MELISSA'S BUFFALO CHICKEN DIP

- Pre-heat oven to 350 degrees.
- Mix all ingredients reserving 1/2 cup shredded cheese.
- place ingredients in an oven safe dish, top with reserved cheese and bake for 20 minutes. serve with chips, celery or pita chips.
MELISSA'S EASY CHICKEN AND DUMPLINGS
This is a very simple way to make chicken and dumplings. My mother gave me this recipe. It's great on a cold day.

- Put chicken and celery in a large pot and cover with water. Bring to a boil. Cook chicken thoroughly.
- Once chicken is done remove chicken from pot and let cool on a plate. Set aside. Do not throw away broth--it will be used later.
- Add cream of chicken soup, chicken broth, salt and pepper to pot; stir. Cook on medium-high heat.
- Slice chicken breasts like you would a turkey (thinly). It will come apart once it's added back to the pot. Add back to pot. Bring to boil.
- With a rolling pin, roll out each biscuit and cut into fourths. (For smaller dumplings, cut them smaller). I like mine medium size, so fourths work for me. Once you're done, it's time to add them to the pot.
- Just drop them in one at a time, make sure to stir often. They tend to stick if they aren't stirred. They will swell after they are first added, but they will go back down to normal size after a few minutes. Let them boil for 10 minutes, then simmer on medium-low for about 15 minutes; cover. Continue to stir often. Dumplings are done when the center of the dumpling is slightly darker than the outside.

MELISSA'S CHICKEN DIP
As you can see they don't come any easier than this and most cooks have all the ingredients in their pantry or refrigerator at all times. I call it Melissa's Chicken Dip because I got it from my friend, Melissa. I don't really know the proper name. The best thing about this recipe is that it can be changed around and made into a chicken cheese ball by cutting the sour cream or mayo in half, refrigerating until set and formed into a ball and rolled in finely ground pecans, paprika, crushed red peppers, etc. Anytime I take this to an occasion, I end up having to repeat the recipe several times. The cook time listed is the time for refrigeration.

- Preheat oven to 350°F. Brush a 10 inch cast iron skillet or similar size baking dish with oil. Set aside. (If using a baking dish, you may spritz with cooking spray.)
- In a medium-size mixing bowl using an electric mixer, whip together cream cheese, sour cream, mayonnaise, Ranch seasoning and a few dashes of hot sauce. Whip until fully combined and smooth.
- To the bowl add, 1 1/2 cup cheese, chicken, bacon, chilies and chives. Mix by hand until ingredients are evenly distributed. Reserve a small amount of bacon and chives for garnishing.
- Spread evenly in baking dish and sprinkle with remaining 1 cup cheese. Bake for 35-40 minutes until bubbly around the edges and the cheese is lightly golden.
