¾ cup Bread Crumbs
1 Egg
1 teaspoon Oregano
1 teaspoon Paprika
3 Garlic Cloves (minced)
¼ cup Parmesan (grated )
550 grams Ground Chicken
Salt to taste
2 tablespoons Olive Oil
2 tablespoon Olive Oil
1 tablespoon Butter
2 Garlic Cloves (minced)
½ cup Onions (chopped )
1 cup Mushrooms (finely chopped )
2 tablespoons Flour
1 ½ cups Low sodium Chicken Broth
1 teaspoon Dried Rosemary
1/2 teaspoon Dried Parsley
½ teaspoon Paprika
Salt and Pepper to taste
½ cup Heavy Cream

Steps:

  • In a large bowl, mix together all the ingredients except ground chicken and oil. Mix well and add the ground chicken. Mix till just combined. Form the mixture into approximately 18 meatballs. Set aside.
  • Heat two tablespoons Olive Oil in a pan and add as many meatballs as will fit into the pan without overcrowding. You may have to do this in batches. On high heat, brown the meatballs on all sides and remove them on a plate.
  • Heat two tablespoons olive oil and a tablespoon of butter in the same pan. Add garlic and onions. Cook till the onions soften and become translucent. Add the mushrooms and cook for another 2-3 minutes.
  • Stir in the flour and cook for another minute to get rid of the raw flour flavour. Slowly add the chicken broth and keep whisking continuously till the sauce thickens.
  • Stir in the rosemary, parsley, paprika, salt, pepper and meatballs. Add a little more stock or water if the sauce is too thick. Simmer the meatballs for ten minutes. Stir in the heavy cream and switch off the flame. Serve hot with noodles, rice or mashed potatoes.

My own creation but all of the elements are there to make this a Hungarian treat -- garlic, paprika, mustard, thyme, dill, white pepper, and sour cream. I use all dried herbs. You could certainly use fresh but your measurements would have to be altered.

Steps:

  • Combine all ingredients for meatballs in a bowl except for butter and olive oil. Form into one inch balls.
  • Heat pan on medium with olive oil and butter. (A few drizzles of oil, a few pats of butter.) Brown meatballs on all sides and reserve.
  • In a deep sauce pan, heat olive oil over medium high. Add mushrooms and spices for gravy. Saute until browned. Add butter and flour. Cook for one minute. Slowly add beef broth and stir until smooth and thickened. If you are worried about lumps you can reserve some of the broth and make a slurry with that and the flour.
  • When gravy is thickened add the finished meatballs to reheat. Stir in sour cream and heat through. Sprinkle with fresh parsley if you like.
  • These go great with wide egg noodles or mashed potatoes.

600g floury potatoes , such as Maris Piper or King Edwards
50g butter
50ml milk
500g pork or turkey mince (10% fat)
20g grated parmesan
1 apple , peeled, cored and grated
2 tbsp olive oil
1 onion , chopped
2 garlic cloves
300g mushrooms , sliced
small bunch of thyme , leaves picked
200g half-fat crème fraîche
300g peas or green beans

Steps:

  • Cook the potatoes in a large pan of boiling water for 15 mins until tender. Drain, return to the pan, add the butter, milk and season, then mash until smooth. Keep warm until you're ready to serve.
  • Meanwhile, combine the mince, parmesan, grated apple and some seasoning. Shape the mixture into ping-pong-ball-sized meatballs. Heat half the oil in a wide pan over a medium heat. Fry the meatballs for a few minutes, stirring, until golden all over. Transfer to a plate.
  • Heat the remaining oil in the pan, and fry the onion for 8-10 mins until soft and translucent. Add the garlic, mushrooms and thyme, then season and fry for 10 mins more until the mushrooms are soft and most of the liquid has evaporated. Stir in the crème fraîche.
  • Cook the peas or green beans in a pan of boiling water for a few minutes until tender. Drain and leave to steam-dry. Stir the meatballs through the sauce and cook for 1-2 mins until hot and cooked through, then season. If you want to make the meatballs ahead, leave to cool. Will keep chilled for up to a day. Reheat thoroughly. Serve alongside the mash and veg.

Steps:

  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Heat a large skillet over medium heat. Cook and stir bacon in skillet until crispy, about 10 minutes. Remove bacon with a slotted spoon to a plate lined with paper towel to drain.

2 pound ground pork
1 large onion (chopped)
3 tablespoon fresh dill (chopped)
2 eggs
¾ cup bread crumbs
¼ cup buttermilk
1 tablespoon hot sauce (I used Sriracha sauce)
salt and pepper to taste
vegetable oil ( for frying)
½ pound cremini mushrooms (sliced)
4 tablespoon unsalted butter
¼ cup all-purpose flour
¼ cup white wine
½ cup heavy cream
1 cups chicken broth
salt and pepper to taste

Steps:

  • Combine the meatballs: Add all the meatball ingredients (excluding the vegetable oil) to a large bowl and mix well using your hands. Shape into 1 inch meatballs. You should get about 40 to 50 meatballs.
  • Prep for cooking: Line a baking sheet with paper towels. Add some vegetable oil to a large skillet, about 1/4 cup and heat it over medium-high heat.
  • Cook the meatballs: Add meatballs to the skillet and cook. If not all meatballs fit in the skillet you will have to do this in a couple batches. Cook the meatballs on all sides, adding more oil if needed in between batches. Remove meatballs from skillet to prepared baking sheet, to soak up the oil.
  • Saute the mushrooms: Discard any leftover oil from the skillet and add the butter and melt. Add the mushrooms to the skillet and saute for about 5 minutes until they start to brown.
  • Create the sauce: Sprinkle the flour over the mushrooms and stir, cook for about 1 minute to remove the raw taste of flour. Add the white wine, heavy cream and chicken broth. Cook for 10 minutes, stirring occasionally. The sauce should thicken and reduce a bit. If the sauce is too thick add a bit more heavy cream or chicken broth.
  • Finish the dish: Add the meatballs to the mushroom sauce and toss them around making sure they're covered in the sauce. Cook for 2 more minutes until they heat through, then garnish with fresh parsley or dill. Serve over mashed potatoes, noodles or rice.

1 1/2-2 lbs ground beef 1 oz. envelope dry onion soup mix
1/2 cup water or 1/2 cup beef broth
1 -2 tablespoon Worcestershire sauce
1 egg
3/4 cup breadcrumbs
2 teaspoons garlic salt
about 1 cup water
2 (10 ounce) cans cream of mushroom soup

Steps:

  • In a large bowl mix together all the dry ingredients(Onion Soup mix, bread crumbs & garlic salt) then add in the wet ingredients(water or beef broth, Worcestershire sauce & egg) mix together then add in the ground beef and incorporate all the ingredients together mix well.
  • Now make meatballs about the size of your palm(maybe about 2 inches round) place all the meatballs in a large skillet and cook at medium high heat until cooked all the way through and browned on all sides.
  • Once your meatballs are completely cooked keep the heat at medium high and then add in your water. The water will deglaze the bottom of your pan then add in the 2 cans of Cream of mushroom soup and mix it in with the water stirring until becomes a gravy. Turn the heat down to medium low and cover the skillet and cook until gravy is heated through.
  • Serve with Mashed potatoes spoon the gravy over the meatballs and the potatoes! ENJOY =).

1/2 cup instant rice or 1/2 cup cooked rice
1/2 cup milk

0.5 (8 ounce) can water
1 (8 ounce) can milk

Steps:

  • Mix together the meatball ingredients (listed at the top) and form 2.5-3 inch meatballs. put them in an oven acceptable baking dish.
  • Pour the mushroom soup into a pan, use the soup can to measure out 1/2 can of water, and 1 can of milk.
  • Put the water and milk in the saucepan.
  • Stir these three ingredients over medium heat, until all the lumps are out, and the gravy is smooth.
  • Pour the gravy over the meatballs,
  • cover the dish with aluminum foil and cook the meatballs at 350 degrees for one hour (depending on your oven, you might want to break one open to assure its done)
  • Serve with mashed potatoes and steamed veggies!

November happens every year! Without even looking at the calender, I can feel the eleventh month in my bones. The pace intensifies as everyone scurries around frantically trying to cross off never ending to-do lists. Keeping sane is no mean feat, let alone feeding hungry mouths. With no time to spare and food creativity on the decline, soulful food is one way to remedy frazzled nerves. My solution? Creamy Swedish meatballs with meaty mushrooms. True story - Temporary respite can be found in a bowl of food. Meatballs were invented to feed families. The very word meatball rolls easily off the tongue and conjures up childhood memories of casual family suppers that in our home involved a scarlet-red sauce and long, slurpy strands of pasta. Meatballs and spaghetti originated from New York in the early 1920's, the creation of ingenious Italian immigrants. Like bread, it seems most countries have their own version this popular meaty dish. Favourites at our table include spicy tapas-style Spanish meatballs, these North African chermoula meatballs and of course, Italian Prosciutto meatballs in a rich tomato sauce. Adding to the blog's meatball repertoire is my latest compulsion, creamy Swedish meatballs. I can't understand why I've never ventured across Nordic boarders before and into the creamy depths of Sweden's famed meatball, known to locals as Köttbullar. The sauce is rich with sturdy flavourings that meld flawlessly together. One would think that with a Swedish recipe, the ingredient list would be weird and wonderful. Surprisingly, they're mostly everyday items that live in your kitchen. Lurking in the fridge you should have a stray jar of Dijon mustard, Worcestershire sauce and a pot of cream. That takes care of the sauce. Concerning the meatballs, you'll need some fresh parsley, mixed spices, egg and breadcrumbs. Nothing too taxing about this recipe! Traditionally Swedish meatballs call for pork, but I think we can mix it up here and go with beef mince. Although not conventional, I like to add something that resembles a vegetable and sautéed mushrooms are the perfect meaty partner. To finish, a drizzle of lemon enhanced extra virgin olive oil contrasts the velvety sauce and elevates the flavours to exceptional. So much soothing comfort in exchange for so little effort. Whip up some fluffy mashed potatoes or toss through twirls of tagliatelle pasta. This recipe is guaranteed to become a big favourite around the table. Just Amazeballs!!

olive oil, for frying
1 brown onion, finely diced
250g mushrooms, sliced
1/2 teaspoon oregano
500g lean beef mince
1/4 cup fresh breadcrumbs
1 egg
1 tablespoon fresh flat leaf parsley, chopped
1/2 teaspoon mixed spice (all spice)
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
freshly ground black pepper
1 tablespoon butter
1 tablespoon all-purpose flour
350ml chicken stock
1 tablespoon Worcestershire sauce
2 heaping teaspoons Dijon mustard
a squeeze of fresh lemon juice (about 1 tbls)
250ml cream (single or whipping cream - about 35% fat content)
a handful fresh flat leaf parsley, to finish

Steps:

  • In a large-based frying pan, sauté the onion until soft and translucent. Scrape into a mixing bowl and cool. In the same pan, cook the mushrooms on a high heat until all the liquid is evaporated. Season lightly with salt and oregano. Remove from the pan, cover and set aside. To make the meatballs, combine the mince, sautéed onion, breadcrumbs, egg, chopped parsley, spices, salt and pepper. Mix by hand until all the aromatics and breadcrumbs are evenly worked through. Roll into smallish balls. The mixture yields about 20 -25 meatballs. Heat 1 tablespoon olive oil in the same pan and cook the meatballs until browned on all sides. Add the meatballs to the cooked mushrooms. Add the butter to the remaining oils in the pan and heat until bubbling. Stir through the flour and cook for 2 minutes. Slowly add the hot chicken stock, whisking all the while to prevent lumps forming. Once all the stock is incorporated, add the Worcestershire sauce, Dijon mustard and lemon juice. Stir in the cream and bring slowly up to the boil. Return the meatballs to the pan and coat in the creamy sauce. Simmer for 4-5 minutes until the meatballs are cooked through and the sauce is thickened. Scatter over a handful of chopped fresh parsley and drizzle with Lemon enhanced olive oil. Serve with buttered tagliatelle pasta or garlic mashed potatoes.

1 lb meatballs, shaped and cooked
4 cups sliced fresh mushrooms
3 large garlic cloves, minced
3 tablespoons butter (can use more or less)
2 tablespoons cornstarch
2 cups half-and-half cream
2 cups frozen peas
2 tablespoons tomato ketchup
2 teaspoons Worcestershire sauce
salt & freshly ground black pepper
1 small orange, juice of
fresh grated parmesan cheese (optional)

Steps:

  • In a skillet fry mushrooms in butter over medium heat for 5-7 minutes or until well browned (adding in the garlic the last few minutes of cooking) remove from skillet, set aside.
  • In a bowl dissolve the cornstarch in a little of the half and half.
  • Add the cornstarch mixture to the skillet with the remaining light cream; whisk and cook, until mixture comes to a boil,and has thickened.
  • Add the remaining ingredients, meatballs and the mushrooms; return to a light boil, cover and simmer for 15-20 minutes.
  • Sprinkle to with Parmesan cheese if desired, or pass the cheese at the table.
