From Eating Well Feb-March 2005. This is healthy and quick, using frozen and canned veggies! Would be good with kalamata olives and feta cheese added.

2 tablespoons extra virgin olive oil
2 cups frozen chopped onions
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon ground cinnamon
1/2 teaspoon crushed red pepper flakes
2 (14 1/2 ounce) cans diced tomatoes
2 (10 ounce) packages frozen baby lima beans

Steps:

  • Heat oil in skillet over medium-high heat; cook onions until soft, 3- 5 minutes.
  • Add garlic and cook for 1 minute.
  • Stir in spices, tomatoes, and lima beans and cook for 10- 15 minutes, stirring occasionally.

1 pound gigantes (or big lima beans), soaked for 12 hours, drained
1/4 cup Greek olive oil
1 large Spanish onion, finely chopped
3 cloves garlic, minced
1 (15-ounce) can chopped plum tomatoes plus their liquid
2 cups water
2 tablespoons honey
1/4 teaspoon ground cloves
Salt and freshly ground black pepper
3 tablespoons chopped fresh parsley leaves

Steps:

  • Add the beans to a pot with enough cold water to cover well. Bring to a boil, lower the heat, cover, and simmer until just soft throughout but not quite cooked, approximately 50 to 80 minutes, depending on the beans. Drain and set aside.
  • Preheat the oven to 325 degrees F.
  • Heat olive oil over medium heat in a Dutch oven. Add onion and cook until soft. Add the garlic and cook for 30 seconds. Add tomatoes and their liquid, 2 cups water, honey, cloves, salt, and pepper and boil gently for 20 to 30 minutes or until it begins to thicken. Stir in the parsley and remove from heat.
  • Place the beans in an oven-proof dish, pour tomato mixture on top, stir and spread mixture out evenly. Bake 1 1/2 to 2 hours, or until beans are soft. (Check the dish during cooking and if needed, add a small amount of boiling water.) The dish will look crispy on top. Remove from the oven and let sit for 10 minutes before serving. Serve hot or at room temperature.

LEMON SALMON WITH LIMA BEANS



Lemon Salmon with Lima Beans image

1 lemon, halved
1/2 cup nonfat plain Greek yogurt
3/4 teaspoon paprika
2 teaspoons extra-virgin olive oil
3 cloves garlic, thinly sliced
3/4 teaspoon dried oregano
Pinch of red pepper flakes
1 1-pound bag frozen baby lima beans
Kosher salt and freshly ground pepper
2 tablespoons chopped fresh parsley
4 5-ounce skinless center-cut salmon fillets

Steps:

  • Slice 1 lemon half into 4 thin rounds and set aside. Grate the zest of the other lemon half and set aside; squeeze some of the juice into a bowl and mix in the yogurt and 1/4 teaspoon paprika. Preheat the broiler. Heat 1 teaspoon olive oil in a medium saucepan over medium heat. Add the garlic, oregano and red pepper flakes and cook until the garlic is golden, about 2 minutes. Add the lima beans, 1 1/2 cups water and the lemon zest; partially cover the pan, bring to a simmer and cook until the beans are tender, about 20 minutes. Season with salt and pepper. Remove from the heat and stir in the parsley, 1 tablespoon of the yogurt mixture and the remaining 1 teaspoon olive oil. Meanwhile, mix the remaining 1/2 teaspoon paprika, 1/2 teaspoon salt, and pepper to taste in a small bowl. Sprinkle all over the salmon; arrange on a foil-lined baking sheet and top each fillet with a lemon slice. Broil until just cooked through, 6 to 8 minutes. Serve with the lima beans and top with the yogurt mixture.

I was trying to re-work my frozen lima beans into something I could entice the kids with and came up with this dish. It was so simple with its zesty sweet flavor, and the kids ate every bite.

1 (16 ounce) bag frozen lima beans
5 slices bacon
1/3 cup diced red onion
1/3 cup brown sugar
salt and pepper

Steps:

  • Boil the lima beans according to package (about 10-12 minutes-I used pressure cooker for 5 minutes).
  • While beans are cooking fry bacon in a medium frying pan on medium heat until crisp and drain.
  • Add the red onion and cook additional 5 minutes.
  • Add lima beans, salt, and pepper to pan.
  • Sprinkle brown sugar and stir.
  • Add a couple Tablespoons water for saucier texture.
  • Serve.

1 lb dried large lima beans
3 smoked ham hocks
3 yellow onions, chopped
1 teaspoon ground cumin
1 teaspoon ground black pepper
1/8 teaspoon ground cayenne pepper (or more)
water, enough to cover

Steps:

  • Simmer beans in one to two quarts of water for 30 minutes, either in the crockpot on "high" heat or in another pot over the stove. The beans will have swelled and softened slightly.
  • Drain and put them into the crockpot.
  • Add remaining ingredients.
  • Cook four to eight hours on "auto-shift" or "low" heat.
  • At some point, remove the ham hocks and separate the bones and fat from the bits of meat, cutting up the meat to return to crockpot.
  • When done, this dish should resemble a stew with a thick broth. The beans should be soft, but not quite falling apart. If you cook it too long, it will be tasty but will resemble split pea soup.
  • Serve with biscuits or cornbread.

1/4 cup milk
1/4 cup crumbled blue cheese
1/2 tablespoon butter or 1/2 tablespoon margarine
1/3 cup fresh white breadcrumbs (1 or 2 slices)

Steps:

  • Cook beans according to package directions, but don't add the salt.
  • When beans are tender, drain.
  • In small saucepan, heat milk and blue cheese, stirring until cheese is melted.
  • Add beans and keep warm.
  • Melt butter in small skillet; add bread crumbs and stir over medium heat until bread crumbs are golden brown.
  • Sprinkle bread crumbs over beans and serve immediately.
