MEDITERRANEAN BEEF AND VEGETABLE CASSEROLE
The vegetable mixture in this recipe is a variation of ratatouille, a popular Mediterranean dish. I found it in my Woman's Day cookbook. It sounded interesting and has become one of my family's favorite recipes -- easy to make and SO delicious.

- Make the patties: In a large bowl, mix the ground beef, breadcrumbs, salt, thyme and red pepper with your hands or a wooden spoon until well-blended. Shape the mixture into 8 patties, about 1/4-inch thick.
- In a large heavy skillet, heat the oil over medium-high heat. Add the patties and cook for about 2-3 minutes on each side, or until browned. (They will finish when they are cooked with the vegetable mixture.) Remove with a slotted spoon to a plate.
- Reduce the heat to medium-low. Add the onion to the pan drippings and cook, stirring occasionally, for 5-7 minutes, or until softened.
- Increase heat to medium. Add the tomatoes (break up with hands), zucchini, garlic, salt and thyme. Stir to mix. Cover and cook for 10 minutes, or until the zucchini is just tender.
- Stir in the potatoes and parsley. Add the beef or turkey patties and spoon over some of the vegetable mixture. Cover and simmer for 10 minutes, or until heated through. Serve right away.

I have yet to try this one, but it is another one given to me on a recipe card. Sounds pretty good to me, so if someone else gets a chance to make this before I do, please let me know what you thought!

Steps:
- Preheat oven to 375 degrees.
- Mix steak cubes and butter in a large bowl to cover steak with butter.
- Arrange steak cubes in a large baking dish.
- Mix together tomato paste, broth, wine and vinegar in mixing bowl.
- Stir in olives, brown sugar and garlic.
- Pour over steak cubes to coat.
- Arrange bay leaves over beef mixture.
- Sprinkle over with the raisins.
- Then sprinkle over all with the cinnamon and ground cloves.
- Cover tightly with foil.
- Bake for 45 minutes.
- Remove the bay leaves, and discard them.
- Arrange the hot cooked rice on a large serving platter and spoon the meat and sauce over.

MEXICAN-STYLE BEEF CASSEROLE
On a snowy evening, craving an easy dinner, I came up with a simple and delicious Mexican beef casserole. It's made with ground beef, refried beans, onions, sour cream, cheese, and guacamole!

- Chop avocado flesh and mash in a bowl. Add tomatoes, onion, lime juice, garlic, cilantro, and salt. Cover with a lid or plastic wrap and refrigerate guacamole until ready to serve.
- Preheat the oven to 375 degrees F (190 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add water and taco seasoning; stir until combined. Simmer until thickened, 3 to 4 minutes.
- Spread refried beans into the bottom of a 9x13-inch baking pan. Top with black beans. Spread ground beef mixture on top of beans. Drizzle tomato sauce over the whole mixture.
- Bake in the preheated oven for 15 minutes. Sprinkle Mexican cheese blend on top. Continue baking until cheese is melted, about 1 minute more.
- Top each serving with guacamole, sour cream, and scallions.

- Place the potatoes into a large pot and cover with salted water. Bring to a boil; reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain. Cover with cold water and allow to sit until cool, draining and replacing the cold water as needed. Peel and slice the potatoes thinly.
- Preheat an oven to 350 degrees F (175 degrees C).
- Grease a casserole dish with the olive oil. Line the casserole dish with an even layer of potato slices; top with a layer of sardine fillets. Scatter the diced tomatoes over the sardines. Sprinkle the garlic, basil, and bread crumbs over the tomatoes.
- Bake in the preheated oven until heated through, about 20 minutes.
