MEDITERRANEAN MACARONI AND CHEESE
This Mediterranean Macaroni and Cheese is a refreshing take on the rich classic. Jim Raftus, a reader from Elkhart, Indiana, uses the sunny flavors of tomato, olives, and feta in this mac and cheese.

Steps:
- Preheat oven to 400 degrees. Set a large pot of salted water to boil and butter an 8-inch square baking dish. In a small bowl, combine tomatoes, olives, and oregano.
- Cook pasta 2 minutes less than package instructions; drain pasta and return to pot. Meanwhile, melt butter in a medium saucepan over medium. Add garlic; cook until fragrant, 1 minute. Add flour and cook, stirring constantly, 1 minute. Whisk in milk and bring to a boil. Reduce heat to medium-low; simmer, whisking constantly, until sauce thickens, 3 minutes. Remove from heat; whisk in 4 ounces feta. Stir in tomato mixture. Season with salt and pepper. Pour mixture over pasta; stir to combine.
- Pour pasta mixture into dish and top with 4 ounces feta. Bake until sauce is bubbling and cheese begins to brown, 20 to 25 minutes.

- Preheat oven to 375 degrees F In a small bowl, blend feta cheese, green onions, and egg.
- Cut pastry into 12 (3 inch) squares.
- Place a mounded tablespoon of feta mixture in the center of each square.
- Moisten edges with water, and fold pastry over filling to form a triangle.
- Press edges together firmly with a fork to seal.
- Lightly brush pastries with the egg yolk mixture.
- Bake for 20 minutes in the preheated oven, or until golden brown.
- Serve warm or at room temperature.

- Heat oven to 350°F Lightly grease large cookie sheet with shortening or spray with cooking spray. In medium bowl, mix both cheeses, onions and olives. Mash with fork to break up any large chunks of cheese. Stir in 1 egg and 1 egg white with fork until well combined.
- Separate dough into 8 biscuits; separate each evenly into 2 layers, making 16 biscuit rounds. Press each into 3 1/2-inch dough round. Spoon about 1 rounded tablespoon cheese mixture onto center of each dough round. Fold dough in half over filling; press edges to seal. Place on greased cookie sheet.
- In small bowl, beat egg yolk and water with fork until well blended; brush over dough foldovers. Sprinkle sesame seed over each.
- Bake at 350°F for 16 to 20 minutes or until golden brown. Cool 5 minutes. Remove from cookie sheet; place on serving platter. Garnish platter with parsley and several olives. Serve warm.
RED CABBAGE SALAD WITH FETA CHEESE AND OLIVES
This is a really morish salad, rich in flavour. It is great served with just about anything! And an all time favourite of many to whom I have served it too. Also a good salad to prepare in advance - infact it's better if it is - (the 'older' it gets, the better it gets!!!!)

- Combine all salad ingredients together- one or two at a time- EXCEPT the Cherry Tomatoes and toss WELL.
- Combine all DRESSING ingredients together in jar or bottle and shake well, and taste.
- Drizzle dressing a little at a time over salad, and toss well to coat the salad evenly.
- Add the halved Cherry Tomatos last.

- Cook pasta in boiling water and first amount of salt in a large uncovered pot or Dutch oven for 6 minutes until tender but firm. Drain. Return to pot.
- Add first amount of olive oil. Toss. Keep warm.
- Meanwhile, saute tomato and garlic in second amount of olive oil in large frying pan for about 2 minutes until tomatoes have released their juices.
- Add next 6 ingredients. Heat and stir for about 1 minute just until spinach is wilted and heated through.
- Pour over pasta. Add feta cheese. Toss well.
- Note: In place of fresh marjoram, you could replace with 3/4 teaspoon dried marjoram and you can replace garlic cloves with 3/4 teaspoon garlic powder.

- Preheat oven to 375°F.
- In 10-inch skillet, cook beef and onion over medium-high heat until beef is brown; drain.
- Stir in beans, tomato sauce and seasoning mix. Simmer 3 to 5 minutes, stirring occasionally, until liquid is absorbed.
- Separate dough into 5 biscuits. Press or roll each to form 5" round. Spoon 1/2 cup meat mixture onto center of each flattened biscuit. Sprinkle cheese evenly onto biscuits. Fold half of biscuit over filling; press edges with fork to seal. Place on ungreased cookie sheet.
- Bake 12 to 15 minutes or until golden brown.

Use the turkey and Reduced Fat Crescent Rolls to make this decently healthy, and the soy cheese to make it dairy-free.

- Brown meat and onion; stir in barbecue sauce and set aside.
- Heat oven to 375.
- Unroll crescent dough into four long rectangles on Pam-sprayed cookie sheet. Overlap long sides; firmly press perforations and edges to seal. Pat to form a 15x13-inch rectangle.
- Spread meat mixture lengthwise, in a 4-inch wide strip, down center of dough to within 1 inch of ends. Top meat with cheese slices.
- Fold shorter sides of dough 1-inch over filling. Bring long sides of dough rectangle over filling, overlapping edges; pinch edge to seal. Sprinkle with sesame seeds.
- Bake at 375 for 20-25 minutes or until golden brown. Let stand 5 minutes.
