1/2 lb ground pork
3/4 cup breadcrumbs
2 garlic cloves, chopped
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon pepper
1 egg
1/2 cup cranberry sauce
2 cups cranberry sauce
3 tablespoons vinegar
2 tablespoons brown sugar
2 tablespoons prepared mustard
2 teaspoons Worcestershire sauce
1 drop Tabasco sauce

Steps:

  • Meatballs: Combine ingredients, shape into meatballs, bake at 400°F 10 to 12 minutes, turning once.
  • Sauce: Heat sauce ingredients.
  • Put meatballs in casserole. Pour sauce over meatballs. Bake at 350°F for 15 - 20 minutes.

2 large eggs, lightly beaten
1 cup cornflake crumbs
1/3 cup ketchup
2 tablespoons dried minced onion
2 tablespoons soy sauce
1 tablespoon dried parsley flakes
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds ground pork
SAUCE:
1 can (14 ounces) jellied cranberry sauce
1 cup ketchup
3 tablespoons brown sugar
1 tablespoon lemon juice

Steps:

  • Preheat oven to 350°. Mix first 8 ingredients. Add pork; mix lightly but thoroughly. Shape into 1-in. meatballs. Place on a greased rack in a 15x10x1-in. pan. Bake until a thermometer reads 160°, 20-25 minutes. Drain meatballs on paper towels. , In a large skillet, cook and stir sauce ingredients over medium heat until blended. Stir in meatballs; heat through.

2 pounds ground beef
1 cup bread crumbs
2 eggs, beaten
2 tablespoons soy sauce
¼ teaspoon ground black pepper
½ teaspoon garlic powder
⅓ cup ketchup
1 (16 ounce) can jellied cranberry sauce
1 (18 ounce) bottle barbecue sauce
2 tablespoons brown sugar
1 tablespoon lemon juice

Steps:

  • Preheat oven to 350 degrees F. (175 degrees C).
  • Mix together the hamburger, bread crumbs, eggs, soy sauce, pepper, garlic powder and ketchup. Form into small balls and bake for 30 minutes.
  • In a saucepan over low heat, combine the cranberry sauce, barbecue sauce, brown sugar and lemon juice. Simmer and stir until smooth. Add meat balls and simmer for I hour. Serve warm.

1 small green bell pepper, cut into chunks
1/2 small white onion, cut into chunks
1 small celery stalk, cut into chunks
1 clove garlic, smashed
1 tablespoon fresh rosemary leaves
1 tablespoon fresh thyme leaves
1 1/2 pounds ground turkey
3/4 cup panko
2 tablespoons mayonnaise
1 large egg
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter
2 jalapenos, stemmed and seeded, finely chopped
6 ounces fresh or frozen cranberries
1/4 cup light brown sugar
1 teaspoon orange zest plus the juice of 1 orange
Kosher salt and freshly ground black pepper

Steps:

  • Position an oven rack in the top third of the oven and preheat to broil.
  • Make the meatballs: Pulse the bell pepper, onion, celery, garlic, rosemary and thyme in a food processor or blender until finely chopped; transfer to a large bowl. Add the turkey, panko, mayonnaise, egg, paprika, cayenne, 2 teaspoons salt and a generous amount of black pepper and mix together using a rubber spatula until just combined.
  • Dampen your hands with water and shape the mixture into 26 meatballs, each about 1 1/2 inches in diameter (a 1-ounce ice cream scoop is helpful for portioning); arrange them on a rimmed baking sheet. Broil, rotating the sheet halfway through, until the meatballs are golden brown and firm, 9 to 10 minutes.
  • Meanwhile, make the cranberry glaze: Melt the butter in a large skillet over medium-high heat and add the jalapenos. Cook, stirring occasionally, until they start to soften, 3 to 4 minutes. Add the cranberries, sugar, orange zest and juice, 1/4 teaspoon salt and a few grinds black pepper and cook, stirring constantly, until the cranberries begin to soften, and the skin starts to crack, about 2 minutes. Mash the cranberries with a potato masher and stir until the liquid from the cranberries begins to simmer and thicken, 2 to 3 minutes.
  • Transfer the meatballs to the skillet and toss to coat with the cranberry glaze. Transfer to a platter and serve with toothpicks.

1/2 cup onion, finely chopped
1/2 cup breadcrumbs
1/2 teaspoon salt
1/8 teaspoon pepper

12 ounces chili sauce
8 ounces cranberry sauce, jelly style

Steps:

  • Heat oven to 375.
  • In large bowl, combine ground beef, onion, breadcrumbs, salt, pepper and eggs; blend well.
  • Shape into 1 inch meatballs; place in ungreased 15x10x1 inch baking pan.
  • Bake at 375 for 25 to 30 minutes our until meatballs are browned and no linger pink in center.
  • Meanwhile, in large saucepan, combine sauce ingredients; blend well.
  • Bring to a boil over medium heat.
  • Reduce heat to low; simmer 5 minutes, stirring occasionally.
  • Add meatballs to sauce; stir to coat.
  • Cook over medium heat about 5 minutes or until thoroughly heated, stirring occasionally.

I found this in my November/December 2009 Weight Watchers magazine, so for those of you counting points, one serving is 3 points. I'm anxious to hear if it is good if anyone tries it.

1 cup whole berry cranberry sauce
3 tablespoons seafood cocktail sauce or 3 tablespoons chili sauce
2 teaspoons chopped fresh sage
1 (12 ounce) package fully cooked fully cooked low-fat Italian-style turkey meatballs
1/4 teaspoon black pepper

Steps:

  • Whisk the cranberry sauce, cocktail sauce, and chopped sage in a medium saucepan; stir in the meatballs to coat. If making ahead, transfer to an airtight container. Cover and refrigerate up to 1 day.
  • Bring the meatball mixture to a boil over medium-high heat. Reduce the heat to low and simmer, stirring occasionally with a slotted spoon, until the sauce thickens and becomes a syrupy glaze, about 15 minutes.
  • Transfer the meatballs to a serving bowl; sprinkle with pepper.

398 ml whole berry cranberry sauce (1 Ocean Spray can)
2 tablespoons honey
2 tablespoons soy sauce
1 tablespoon sesame seeds (toasted)
1 1/2 teaspoons sesame oil
60 -80 frozen meatballs (small,thawed)

Steps:

  • Combine all ingredients except meatballs in a large saucepan.
  • Cook until hot.
  • Stir in meatballs.
  • Simmer uncovered for 25 minutes or until sauce has thickened slightly. Stir often.
  • Makes 60-80 Meatballs.
  • I did 45 meatballs in this instead of 60-80 because we like extra sauce. I served it over basmati rice with fresh veggies on the side.
