DAN'S MEATY LAYERED BEAN DIP
I created this very meaty layered bean dip for my then boyfriend who is now my husband, years ago. He loves meat in everything, so I recreated an old recipe that I had, by adding additional seasoning and lean ground beef, and it has been a family favorite ever since. This is a very filling appetizer. Great for hearty eaters.

- Preheat oven to 350 degrees F. Mix taco seasoning and cumin with ground round and saute' in a large skillet. Drain excess fat.
- Spread one can of refried beans in bottom of a buttered glass dish 9X13X2. Top with half the olives, half the salsa, half the cheese, and half of the meat mixture. Repeat layers with remaining ingredients.
- Bake in preheated 350 degree F oven for 30 to 35 minutes. or until heated through and cheese is bubbly. Garnish with chopped green onions. Serve with sour cream & tortilla chips while still hot.
- This recipe has been family approved for almost 20 years.

- Soften the cream cheese by leaving it out on your counter for 30 minutes. You need to do this so that it blends well with the sour cream. To a medium bowl add the softened cream cheese and the 8oz of sour cream. Using a handheld mixer, blend until smooth. It's OK if there are a few lumps, but you do want it to be mostly smooth. You can also use a stand mixer to do this if you have one.
- To assemble, spoon the cream cheese sour cream blend into your serving dish and spread to cover the entire bottom. Whatever dish you use, you want it to have an edge higher than the dip, like the pie plate in the photo. This will make sure as the liquid from the salsa separates it doesn't run right off of a platter onto your table. Next, pour the entire jar of salsa over top and smooth to cover the cream cheese sour cream blend. Next, cover the salsa with all of the shredded Cheddar cheese. Lastly, sprinkle with the diced onions. Serve with your favorite chips and enjoy!

- Brown ground beef and add taco seasoning as directed on packet. We usually use a little less water though.
- Chunk the Velveeta and add to crockpot.
- Pour in jar of salsa and add the prepared meat.
- Let melt together in the crockpot, stirring occasionally.
- At times, we have been in a hurry and used the microwave to help speed up the melting process for the Velveeta. Then just add the melted Velveeta to the other ingredients in the crockpot to keep warm and melty for dipping!
- We have also used Mexican style Velveeta and Pepper jack, and it was just as good. Feel free to experiment.
SEVEN LAYER TACO DIP
Steps:
- Blend the taco seasoning and refried beans in a medium bowl until completely smooth.
- Spread this mixture evenly in the bottom of your serving dish.
- Mix together the sour cream and cream cheese in a separate medium-sized bowl.
- Carefully spread this cheese mixture over the beans in the serving bowl, covering the whole layer.
- Spoon the salsa over the top of the cream cheese and sour cream, gently spreading it over to reach the edges.
- Chop the tomatoes, green pepper, and green onion, and shred the lettuce.
- Gently toss this all together and sprinkle over top of the salsa.
- Top this by scattering the shredded cheese.
- Garnish with sliced black olives and serve.
