MEE GORENG (SOUTHEAST ASIAN FRIED NOODLES)
Mee goreng is a popular fried noodle dish found in hawker centers throughout Singapore, Brunei, Indonesia and Malaysia. If you're seeking a noodle dish that's salty, spicy, tangy and slightly sweet, this version will deliver, and is perfect for impressing guests at a dinner party. The sambal tumis is the true star, adding a kick that marries well with the fresh lime juice and soy sauce. It is traditionally made with yellow wheat noodles, but you can find versions that use dried instant noodles instead. You can also substitute chicken or extra vegetables and tofu for the shrimp.

Steps:
- Cook noodles according to package instructions.
- Heat prepared sambal tumis in a wok or large skillet for about 5 minutes over medium heat. Add cooked noodles, tofu or tofu puffs and bok choy and stir to make sure everything is mixed with the sambal. (If the noodles start to stick together, add a splash or two of water until they loosen.)
- Heat the canola oil in a large frying pan over medium heat. Add the shrimp; season with salt and cook for about 5 minutes, or until pink and opaque. Transfer shrimp and any juices to the sambal mixture in the wok; add the tomato wedges, bean sprouts and a drizzle of sweet soy sauce to taste. Stir for 1 minute over medium heat, and season with salt to taste.
- Remove the lemongrass, heap the mee goreng onto a platter and serve immediately, or at room temperature, with lime wedges, sliced red Serrano or Fresno chiles and dried shallots or fried onions.

- Clean and dry veggies, cut as desired.
- Heat the oil in a wok over medium heat until it shimmers, and then add the garlic and sweet soybean paste. Stir constantly until garlic is no longer raw but not browning. Toss in shrimp and stir-fry until they turn pink.
- Add the greens and raise the heat to high. Stir-fry until the greens begin to wilt, then toss in the sprouts, cook another 15 seconds, reduce heat slightly, and toss in the noodles, detangling them as you add them.
- Toss everything together, add the rest of the ingredients (except the pepper), and cook while stirring until the noodles have soaked up all the liquid (2 min). Adjust the seasoning and sprinkle with black pepper.

MALAYSIAN STIR-FRIED NOODLES WITH SHRIMP
These spicy noodles are based on a classic Malaysian noodle dish, Mee Goreng, but I've reduced the number of ingredients. With origins in North India, the dish lends itself well to the Indian Papadini bean flour noodles, which have more protein, ounce for ounce, than steak. If you can't find this type of noodle, use wide dried rice noodles: soak them for 20 minutes in warm water, then cook 1 minute in boiling water, drain and toss with 1 tablespoon oil as directed.

- Bring 3 or 4 quarts water to a boil in a large pot, add about a tablespoon of salt and the greens. Cook 30 seconds only, and immediately transfer to a bowl of ice water, using a slotted spoon or deep-fry skimmer. Drain, squeeze out water and chop coarsely. Set aside. Bring the water back to a boil, add the cabbage, blanch 30 seconds and transfer to the ice water. Drain and set aside.
- Bring the water back to a boil and add the noodles. Cook 2 minutes, drain, shake off excess water, toss with a tablespoon of the oil, and set aside.
- In a small bowl, mix together the soy sauce, salt, sugar, and the chile paste. Stir to dissolve the sugar and salt and set aside.
- Heat a wok or large, heavy nonstick skillet over medium-high heat and add the remaining oil and garlic and ginger. Cook, stirring, for about 30 seconds or until the garlic and ginger are fragrant. Add the tomatoes and increase heat slightly. Stir until the tomatoes begin to break down and stick to the pan, about 3 minutes. Add the shrimp and blanched greens and cabbage and cook, stirring, until the shrimp curl and turn pink, and the cabbage is crisp-tender, 4 to 5 minutes. Add the noodles and soy sauce mixture and stir together until the noodles are heated through and coated with the sauce. Add the bean sprouts and cilantro, toss together quickly and remove from the heat. Serve, with lime wedges on the side.

- Put the noodles into a colander and rinse under warm running water, or separate according to instructions. Drain and set aside.
- Heat the oil in a wok. Add curry powder and onion and stir-fry over medium heat until soft, about 4 minute.
- Add the noodles, tomato, chilli sauce, tomato sauce and soy sauce and stir-fry over medium heat for 3 min, mixing well.
- Pour over the beaten egg and leave to set for a min or so, then mix in with the noodles.
- Add the tofu.
- Add the spring onions, cucumber and chilli.
- Serve with additional tomato and chilli sauce, and cucumber slices on the side, if desired.
MAGGI MEE GORENG
"Maggi" is a popular brand of instant noodles in Singapore and Malaysia. "Mee" means noodle in Malay and "goreng" means fried in Malay. Hence, Maggi mee goreng is literally Maggi instant noodles fried - voila! So yummy lah!

Steps:
- Marinate the chicken cubes with sesame oil for about 10 minutes.
- Mix sauce ingredients in a small bowl.
- Cook the instant noodles in boiling water for about 3 minutes and drain and rinse with cold water.
- Stir fry the chicken cubes until cooked.
- In a separate wok, fry the garlic in oil until fragrant.
- Add cooked noodles, followed by cooked chicken.
- Stir fry for about 2 minutes.
- Add bok choy and beansprouts to the wok.
- Add sauce ingredients to the wok and continue to stir fry on medium to low heat for about 5 minutes.
- Mix sauce well into the noodles.
- Serve with fried shallot and chilie garnish.
