2 tablespoons olive oil
1 medium yellow onion, minced
4 cloves garlic, minced
1 yellow bell pepper, cut into strips
1 red bell pepper, cut into strips
1 cup green beans, halved
1 ½ cups short grain white rice
½ teaspoon smoked paprika
½ teaspoon sweet paprika
1 tablespoon tomato paste
salt, to taste
black pepper, to taste
14 oz diced tomato
3 cups vegetable broth
½ teaspoon saffron thread, crumbled, or 1/2 tablespoon ground turmeric
2 bay leaves
½ cup frozen peas
½ cup canned artichoke heart
½ cup vegan chorizon, optional
½ cup fresh flat-leaf parsley, chopped
1 lemon, quartered, for garnish

Steps:

  • Heat the olive oil in a large skillet over medium heat.
  • Add the onion and cook until translucent, 3-4 minutes.
  • Add the garlic and cook for about 2 minutes until it is fragrant.
  • Add the yellow bell peppers, red bell peppers, and green beans. Cook stirring occasionally, for 5 minutes until tender.
  • Add the rice, smoked paprika, sweet paprika, tomato paste, salt, and pepper. Stir until incorporated. Cook for 1-2 minutes until the rice starts to sizzle.
  • Add the canned tomatoes. Cook for 5 minutes until the liquid has evaporated slightly.
  • Add the vegetable broth, saffron threads (crush the saffron threads between your fingertips), and bay leaves. Bring to a boil on high heat. Continue cooking, stirring occasionally, until most of the liquid is absorbed by the rice, about 10 minutes.
  • Add in the peas, artichokes, and sausage, if using. Cover the pan, reduce the heat to low, and cook for 10 minutes.
  • Remove the pan from the heat and let sit covered for 10 minutes.
  • Sprinkle the fresh parsley.
  • Enjoy!

8 ounces soy sausage, cut into 1-inch pieces
2 cloves garlic, minced
1 cup marinated artichoke hearts, quartered
1 cup sliced yellow squash
1 cup baby squash or sliced zucchini
1 cup sliced carrots
1 bunch asparagus, ends trimmed, cut into 2-inch pieces
1/2 cup frozen green peas
14-ounce can diced tomatoes
6 to 8 saffron threads
1/2 teaspoon paprika
2 bay leaves
2 cups cooked rice
1/2 cup reduced-sodium vegetable broth
1/4 cup chopped fresh parsley leaves
Salt and freshly ground black pepper

Steps:

  • Heat oil in a large paella pan or skillet over medium-high heat.
  • Add soy sausage and garlic and cook 2 minutes. Add artichokes, squash, zucchini, carrots, asparagus, peas, tomatoes, saffron, paprika, and bay leaves, bring to a simmer and cook 5 minutes. Add rice and broth and cook for 5 minutes, until liquid is absorbed. Remove from heat, remove bay leaves and stir in parsley. Season, to taste, with salt and black pepper.

3 green onions, sliced
1 teaspoon minced fresh parsley
1 teaspoon dried thyme
1/4 teaspoon hot pepper sauce
2 tablespoons olive oil
1 cup sliced fresh mushrooms
2 medium tomatoes, chopped
2 cups frozen peas
1/2 pound uncooked medium shrimp, peeled and deveined
2 tablespoons lemon juice
1 pound boneless skinless chicken breasts, thinly sliced

Steps:

  • In a saucepan, combine the broth, rice, onion, half of the garlic, salt, turmeric, pepper and bay leaf; bring to a boil. Reduce heat; cover and simmer for 20 minutes or until rice is tender. , Meanwhile, in a large skillet, saute the green pepper, onions, parsley, thyme, hot pepper sauce and remaining garlic in oil for 2 minutes. Add mushrooms. Cook until green pepper is crisp-tender. Add tomato and peas; heat through. , Discard bay leaf; add rice mixture to vegetable mixture and keep warm. In a nonstick skillet, cook and stir shrimp in lemon juice for 2 minutes. Add chicken; cook until chicken is no longer pink and shrimp has turned pink, about 3-5 minutes. Add to rice mixture; toss.

1 pinch saffron
1 medium eggplant, cut into large chunks
3 tablespoons authentico olive oil (or your favourite kind)
1 onion, chopped
2 garlic cloves, crushed
1 yellow pepper, finely chopped
1 red bell pepper, finely chopped
2 teaspoons paprika
225 g arborio rice
2 1/2 cups vegetable broth
1 (19 ounce) can diced tomatoes
salt and pepper
1 cup mushroom, sliced
1 cup green beans, cut into segments
1 (19 ounce) can chickpeas, rinsed and drained

Steps:

  • Pour 3 tablespoons water over saffron in a small bowl and set aside.
  • Sprinkle salt over the eggplant chunks and let stand in a colander for 30 minutes. Rinse and drain.
  • Heat the oil in a large frying pan and saute the onion, garlic, peppers and eggplant for 5 minutes. Sprinkle with paprika and toss.
  • Add the rice, then incorporate the vegetable stock, tomatoes, saffron and season with salt and pepper to taste.
  • Bring to a boil and simmer for 15 minutes, uncovered, stirring frequently.
  • Fold in the mushrooms, green beans and chickpeas.
  • Cook for another 15 minutes and serve immediately.

An easy, healthy and filling paella-style dish of vegetables and rice.

Number Of Ingredients 12

2 tbsp olive oil
2 medium onions, sliced
4 cloves garlic, chopped
1 green and 1 red pepper, cored and diced
1 cup (that's cup and not mug) of peas (frozen are fine)
2 tomatoes, chopped
1 tsp paprika
a good pinch of saffron threads (not absolutely necessary), dissolved in
800ml chicken or vegetable stock
ground black pepper
250-300g any long or short grain rice
chopped parsley, optional, as much as you like

Steps:

  • Prepare all the ingredients and have them lined up in front of you in the order listed above - sounds a bit pedantic, I know, but always makes cooking easier.
  • Heat the oil in a large non-stick frying pan, add the onions and garlic, cover and cook for about 3 minutes until soft. Then add the peppers and peas, stir in, cover again and cook for a few more minutes.
  • Make a well in the centre, put the tomatoes in the well and the paprika on top. Then add the stock (with the saffron if you have it), but make sure it doesn't overflow: if it gets more then half a cm close to the rim of the pan, stop adding stock and just use less rice. Season with pepper and stir.
  • Scatter as much of the rice as you think will fit over the stock (depends on your pan, really), stir it in gently, then allow it to simmer gently until the liquid has absorbed and the rice is cooked. This could take about 20 minutes, stirring occasionally. Test a bit of the rice to see if it's cooked, add a bit of stock or hot water if it is not done.
  • Stir in the parsley a few minutes before it has finished cooking, if you want to use it, then serve hot. It's also pretty nice cold and should keep for a few days in the fridge.

  • Mix boiling water and rice together in a bowl; let stand for 20 minutes. Drain.
  • Heat olive oil in a large skillet over medium heat; cook and stir onion and garlic until onion is transparent, about 5 minutes. Add green bell pepper, red bell pepper, and tomato; cook and stir until peppers are slightly tender, about 3 minutes.
  • Mix rice and vegetable broth into onion-pepper mixture; bring to a boil. Reduce heat to low and simmer. Add paprika, salt, and turmeric; cover skillet and simmer until rice is tender, about 20 minutes. Stir peas and artichoke hearts into rice mixture and cook until heated through, about 1 minute more.
