My Meatloaf image

This is the meatloaf I taught myself how to make when I tried to duplicate my Daddy's meatloaf! It's a perennial family favorite! It's wonderful sliced cold the next day and used in a warm, toasted sandwich with a little butter.

1 pound ground beef
¼ cup ketchup
½ packet dry onion soup mix
3 slices leftover bread (heels are great), torn into bite-size pieces
1 teaspoon Italian-style seasoning
1 tablespoon water
water as needed

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, combine the beef, ketchup, soup mix, bread, Italian-style seasoning and water. Mix well. Shape into a loaf and place into a 9 inch pie pan OR a 9x13 inch baking dish. Baste the top of the meatloaf with ketchup.
  • Bake at 425 degrees F (220 degrees C) for one hour, or until the edges are just crispy and the top has a crust.
  • Cool for 15 to 20 minutes before cutting.

Yield 6-8

Number Of Ingredients 15

Nonstick vegetable oil spray
1 cup cubed day-old white bread
⅓ cup half and half
1½ pounds ground beef (20 percent fat)
⅓ cup chopped fresh Italian parsley
⅓ cup finely chopped shallots
⅓ cup grated Parmesan cheese
⅓ cup tomato paste
2 eggs, beaten slightly
1 tablespoon chopped fresh oregano leaves
2 teaspoons chopped fresh thyme leaves
1½ teaspoons freshly ground black pepper
1½ teaspoons salt
1 teaspoon chopped fresh rosemary leaves
1 teaspoon seasoned salt

Steps:

  • Position oven rack to middle position; preheat to 400 degrees.
  • Line heavy, rimmed baking sheet with foil.
  • Place cooling rack atop baking sheet.
  • Spray cooling rack with nonstick spray.
  • Toss bread cubes with half and half in large bowl to coat.
  • Set aside until bread is very soft and all liquid is absorbed, about 10 minutes.
  • Add ground beef, parsley, shallots, cheese, tomato paste, eggs, oregano, thyme, pepper, salt, seasoned salt and rosemary.
  • Using clean hands, mix just until all ingredients are thoroughly blended, but do not over-mix because doing so causes meat loaf to be tough.
  • Form mixture into a 9-by-4-inch oval loaf.
  • Set meat loaf atop the prepared rack on baking sheet.
  • Bake for 10 minutes, and then turn it over, and then about 1 hour or until an instant-read thermometer registers 160 degrees when inserted into center of meatloaf.
  • Allow meatloaf to rest for 15 minutes (this will help keep it moist).
  • Using a large sharp knife cut meatloaf crosswise into thick slices.

1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 eggs, beaten
1/2 cup KRAFT Original Barbecue Sauce, divided

Steps:

  • Heat oven to 375°F.
  • Mix meat, stuffing mix, water, eggs and 1/4 cup barbecue sauce just until blended.
  • Shape into loaf in 13x9-inch baking dish sprayed with cooking spray.
  • Top with remaining barbecue sauce. Bake 1 hour or until done (160ºF).

Delicious meatloaf! This is now my favorite way of making this dish. My hubby doesn't usually like meatloaf, but "loves" this one. Wonderful texture - great flavor, try it, you will love it. I tried this after a neighbor gave me a recipe, I didn't have 3 of the ingredients so I improvised - the new version is lots better than the original!

Number Of Ingredients 9

2 lbs ground beef
3 slices herbed toast (see below)
1 1/2 cups beef broth
1 1/2 teaspoons onion flakes
1/2 teaspoon onion powder
salt and pepper (I use a generous amount of both)
1/2 cup ketchup
1/4 cup brown sugar
2 teaspoons honey mustard

Steps:

  • Toast 3 slices of bread, butter and sprinkle with garlic powder, garlic salt and oregano - allow to sit approximately 10 minutes.
  • Mix toast with beef broth and seasonings in a medium bowl. After well mixed add ground beef. Mix only until well combined.
  • Pat meat mixture into an 8x8x4 glass baking dish.
  • Microwave on high for 7 minutes, drain off juices, microwave another 5 minutes on high. Again drain off juices.
  • While meatloaf is cooking, combine topping ingredients.
  • Frost cooked meatloaf with topping mixture. Microwave an additional 5 minutes on high.
  • Allow meatloaf to sit 10 minutes before serving.
  • Enjoy!

NO way is there such a thing as greaseless meatloaf! My neighbor came home from church with this recipe-so we both made it on the same night to test it. WOW! No dripping grease yet moist and tender and tasty. Now it's an "Old Standby"

2 lbs ground beef (90% lean)
1/4 cup Italian breadcrumbs (I use Progresso.)
1/2 cup potato, grated raw
1/2 cup onion, chopped
2 tablespoons fresh chives, chopped
1/2 cup raw carrot, shredded
1 cup cream-style cottage cheese
1 egg
2 teaspoons salt
1/2 teaspoon pepper
1/4 cup ketchup
3 tablespoons brown sugar
1 teaspoon dry mustard (ground spice)
1/4 teaspoon nutmeg

Steps:

  • Lightly mix together all ingredients until well blended.
  • Shape into two loafs (9x5x3) in a shallow pan.
  • In a small bowl, mix together all 4 Piquant Sauce ingredients until well blended (not lumpy).
  • "Frost" both loafs starting with the sides and finish with the top.
  • Bake in a 350 degree oven for 1 hour.
  • Allow to cool for 5 minutes before cutting.

This Classic Meatloaf recipe was my dad's claim to fame, at least in our house! It's tender and juicy and has a uniquely delicious flavor. The brown sugar and ketchup glaze just puts this meatloaf over the top!

2 pounds ground beef (85/15)
1/2 cup minced onion
2 eggs
1/2 cup ketchup
1 tablespoon Worcestershire
1 cup crushed crackers (quick cook oats or breadcrumbs)
2 teaspoons Porterhouse seasoning
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked black pepper
1/2 cup ketchup
2 tablespoons brown sugar
2 teaspoons yellow mustard

Steps:

  • Preheat oven to 350 degrees F. Spray a 9"x5" loaf pan with nonstick cooking spray.
  • Combine meatloaf ingredients in a large bowl using your hands, just until combined. Do not overmix - The less you mess with it, the better it will be!
  • Shape into a loaf and place into a loaf pan.
  • In a small bowl combine 1/2 cup ketchup, brown sugar and mustard. Brush about 1/3 of the mixture over the top of the meatloaf.
  • Bake in the preheated oven for 45 minutes, then pour remaining sauce over the meatloaf. Return to the oven and bake for an additional 15-25 minutes or until meatloaf is completely cooked through. Meat should register between 155 and 160 degrees F.
  • Let stand for 5-10 minutes before slicing and serving. Garnish with parsley if desired.

  • Heat oil in a large saucepan over medium heat, then cook onion with 1 tsp salt until softened, about 7 minutes. Add garlic and cook until fragrant, about a minute more. Cool for a few minutes, then scrape into breadcrumb mixture.
  • Stir 1/4 cup ketchup into the breadcrumb mixture, along with Worcestershire sauce, parsley, remaining salt, and the pepper. When mixture is cool to the touch, stir in the eggs then the ground meat. Use your hands to gently but thoroughly work the mixture together.
  • Scrape the meat mixture onto the prepared pan and use your hands to shape it into roughly 9x5" loaf shape. Dollop on the remaining 1/3 cup ketchup, using a spoon to spread it out evenly.
