1 cup uncooked penne pasta
1 can (8 ounces) tomato sauce
3/4 cup crumbled feta cheese
1/2 cup sour cream
1/4 cup fresh basil leaves, thinly sliced
1/4 cup marinated quartered artichoke hearts, drained
1/4 cup oil-packed sun-dried tomatoes, drained and thinly sliced
1/4 cup Greek olives, pitted and halved
2 tablespoons chopped red onion
1-1/2 teaspoons dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large bowl, combine the remaining ingredients., Drain pasta; toss with sauce mixture. Transfer to a 1-1/2-qt. baking dish coated with cooking spray. Bake, uncovered, at 375° for 30-35 minutes or until heated through.

1 pound potatoes
3 tablespoons extra-virgin olive oil
4 (4.375 ounce) cans sardines, drained
½ pound cherry tomatoes, diced
2 cloves garlic, chopped
1 tablespoon dried basil
2 tablespoons bread crumbs

Steps:

  • Place the potatoes into a large pot and cover with salted water. Bring to a boil; reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain. Cover with cold water and allow to sit until cool, draining and replacing the cold water as needed. Peel and slice the potatoes thinly.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Grease a casserole dish with the olive oil. Line the casserole dish with an even layer of potato slices; top with a layer of sardine fillets. Scatter the diced tomatoes over the sardines. Sprinkle the garlic, basil, and bread crumbs over the tomatoes.
  • Bake in the preheated oven until heated through, about 20 minutes.

1/2 yellow onion
4 tomatoes
1 green capsicum
100 g mushrooms
1 tablespoon olive oil
3 -6 skinless chicken pieces, on the bone, eg drumstick, thighs or 3 -6 chicken fillets, diced into bite size pieces
2 sprigs lemon thyme
1/2 cup dry white wine
6 pitted black olives (optional)
salt & freshly ground black pepper
1 garlic clove, finely chopped
1 tablespoon finely sliced basil

Steps:

  • Chop onion.
  • Cut tomatoes into small pieces.
  • Halve capsicum, remove seeds and cut each into eight pieces.
  • Wash and halve mushrooms.
  • Heat oil a saucepan on medium heat and brown chicken pieces for about 1 minute each side.
  • Transfer chicken to a plate.
  • Add onion, garlic and thyme to pan and on a medium heat stir fry for about 2 minutes.
  • Add capsicum and stir fry for about 2 minutes.
  • Add tomato and stir well before adding wine, mushrooms, olives and chicken pieces.
  • Season with a little salt and pepper and bring to a simmer.
  • Cover and cook for about 20 minutes.
  • Just before serving stir in basil.
  • Serve with steamed rice or vegetables.

1 lb red potatoes, sliced
3 tablespoons olive oil
4 cloves garlic, finely chopped
2 medium red onions, sliced thin
1 tablespoon crushed lovage or 1 tablespoon sage
1 tablespoon thyme
1 teaspoon tamari soy sauce or 1 teaspoon soy sauce
pepper
4 tomatoes, sliced
1 cup pitted black olives, sliced in half
1 cup parmesan cheese
parsley

Steps:

  • Steam the potatoes until they are soft but still firm (if that makes any sense).
  • You want them to be soft, but not to the point that they will fall apart when lifted.
  • Set aside.
  • In a small skillet, saute the garlic, onions, and herbs until the onions become translucent.
  • Remove them from the heat.
  • In a medium-sized bowl, mix the potatoes and the onions.
  • Add the tamari and pepper to taste.
  • In a casserole, begin layering the ingredients.
  • First, place the onions and potatoes on the bottom of the tray.
  • Cover this with the tomatoes and olives.
  • Finally, cover this with the cheese.
  • Continue to layer in this order until there aren't any more ingredients.
  • Bake this in an oven at 350 degrees for 30 minutes with a loose tinfoil cover.
  • Uncover the mixture and cook for another 20 minutes or until brown on top.
  • Garnish with the parsley.

2 teaspoons olive oil
8 chicken legs
1 large brown onion, halved, thinly sliced
3 celery ribs, trimmed, cut into 1in thick slices
2 garlic cloves, crushed
7 ounces button mushrooms, thickly sliced
2 (14 ounce) cans diced Italian tomatoes
1 chicken stock cube
5 ounces frozen fava beans, thawed, peeled
1 tablespoon fresh thyme leave
fresh ground black pepper
7 ounces dried pasta shapes, to serve (optional)

Steps:

  • Preheat oven to 350°F
  • Heat the oil in a non-stick frying pan over medium heat. Add the chicken and cook, turning occasionally, for 5 minutes or until brown all over.
  • Transfer chicken to an ovenproof casserole dish.
  • Add onion and celery to the frying pan and cook, stirring, for 5 minutes or until soft. Add garlic and mushrooms and cook, stirring, for 2 minutes or until mushrooms are tender. Add tomatoes and stock cube and bring to the boil. Remove from heat. Add to casserole dish with the chicken.
  • Cover the casserole dish with a tight-fitting lid or foil. Bake in oven for 35 minutes or until chicken is tender. Add broad beans and half the thyme and cook for a further 10 minutes or until broad beans are tender. Remove from oven. Taste and season with pepper.
  • Meanwhile, cook the pasta in a large saucepan of boiling water following packet directions or until al dente. Drain well.
  • Spoon casserole into a large serving bowl. Sprinkle with remaining thyme and serve with pasta, if desired.

1 1/2 lbs very lean steak, cut into large chunks
2 red onions, cut into thick wedges
2 red peppers, cut into thick slices
1 yellow pepper, cut into thick slices
1 lb ripe plum tomato, quartered
2 tablespoons sun-dried tomato paste
1 1/4 cups red wine
5 ounces mixed olives, drained
6 tablespoons fresh oregano, roughly chopped
2 heads garlic, halved

Steps:

  • Preheat oven to 375ºF. Heat the oil in a flameproof roasting tin.
  • Brown the beef in batches over a medium-high heat for 5 mins, then set aside. In the same pan, fry the onions and peppers for 5 mins
  • Add remaining ingredients and 2/3 cup water, season well.
  • Cover with foil, bake in the oven for 1 hour.
  • Scatter with extra oregano leaves, and serve.

1 lb small white potatoes, cut into quarters
2 large italian frying bell peppers, thinly sliced
1/4 teaspoon salt
1/4 teaspoon black pepper
3 garlic cloves, peeled and chopped
2 (5 ounce) cod fish fillets (recommend US pacific caught) or 2 (5 ounce) halibut fillets
1/4 cup pitted kalamata olive, chopped
2 plum tomatoes, seeded and cut into 1/4-inch wedges
2 tablespoons lemon juice
1/4 cup flat leaf parsley, chopped

Steps:

  • Heat oven to 400°F Grease an oval 2-quart casserole dish with
  • tablespoon of the olive oil. Spread potatoes and peppers over bottom of the dish. Season with 1/8 teaspoon each of the salt and pepper. Bake at 400°F for 35 minutes or until potatoes are tender, stirring occasionally.
  • Scatter garlic over potatoes and peppers. Season fish with remaining 1/8 teaspoon each salt and pepper and place on top of the potatoes. Distribute olives and tomatoes over the casserole. Drizzle with lemon juice and remaining 1 tablespoon olive oil. Sprinkle with parsley.
  • Bake at 400°F for 25 minutes or until fish flakes easily when tested with a fork.

60 g onions, diced
1 small eggplant, diced
45 g olive oil
5 g garlic
420 g beans, mixed and drained
75 g green beans, diced
60 g red capsicums, diced
45 g tomato paste
270 g tomatoes, diced in juice
14 g vegetable stock (oxo)
1 cup water
4 g fresh basil leaves
salt
pepper

Steps:

  • Heat a large saucepan and add oil and add onion and garlic and fry for 3-4 minutes,.
  • Then add diced Eggplant.
  • Add the red pepper and tomato paste.
  • Stir in the tin tomatoes (chopped up), stock and water and basil lastly.
  • adding Beans (fresh and tinned) salt and pepper.
  • Transfer into oven dish and cover with tinfoil. Bake for 20 minutes at 150°C.
  • Nice either served with pasta or couscous, and crusty bread.

6 zucchini, sliced
1/4 cup olive oil
1/4 cup flour
4 tomatoes, cut into wedges
1/2 red capsicum, cut into 2cm squares
1/2 green capsicum, cut into 2cm squares
1 cup black olives
1/3 cup basil, chopped
1/2 cup pine nuts
1/4 cup balsamic vinegar

Steps:

  • Saute onion and zucchini in oil for 15 minutes.
  • Transfer to baking dish.
  • Sprinkle lightly with flour.
  • Arrange tomato and capsicum on top.
  • Bake uncovered at 200 degrees C for 20 minutes.
  • Top with olives, basil and pine nuts.
  • Bake further 10 minutes.
