melon balls as you can.
- Create your masterpiece! To arrange your skewer, start with a melon ball. Next ruffle a piece of prosciutto and slide that on. Next add a mozzarella ball then another piece of ruffled prosciutto and finally another melon ball. Continue until all skewers have been created. Arrange on your platter.
- You can make this a couple of hours ahead but you should cover and place in the refrigerator. (Do not put the basil oil in the refrigerator).
- When ready to serve, drizzle skewers with the basil oil and garnish with a few basil leaves.
