MEATBALL NOODLE ONION STOUP
An easy to throw together, satisfying soup with the taste of beef noodle and French onion. Serve in deep bowls with crusty bread for dipping.

Steps:
- Melt the butter in a large saucepan over medium heat. Stir in the onion and garlic, and cook until the onion is almost translucent. Add the mushrooms and the stewed tomatoes with liquid to the pan; use the back of a large spoon to break up tomatoes. Pour in the water; bring soup to a boil.
- Sprinkle in the dry soup mix; add the frozen meatballs. Bring back to a boil, and stir in the pasta. Cook at a low boil until the pasta is done, about 10 minutes.

SPAGHETTI AND MEATBALL "STOUP" (RACHAEL RAY)

Steps:
- Preheat a medium soup pot over medium heat; add olive oil, carrots, onions, celery, garlic and saute 5 minutes.
- Add tomato sauce, chicken stock and cover pot; turn up heat and bring to a fast boil; while soup comes cooks make meat balls.
- Mix ground meat with cheese, bread crumbs, egg and parsley; roll into 1 1/2 to 2 inch-balls.
- Remove lid from soup and SLIDE balls into soup; bring back to a boil then stir in spaghetti; reduce heat and simmer soup 10 minutes more, until pasta is tender and balls have cooked through; Stir in basil and remove'Stoup" from heat, serve soup with bread and cheese.

CHICKEN DUMPLING AND NOODLE STOUP
Steps:
- Bring a medium pot of water to a boil, salt it, and cook the pasta just shy of al dente-about 5 minutes. Drain and reserve.
- While the pasta works, preheat a large soup pot with the oil over medium-high heat. Add the sliced onion, red pepper flakes, garlic, salt, and pepper and cook, stirring frequently, for 4 to 5 minutes, until the onions are tender and golden. Add the chicken stock and bring it up to a boil, then turn down the heat to medium low and simmer while you make the chicken dumplings.
- In a mixing bowl, combine the ground chicken, basil, parsley, egg white, grated onion, lemon zest, grated cheese, and a little salt and pepper. Mix well. Using a serving spoon, scoop out a walnut-size spoonful of the chicken mixture, then use a second serving spoon to push the chicken mixture off the first spoon into the simmering stock. Repeat this with the rest of the chicken mixture, working as quickly as you can to get all the balls into the stock. Shake the pan in order to settle the chicken dumplings into the stock. Cover and cook the dumplings for 5 minutes. Add the tomatoes, pasta, and spinach to the soup and cook for 2 minutes more. Ladle the soup into serving bowls and top each bowl with a dollop of the pesto and more grated cheese.

CROCKED CHICKEN NOODLE STOUP
A crock pot cross between a stew and a soup. Will banish the dreary day blues. Add another can of chicken broth to make it soupier. Enjoy with homemade bread. YUM!

Steps:
- Heat skillet and melt butter over medium-high heat; add onion and celery and cook to soften.
- Combine all ingredients, except noodles and broccoli in crock pot.
- Cook on LOW for 5-6 hours or HIGH for 3-4. Turn to HIGH if on LOW setting.
- Add broccoli and noodles for last hour.
