Savory, onion and sweet red pepper perk up the mushroom and cheese flavors in this pretty deep-dish pie...and add a little color, too. Ruth Andrewson of Leavenworth, Washington shared this recipe.

Number Of Ingredients 12

1 unbaked deep-dish pastry shell (9 inches)
4 cups sliced fresh mushrooms
1/2 cup diced onion
1/4 cup diced sweet red pepper
1 tablespoon butter
1 cup shredded cheddar cheese
2 tablespoons all-purpose flour
1-1/4 cups whole milk
4 large eggs, lightly beaten
1 to 2 tablespoons minced fresh savory or 1 to 2 teaspoons dried savory
1 teaspoon salt
1/2 teaspoon cayenne pepper

Steps:

  • Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack. Reduce heat to 350°., In a large skillet, saute the mushrooms, onion and red pepper in butter until mushrooms are tender. Drain and set aside. In a large bowl, combine cheese and flour. Stir in the milk, eggs, savory, salt and cayenne until blended. Stir in mushroom mixture. Pour into crust., Bake for 40-50 minutes or until a knife inserted in the center comes out clean (cover edges loosely with foil if needed to prevent overbrowning). Let stand for 10 minutes before cutting.

4 bacon strips, cooked and crumbled

Steps:

  • Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5 minutes longer. Remove from the oven; reduce heat to 375°., Meanwhile, in a small skillet, saute mushrooms and onions in butter until tender. In a large bowl, beat the eggs, cream and pepper. Using a slotted spoon, transfer mushrooms and onions to egg mixture. Stir in cheese and bacon. , Pour into crust. Cover edges loosely with foil. Bake for 30-35 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before cutting. Freeze option: Cover and freeze unbaked quiche. To use, remove from freezer 30 minutes before baking (do not thaw). Preheat oven to 375°. Place quiche on a baking sheet; cover edge loosely with foil. Bake as directed, increasing time as necessary for a knife inserted in the center to come out clean.

My husband, who *thought* he didn't like quiche, goes back for seconds when I make this one. This was my first try at making quiche and I really liked it. The cayenne pepper really gives it a nice bite. I have to admit I've never made it with the savory because I can't find it in my grocery stores, but I think it tastes good without it. Recipe is from Taste of Home.

Chock full of a trifecta of bacon, sausage and ham, you better believe no one will go hungry after a slice of this quiche. Store-bought pie dough means this dish comes together quickly, and it's the perfect way to use up breakfast meat in your fridge.

Half a 14.1-ounce package refrigerated pie crusts
4 slices bacon
1 pound ground country sausage
1/2 cup half-and-half
2 teaspoons Miss Brown's House Seasoning, recipe follows
6 large eggs, beaten
1/2 cup diced country ham
2 large green onions, chopped
1 cup shredded sharp white Cheddar
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F. Unroll the pie crust and fit into a 9-inch quiche pan or pie plate. Place a piece of parchment paper over the dough and fill with pie weights or dried beans. Bake until the crust is lightly browned, about 10 minutes. Remove the crust from the oven. Remove the parchment and pie weights and return the crust to the oven. Bake until the crust is baked through, about 5 to 7 minutes longer. Set aside to cool.
  • Meanwhile, cook the bacon in a large skillet over medium-high heat until crisp. Remove to paper towels to drain. Chop the bacon. Cook the sausage in the same skillet until browned and crumbly, about 7 minutes. Remove the sausage with a slotted spoon, and set aside with the bacon.
  • Whisk together the half-and-half, Miss Brown's House Seasoning (recipe follows) and the eggs. Sprinkle the bacon, sausage, ham, green onions and Cheddar evenly on top of precooked crust. Pour the egg mixture on top. Bake until the center is set, 25 to 30 minutes. (Cover the edges with a pie shield or aluminum foil if getting too brown.) Allow to cool slightly before serving.
  • Stir together all ingredients in a small bowl. Store in an airtight container.

MUSHROOM & SWISS CHEESE QUICHE

This is a great dish to serve to company...it makes a nice lunch along with a crisp green salad. At Christmas time I made it the day before and then reheated it...tasted just as good as fresh from the oven.

Number Of Ingredients 15

4 tablespoons butter
2 tablespoons finely minced onions
1 lb fresh mushrooms, thinly sliced
1 1/2 teaspoons salt
1 teaspoon lemon juice
4 eggs
1 cup half-and-half (10% cream)
fresh ground pepper
1/16 teaspoon ground nutmeg
2 ounces grated swiss cheese
2 tablespoons butter, softened
1 cup sifted all-purpose flour
1/2 teaspoon salt
1/3 cup shortening
3 -4 tablespoons ice water

Steps:

  • For Pastry: Sift together the flour and salt.
  • Using a pastry blender, cut the shortening in until mixture resembles cornmeal.
  • Slowly sprinkle ice water over the top, while tossing the mixture up from the bottom of the bowl with a fork.
  • Gather the dough into a ball, using only enough water to hold the ball together.
  • Wrap ball in waxed paper and refrigerate for 20 minutes.
  • Remove from fridge and roll out into a circle which is 2 inches larger than the diameter of the pie pan being used.
  • Put dough into pan.
  • Place a piece of aluminum foil on the bottom and up the sides of the pie pan.
  • Fill with dry beans (this will stop the pastry from puffing up during baking).
  • Bake in preheated 450F degree oven, on lowest rack, for 12 minutes.
  • Take from oven and remove beans and foil (be careful, they will be hot).
  • Meanwhile, prepare filling: Melt butter, add onions and cook for 1 minute.
  • Stir in mushrooms, 1 tsp salt and lemon juice.
  • Cook, stirring occasionally, until mushrooms are done and all the liquid has evaporated.
  • Continue frying the mushrooms in the butter for about 1 minute.
  • In a large bowl, beat the eggs and cream together.
  • Add the remaining salt, pepper and nutmeg.
  • Stir in the mushrooms.
  • Pour into prepared pastry shell, sprinkle with swiss cheese and dot with softened butter.
  • Bake in preheated 350F degree oven for 35 minutes or until quiche is puffy and browned, and a knife inserted into center comes out clean.
  • Let sit for 10 minutes before serving.

Made this for Easter, and EVERYONE said it was the best quiche they had ever had. Got it off of allrecipes, and tweaked it. I use the no roll pie crust from this web site, leave it unbaked, and add the ingredients.

1/2 cup butter
3 garlic cloves, chopped
1 small onion, chopped
10 ounces chopped fresh spinach (can use frozen, thawed & drained)
3 1/2 ounces mushrooms, roughly chopped
3 ounces shredded Italian cheese blend (parmesan, ramano, mozzerella)
1 (8 ounce) package shredded cheddar cheese
salt and pepper
2 whole eggs
2 egg whites
1 cup milk
salt and pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large dutch oven or pot, melt butter over medium heat. Saute garlic and onion in butter until lightly transparent. Add the mushrooms, and saute until they are fragrant. Add the spinach, and saute until it reduces down (about 4 minutes). Remove and reserve most of the liquid from the pan. Stir in all the italian cheese and all but 1/2 cup of the cheddar. Season with salt and pepper (make sure to taste at this point, as this is the only time you will be able to adjust the salt and pepper). Spoon mixture into pie crust.
  • In a medium bowl, whisk together eggs and milk. Pour into the pastry shell, allowing egg mixture to thoroughly combine with spinach mixture. Add in the set aside liquid if it seems too dry, and mix thouroghly.
  • Bake in preheated oven for 15 minutes. Sprinkle top with remaining Cheddar cheese, and bake an additional 35 to 40 minutes, until set in center. Allow to stand 10 minutes before serving.

This recipe makes two quiche, so you might wish to freeze one for another meal, it may be frozen sucessfully, just cover tightly with foil and place in the freezer, to bake, just thaw in the refrigerator overnight and bake at 350 degrees F for 40-50 minutes, the quiche may be baked in two 9-inch pie pans instead of the quiche pans.

1 (8 ounce) can sliced mushrooms, drained
2 cups cooked chicken, chopped

Steps:

  • Set oven to 425 degrees.

1 (9 inch) ready-made pie crusts, deep dish (in the freezer section)
1 -2 tablespoon olive oil
1/2 lb ground turkey breast or 1/2 lb ground chicken breast
1 cup fresh mushrooms, sliced
1/2 cup reduced-fat mayonnaise
1/2 cup 1% low-fat milk
3 large eggs
salt, to taste (optional)
1 tablespoon cornstarch
2 cups low-fat cheddar cheese, shredded
1/4 teaspoon black pepper
1/3 cup yellow onion, sliced thinly
1/4 teaspoon thyme
1/8 teaspoon nutmeg

Steps:

  • Precook pie crust at 400°F until lightly browned (perhaps 8 min, I've never timed it) or per pkg directions.
  • Remove pie from oven and then reduce oven to 350°F.
  • Heat the oil in a skillet and saute the ground turkey and the mushrooms for 5 minutes, stirring to break up the meat.
  • Remove the mixture to a bowl with a slotted spoon and dispose of the fat in the skillet.
  • Combine the mayonnaise, milk, eggs and cornstarch in the skillet; stir until smooth.
  • Add meat/mushrooms, cheddar cheese, onion, salt (to taste), pepper, thyme and nutmeg.
  • Pour into prebaked pie shell; bake in the preheated 350°F oven for 35-40 minute.
  • Remove from oven and let sit for 5-10 minutes before serving.
  • Variation: Swap out the cheddar cheese for your favorite cheese, such as swiss or monterey jack.
