MEDITERRANEAN-STYLE MEATLOAF

You'll never have dense, dry, tasteless meatloaf again! The leftovers from this recipe are fantastic in sandwiches or over pasta. You can use jarred roasted red bell peppers or even pimentos in the filling and sauce. Polenta, rice, or mashed potatoes make great sides.

Number Of Ingredients 21

1 1/2 lb. ground meat (chuck, pork, turkey, etc.)
1/2 cup shallot or Vidalia onion, chopped
1/2 cup roasted red bell pepper, peeled and chopped
1 cup bread crumbs, more if needed
1/2 cup grated Romano cheese, plus more for coating
1 large egg
1 tsp. Asian fish sauce, optional
2 tbsp. tomato sauce, (more if needed, plus more for coating-or use ketchup if you must)
1 tbsp. olive oil, only if you're using ground chicken or turkey
2 tbsp. parsley, minced
Salt and pepper, to taste
1 tbsp. olive oil
1 green bell pepper, sliced
1 roasted red bell pepper, sliced
1 Vidalia onion, sliced
2 cloves of garlic, finely minced
1 28- oz. can of crushed tomatoes
1 cup of tomato sauce
2 tbsp. rice vinegar or red wine vinegar
1 tbsp. Splenda or sugar
Salt & Pepper to taste

Steps:

  • Preheat the oven to 350°. Add all ingredients for the meatloaf to a large mixing bowl (with the exception of the coatings). I usually add 2 large pinches of salt and several grinds of black pepper, but you can adjust that to your own taste. Work the ingredients through the meat mixture just enough to incorporate (it doesn't matter if ingredients aren't distributed uniformly. Check the consistency of your mixture: you want to be able to form it into a loaf without having it fall apart, but you don't want it to be too dry. If the mixture is too wet and falling apart, add an additional 1/4 cup of breadcrumbs. If the mixture is too dry, add another tbsp. of tomato sauce (more if needed).
  • Line a baking sheet with aluminum foil. Set a baking rack onto the foil and coat generously with cooking spray. Form the meat mixture into a loaf, making sure that it's roughly the same thickness throughout for even cooking. Rub on the tomato sauce and sprinkle with Romano cheese. Sprinkle lightly with salt and fresh-ground pepper.
  • Tent some aluminum foil over the meatloaf: I sometimes lay 2 pieces of foil over each other and fold one side of the long ends over several times. This is the "spine" of the tent. The foil doesn't need to cover the meatloaf tightly: just tuck the open ends down toward the baking rack. Place the meatloaf in the oven.
  • Meanwhile, make the sauce. Heat the olive oil in a skillet over medium-high heat. Add the peppers, onions, and garlic. Sauté until soft and translucent, 6-8 minutes. Add the crushed tomatoes and tomato sauce, stir to combine. Sprinkle with the vinegar and sugar or Splenda; stir. Bring almost to a boil, then reduce heat to a low simmer. Stir occasionally to prevent scorching. Simmer for 45 minutes.
  • Check the meatloaf after an hour with an instant-read thermometer: the meatloaf needs to be 160° throughout. Remove the foil. At this point, you can spoon some of the sauce on top of the meat loaf if you'd like. Continue baking as needed.
  • Remove the meatloaf from the oven and rest for 10 minutes. Slice thickly and serve with the sauce. Enjoy!

Sun Dried Tomato Feta Bread is a delicious savory loaf that's easy to make, and a perfect addition to any party platter.

2 cups all-purpose flour
1 tbsp baking powder
1 tsp kosher salt
1 tsp black pepper
1 tbsp fresh oregano (chopped)
1 tbsp fresh rosemary (chopped)
3 large eggs
1/2 cup extra virgin olive oil
1/2 cup 2% milk
5.5 oz crumbled feta cheese
9.5 oz jar sun dried tomatoes packed in extra virgin olive oil (drained, reserving the oil.)
2 tbsp fresh basil (thinly sliced)

Steps:

  • Preheat oven to 350°
  • Prepare an 8 x 4" loaf pan by using cooking oil spray or lining with parchment paper
  • In a large bowl, whisk together flour, baking powder, salt, pepper, oregano and rosemary
  • Measure the reserved oil from the tomatoes, then add extra virgin olive oil to make up 1/2 cup
  • In a smaller bowl, whisk eggs, olive oil, and milk
  • Stir the egg mixture into the flour mixture until smooth.
  • Fold in feta cheese, sun-dried tomatoes, and basil.
  • Spread batter into baking pan
  • Bake in center of oven 50-60 minutes, or top is crusty and golden and a toothpick inserted in center comes out clean.
  • Cool completely on a wire rack before slicing

1/2 teaspoon pepper

1 cup tomato juice
3/4 cup ricotta cheese
1/2 cup feta cheese, crumbled
1/2 cup sun-dried tomato packed in oil, blotted and chopped
1/4 cup oil
1/4 cup fresh oregano or 1 tablespoon dried oregano
2 tablespoons fresh basil or 3/4 teaspoon dried basil

Steps:

  • Measure flour, sugar, baking powder, baking soda and pepper in a large bowl. Stir make well in centre.
  • Combine eggs tomato juice, ricotta cheese, crumbled feta, sun dried tomatoes oil, basil and oregano in a medium bowl whisk,.
  • Add to well. Stir until just moistened.
  • Spread in greased 9x5x3-inch loaf pan.
  • Brush with reserved oil from sun-dried tomatoes.
  • Bake in 350°F oven for 50 minutes, or until toothpick comes out clean.
  • Let cool in pan for 10 minutes before removing to wire rack to cool.

Vegetable cooking spray
1/2 cup plain bread crumbs
1/3 cup chopped fresh flat-leaf parsley
1/4 cup chopped garlic and herb-marinated sun-dried tomatoes
2 cloves garlic, minced, optional
2 eggs, at room temperature, lightly beaten
2 tablespoons whole milk
1/2 cup crumbled feta cheese
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 pound ground turkey, preferably dark meat

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F.
  • Spray a 9 by 5-inch loaf pan with cooking spray.
  • In a large bowl, stir together the bread crumbs, parsley, sun-dried tomatoes, garlic, if using, eggs, milk, feta, salt, and pepper. Add the turkey and gently stir to combine, being careful not to overwork the meat.
  • Carefully pack the meat mixture into the prepared pan and bake until the internal temperature registers 165 degrees F on an instant-read thermometer, about 45 minutes. Remove from the oven and let rest for 5 minutes. Transfer to a cutting board and slice. Put on a serving platter and serve.

1 1/2 lbs uncooked ground lamb (you can try other ground meats or combos of for a slightly different flavor)
2 cups Italian style breadcrumbs
2 eggs, beaten
1 (14 1/2 ounce) can diced tomatoes
1 (6 ounce) can small pitted black olives
1 cup diced onion (frozen is ok)
3 tablespoons jamaican curry powder (I used hot)
1/2 teaspoon cayenne pepper
3 tablespoons soy sauce

Steps:

  • In a large bowl combine all of the above ingredients.
  • Knead ingredients together until thoroughly blended.
  • Place the meat mixture in a non stick roasting pan and pat to form into a loaf shape.
  • Bake in a preheated 350°F oven for about 45 minutes.

1 large crusty loaf bread
3 tablespoons pesto sauce
225 g cooked chicken breasts, sliced
25 g baby spinach leaves, finely shredded
3 plum tomatoes, sliced
2 tablespoons olive oil
salt and pepper
140 g mozzarella cheese, sliced
85 g artichoke hearts packed in oil, drained
85 g salami, sliced
55 g olives, pitted
15 g butter, softened

Steps:

  • Slice a lid from the top of the loaf and set aside.
  • Remove and discard the inside of the loaf, leaving a 1cm wall.
  • Spread pesto over the inside of the loaf.
  • Place half the sliced chicken on base, top with half spinach leaves.
  • Add half tomatoes and half the olive oil-season lightly.
  • Add layers of cheese, artichokes, top with remaining tomatoes.
  • Next lay salami and olives on top and add remaining chicken and spinach.
  • Drizzle over the rest of the olive oil and season.
  • Butter the lid and replace it on the loaf.
  • Wrap the loaf tightly in cling film and refrigerate over night.
  • Cut into generous wedges to serve.

This is a nice substitute for regular meatloaf. We're not big fans of traditional meatloaf but we really like this dish. I've served it with a Greek salad, marinated olives and bread. From an AP food story in the newspaper which said the recipe was developed by the Quaker Oat Company.

1/4 cup sun-dried tomato
1 (10 ounce) package frozen chopped spinach, thawed and drained
1/2 cup chopped onion
1/4 cup crumbled feta cheese
1 1/2 lbs ground turkey
1 cup quick oats or 1 cup old fashioned oats, uncooked
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon salt (optional)
1/4 teaspoon ground black pepper
1/2 cup nonfat milk

Steps:

  • Heat oven to 400°F Soften tomatoes according to package directions; coarsely chop and set aside.
  • In small skillet, cook spinach and onion over low heat 4 to 5 minutes or until onion is tender.
  • Remove from heat; cool slightly.
  • Stir in cheese; set aside.
  • In large bowl, combine turkey, oats, garlic powder, oregano, salt, if desired, pepper, milk and sun-dried tomatoes; mix lightly but thoroughly.
  • Shape 2/3 of turkey mixture into 9-by-6-inch loaf in 13-by-9-inch baking dish.
  • Make a deep indentation down center of turkey mixture, leaving about 1 1/2 inches around edges of loaf; fill with spinach mixture.
  • Top with remaining turkey mixture to completely cover spinach filling; pinch edges to seal.
  • Bake 30 to 35 minutes or until juices run clear when pierced with fork.
  • Let stand 5 minutes before slicing.
