1 small onion, finely chopped
1 package (12 ounces) frozen vegetarian meat crumbles
1/2 teaspoon pepper
2 tablespoons all-purpose flour
2/3 cup ketchup
1 can (8 ounces) no-salt-added tomato sauce
6 hamburger buns, split and toasted

Steps:

  • In a large nonstick skillet coated with cooking spray, melt butter over medium-high heat. Add onion; cook and stir until tender. Stir in meat crumbles and pepper; heat through., Sprinkle flour over mixture and stir until blended. Stir in ketchup and tomato sauce. Bring to a boil; cook and stir 1-2 minutes or until thickened. Serve on buns.

½ medium yellow onion, diced
½ green bell pepper, diced
2 cloves garlic, minced
½ teaspoon chili powder
½ teaspoon cumin

1 cup textured vegetable protein
1 cup vegetable broth
15 oz tomato sauce, 1 can
1 teaspoon vegan worcestershire sauce
1 tablespoon soy sauce
1 teaspoon brown sugar
2 teaspoons yellow mustard
4 hamburger buns

Steps:

  • In a medium skillet, heat a drizzle of olive oil over medium heat. Once the oil begins to shimmer, add the onion and cook for 2-3 minutes, until semi-translucent.
  • Add the bell pepper and cook for another 2-3 minutes, until the onion is translucent.
  • Add the garlic, chili powder, cumin, paprika, and salt and cook 2-3 minutes more, until the garlic is soft and fragrant. Season with salt.
  • Add the textured vegetable protein, vegetable broth, and tomato sauce and stir well until combined. Cover and cook for 15 minutes, until most of the liquid has been absorbed.
  • Remove the lid and add the Worcestershire sauce, soy sauce, brown sugar, and yellow mustard. Mix to combine and cook for 3-4 more minutes, until the remaining liquid has been absorbed.
  • Serve on hamburger buns.

1 teaspoon salt

½ white onion, diced
1 clove garlic, minced
¾ cup ketchup
2 teaspoons mustard

1 pack dinner roll
½ cup shredded cheddar cheese
2 tablespoons butter, melted
sesame seed

Steps:

  • Preheat oven to 350°F (180°C).
  • In a saucepan over medium heat, add the ground beef and sprinkle with salt and pepper.
  • Using a spoon, break up the meat and stir until browned.
  • Add the onion and garlic and continue to cook until the onions are translucent.
  • Add the ketchup, mustard, Worcestershire, and brown sugar.
  • Stir until the meat is fully cooked and sauce is evenly combined. Set aside.
  • Cut the dinner rolls in half and place the bottom half in a baking pan.
  • Top with meat and sprinkle with cheese. Place the top of the rolls back on top.
  • Brush the rolls with melted butter and sprinkle with sesame seeds.
  • Bake for 10 minutes, or until rolls are toasted and cheese is melted.
  • Cut into individual sliders.

1 tbsp olive oil
1 shallot (finely chopped)
1 red pepper (finely chopped)
1 garlic clove - whole
1 cup green lentils, dried
4 cups vegetable stock
3 tbsp tomato paste
1 1/2 cups tomato sauce (one 389 ml can)
1 tsp apple cider vinegar
1 tsp cumin
1 tbsp chilli powder
1 tsp brown sugar
1 tsp soy sauce
1/4 tsp salt
1/4 tsp ground black pepper

Steps:

  • Begin by cooking the lentils. Bring a pot of vegetable stock to the boil. Pour in the lentils and simmer for 20 minutes - until the lentils are tender and most, if not all of the liquid has been absorbed. If the lentils are tender and you still have liquid - drain the lentils.
  • While the lentils are simmering away it's time to start the sauce.
  • Add the olive oil, shallot, pepper and garlic to a large skillet, over medium high heat. Cook until the peppers have softened. Remove the garlic clove - I remove the garlic clove at this point so the dish isn't too garlicy. This is primarily for those picky kiddos out there. Feel free to leave the garlic, if that works for your family.
  • Stir in the cumin, chili powder, brown sugar, soy sauce and cider vinegar.
  • Pour the tomato paste into the pan. Cook the tomato paste until it starts to turn brown. This brings out the flavour of the tomatoes and builds the base of the sauce.
  • Now pour in the tomato sauce and the cooked lentils. Let it simmer over medium heat for 5 minutes and then it's ready to serve.

3/4 cup California Walnuts
2 tablespoons oil
1 medium onion, chopped
1 green bell pepper, chopped

1/2 teaspoon EACH: dry mustard AND cayenne pepper
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce (or vegan Worcestershire)
1 tablespoon apple cider vinegar

Steps:

  • make the 'meat': Pulse the mushrooms and walnuts in a food processor in batches until it breaks down into a ground beef texture.
  • cook: heat the oil in a large skillet over medium high heat. Add the onions, bell pepper and minced garlic, and let cook for 5 minutes or until the veggies soften. Add the prepared mushroom mix to the skillet, stir so everything is well combined and let cook for 5 minutes. Add the remaining ingredients: ketchup, brown sugar, dry mustard, cayenne, tomato paste, Worcestershire sauce, and apple cider vinegar. Stir everything together and let simmer for 5 minutes. Adjust with additional salt to taste.
  • assemble: Serve the prepared sloppy joe mix on top of toasted buns. Best when served the day it's prepared. I find the sloppy joes mixture looses that texture on day two.

8 to 10 ounces mushrooms ((white or cremini), diced)
1/2 white onion, (diced)
1 large carrot, (diced)
1 stalk celery, (diced)

3/4 cup cooked lentils
1/2 to 3/4 cup ketchup
1 teaspoon vegetarian Worcestershire sauce
1/2 teaspoon mustard
sea salt and black pepper

Steps:

  • In a large skillet, heat 1 tablespoon Vegetable oil over medium-high heat. Saute the mushrooms until they are browned. Remove from pan and set aside.
  • Add the remaining 1 tablespoon of oil to the pan and sauté the onion until translucent. Add carrots, celery, and bell pepper and cook over medium heat for 5 minutes.
  • Place the mushrooms back in the pan and add lentils, ketchup, Worcestershire sauce, and mustard. Turn heat to low and stir. Season to taste with salt and pepper.

1 (12-ounce) package plant-based "meat" crumbles (about a 3/4 pound package)
1 (19-ounce) can lentils (rinsed and drained )
1 tablespoon chili powder
1/2 teaspoon dried oregano

1/2 teaspoon freshly ground black pepper
3 tablespoons tomato paste
1 (14-ounce) can tomato sauce

Steps:

  • Heat olive oil in a 12-inch sauté pan over medium heat. Add onion, bell pepper, carrot and garlic and cook, stirring occasionally, for 3 to 5 minutes until the veggies start to soften.

1 cup tomato sauce
1 tablespoon ketchup
1 tablespoon pure maple syrup
2 teaspoons apple cider vinegar

3/4 teaspoon smoked paprika

1 teaspoon chili powder
1/4 teaspoon ground cumin
1/4 teaspoon salt

Steps:

  • Place lentils in a medium sized pot and cover with 1 cup of water and a pinch of salt. Bring to a boil, reduce to a simmer and cook lentils until tender and cooked through, 20-25 minutes.
  • Heat a large pan over medium heat and add the olive oil and shallots. Season with a pinch of salt and cook for 2-3 minutes. Add the garlic and cook for 1 more minute. Did you know that someone on government food assistance (SNAP) will typically receive only $3-$4 a day to purchase food for themselves? Could you imagine spending only $1 for each of your meals? I recently watched the new documentary, A Place at the Table, and it left me wondering if I could buy food to make a healthy family meal for 4 on just $4. I went shopping to find out if it was possible with one of my most frugal meals, Meatless Sloppy Joes.

2 15.5 oz cans dark red kidney beans (rinsed, drained, divided)
2 tablespoons olive oil
1/2 small or medium sized onion (finely chopped)
1 tablespoon minced garlic
1/2 teaspoon salt

2/3 cup grated carrot
2 teaspoons chili powder
1 teaspoon brown sugar
1/2 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes (optional)

3/4 teaspoon garlic powder

1 14-ounce package extra-firm tofu, drained
2/3 cup ketchup
1/3 cup chili sauce (such as Heinz)
2 tablespoons vegetable oil
1 onion, chopped
1 stalk celery, chopped
1 carrot, chopped
4 hamburger buns, split
4 slices white cheddar cheese
Bread-and-butter pickles, for topping

Steps:

  • Preheat the oven and bake the Tater Tots as the label directs. Toss with 1/2 teaspoon chili powder and 1/4 teaspoon garlic powder; season with salt and pepper.
  • Meanwhile, crumble the tofu on a paper towel-lined plate. Mix the ketchup and chili sauce in a bowl. Set aside.
  • Heat the oil in a large nonstick skillet over medium-high heat. Add the onion, celery, carrot and a pinch of salt. Cook, stirring, 3 minutes. Add the remaining 1 tablespoon chili powder and 1/2 teaspoon garlic powder. Cook, stirring, 1 minute. Add the tofu, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring, 3 minutes.
