Steps:
- For the crust: Put the frozen rolls on a baking sheet. Cover with a tea towel and let thaw and rise for 2 to 3 hours.
- For the filling: Add the oil to a large skillet and set it over medium heat. Cook the peppers and onion until soft, about 5 minutes. Add the red pepper flakes and garlic, then cook for another minute. Transfer to a bowl or plate and set aside.
- Put the same skillet over medium-high heat, add the beef and cook, breaking up any lumps. Add the chili powder, cumin and 3/4 teaspoon salt and cook until the meat is no longer pink, 5 to 7 minutes. Add the tomato paste and 1/4 cup water and stir until combined. Mix in the cooked vegetables. Transfer to a bowl and set aside to cool. When the meat is cool, add the cheese and parsley, then season with salt and pepper.
- Preheat the oven to 400 degrees F.
- To form: Roll out each dinner roll on a lightly floured surface into a 4-inch circle about 1/4 inch thick. Put 1 1/2 tablespoons of the meat mixture in the center of each circle. Brush around the outside of the circles with the egg wash and fold over the dough to form half-moon shapes. Press the edges together and crimp them with a fork. Put on a parchment-lined baking sheet and brush the tops with the egg wash.
- Bake until golden brown, 10 to 12 minutes.
GOOD OLD MEAT PIE
A great deep dish meat pie made with potatoes, carrots and peas in a rich gravy. Lamb chicken or pork can be used in place of beef. A great recipe for leftover meat!

- Preheat the oven to 425 degrees F (220 degrees C). On a lightly floured surface, roll the pie crust out into a 12 inch circle. Set aside.
- Melt margarine in a saucepan over medium heat. Add potato and onion, and cook until the onion is tender, but not brown. Sprinkle the flour over the mixture, and stir to blend. Season with oregano, black pepper and garlic powder. Pour in the beef broth, and add the peas, carrot and beef. Bring to a boil. Transfer the mixture to a 2 quart casserole dish, and place the pastry over the top. Cut slits for steam, and flute the edges.
- Place on a baking sheet, and bake for 25 to 30 minutes, or until crust is golden. Let stand 10 minutes before serving to thicken.

MEAT PIES WITH SPICY PORTUGUESE SAUCE
This traditional Portuguese recipe is courtesy of Emeril Lagasse. The sauce complements the meat pies very well, but could also be used on pasta or even as a pizza topping. It's a long recipe but really not that difficult. Read through the entire recipe first. Emeril wrote this to use as an appetizer, so there are 36 small meat pies. I suppose you could try to make the pies larger if you wanted to serve it as a main course. Enjoy!

- Meat Pies:.
- Place the veal, 1/4 cup of the bread crumbs, cilantro, parsley, buttermilk, 1 egg, garlic, salt and crushed red pepper flakes in a large bowl and mix quickly but thoroughly.
- Form the mixture into meatballs the size of a large walnut, about 2 tablespoons each.
- Beat the remaining egg with 2 tablespoons water and 1 teaspoon Creole seasoning (or Emeril's Essence) in a shallow bowl.
- Combine the flour and 1 teaspoon of Creole seasoning (or Essence) in another shallow bowl.
- Combine the remaining bread crumbs with the remaining 1 teaspoon of Creole seasoning (or Essence) in a thrid shallow bowl.
- Dip each meat pie first into the seasoned flour, then into the egg wash, letting the excess drip off, and finally into the bread crumbs, coating evenly.
- Flatten each ball slightly to form a patty and place on a baking sheet lined with wax paper.
- Cover tightly with plastic wrap and refrigerate until ready to cook. The pies may be made ahead of time and kept in the refrigerator for up to 5 hours.
- Make the Sauce:.
- Heat the olive oil in a saucepan over medium-high heat.
- Add the onions and garlic and cook, stirring, until soft, about 4 minutes.
- Add the anchovy fillets, olives and crushed red pepper flakes and cook, stirring often, until the anchovies dissolve, about 2 minutes.
- Add the tomatoes, tomato paste, and 1/4 cup water.
- Stir well and simmer, uncovered, until the sauce has thickened, about 20 minutes.
- Add the parsely and cilantro, and season with salt and pepper.
- Keep warm while you finish the meat pies.
- Finish the Meat Pies:.
- Add enough oil to come 1/2 inch up the sides of a large heavy skillet and heat over medium-high to high heat until very hot. In batches, fry the meat patties in the oil until deep golden brown, 3 to 4 minutes on each side.
- Using a slotted spatula, transfer to paper towels to drain.
- Serve hot with the sauce.

MEAT PIE- ROLL STYLE W/ SAUCE
My sister in law prepared this for me after I gave birth to my 2nd daughter. I have modified it a bit to my taste.It is basically a meat pie- but rolled up served with an optional tomato based sauce. Very economic and it hits the spot and looks nice too. Also tastes great with white sauce.

- In a large frying pan coated with oil, cook all of the grounded meats together until just done. Add diced onion, garlic and all herbs and seasonings. Cook until the onions are translucent and remove from the heat. In a large mixing bowl combine all dry ingredients and mix well. With a pastry cutter or a fork cut in the shortening until mixture resemble course meal. Add water a little at a time until a dough forms. Cut dough in half and roll out each half of dough on floured surface creating a long and equally wide oblong or oval shape. Spread meat mixture onto dough surface covering most of the surface except edges. Roll one end of the dough and meat to the other and seal the edges on all sides. Place seam down on a baking tray and bake for 30-40 mins at 350 until dough is golden brown.
- While baking the meat rolls, prepare the sauce. In a sauce pan saute on medium high heat your vegetables and seasonings in oil until halfway cooked through. Add spaghetti sauce and lower heat to medium low and bring mixture to a boil. Lower heat to low and simmer the sauce until the veggies are tender. At this point, depending on how many rolls you have made and how many people are eating, you can add 1-2 cups water to the sauce and season accordingly. Mix the 1/4 cup cold water to 2 tbs corn starch and add to bubbling sauce mix. Stir until thickened to your liking.
- To serve, slice rolls creating little swirled rounds and serve with sauce glazed over the top or sauce first and rolls placed on top. Enjoy!
