Authentic chile rellenos are not battered in flour or cornmeal. The only thing that they are dipped in is eggs. I know this because I have watched real mexican cooks make these in guadalajara mexico. They are a bit tiddious to make but I asure you that the outcome will be well worth it. I do not mind the work that goes into it becuase I enjoy the wonderful impression on my guests faces when they take a bite of this authentic dish. You should serve sauce over them as there really is not a chille relleno with out a sauce (you can look up multipurpose tomato sauce for my particular recipe). You can use toothpicks to help keep the chilles closed during frying but make sure to remove them after cooking. A rule of thumb that I use is that I use 1 egg as batter per chile, for example: 6 eggs for 6 chiles. Also make sure to drain fried chiles very well on a paper towel. When buying poblano peppers, try to find wide peppers. Usually these are easier to handle when frying. It is better to buy cheese that you can slice and not shredd as it is easier to stuff and it holds it shape better.

1 lb ground beef
1/2 cup chopped white onion
3 cloves diced garlic cloves
1 tablespoon chicken bouillon
6 poblano peppers (wide and long)
12 monterrey jack cheese slices (cut from block cheese about 2 in long and 1/2 in wide, basically the length and width of the top par)
6 eggs, seperated
oil (for deep frying, about half a bottle of oil)
salt
recipe for multipurpose tomato sauce
queso fresco, for crumbling on top

Steps:

  • On medium heat in a large frying pan, cook beef, onion and garlic. Add the chicken bullion and salt to taste. Drain of excess fat and set aside.
  • Meanwhile on a comal (or over open flame) roast chile until skin is charred and blistered, turning occasionally for even roasting. About 2 -3 minute on each side. Place the chiles in a plastic bag and cover with towel. Let rest for about 15 minute Once cooled, peel as much skin as possible without tearing the chile. Slice a small slit on side of chile and gently remove stem, membranes and seeds with your fingers. If too many seeds are left, try putting small opening of chile under soft running water for remaining seeds to wash out and dry with towel.
  • In a clean bowl and with clean beaters, beat egg whites until foamy peaks form. About 5-7 minute Set aside. In another bowl, beat egg yolks until thick and yellow, about 4-6 minute Set aside.
  • Fill large frying pan with oil to about 3/4 way up of pan. Heat on medium high heat. IMPORTANT to make sure oil is hot enough to cook before placing peppers. Test oil by placing tiny amount of egg white in oil and waiting to hear if it immidietly sizzles.
  • Assemlble your work station: Beginning with meat, then chiles, then cheese, then egg yolks, then egg whites and finnally ending at the hot oil.
  • Stuff chiles with meat first (do not overstuff) with about 2 table spoons of meat, depending on size of chiles. Then place 2 slices of cheese lenghwise in the chiles. Try to keep chile opening closed (you can secure with 2 toothpicks).
  • Place chile inside of bowl with yolk, gently lifting chile and supporting it under neath with both hands. Brush top side with yolk.
  • Gently dip yolk covered chile in egg white mixture (try to spoon egg white on top if not covered enough).
  • Gently slide chile into frying pan and let fry. While it is frying, with a wide slotted metal spoon, spoon some hot oil on top of chile. The egg whites will start to puff up. Fry for about 3 mins or until brown on that side. Gently flip with a spatula and fry the other side until brown.
  • Drain WELL on paper towl. Dabb top of chiles with paper towel to try to remove excess oil.
  • Pour tomato sauce over chile and crumble queso fresco on top.

You have options with this recipe. First, chiles. My pick is the poblano, traditional and easily obtainable in most supermarkets. You can use a regular green bell pepper. As for the meat, I used dove because I wanted to make this dish a hat tip to the Desert Southwest, where we were hunting doves. But you can use any meat whatsoever.

1 pound dove meat, (roughly chopped)
2 tablespoons lard or olive oil
1 cup white onion, (roughly chopped)
2 garlic cloves, (chopped)
1 teaspoon black pepper
1 teaspoon cinnamon
1/4 teaspoon cloves
1 cup tomato puree
1/4 cup chopped dates, (or golden raisins)
1/4 cup chopped, (or slivered almonds, toasted pine nuts)
Salt
3 to 5 chiles (serranos, jalapenos or other hot chiles)
1 cup chopped onion
2 garlic cloves
1 28 to 32-ounce can tomato puree
2 tablespoons lard or olive oil
Salt
6 to 8 big poblano peppers
1/3 pound cheese, (either queso para frier or shredded Monterey jack or somesuch)
1/2 cup flour
1 egg for every poblano, (separated)
1/2 teaspoon salt
Oil for frying

Steps:

  • Make the filling first. Put the dove meat and the onions and garlic in a food processor and pulse it a few times, just to get a kinda-sorta rough grind. You could also chop everything by hand.
  • Put the meat, onions and garlic into a frying pan with the lard and brown them over medium-high heat for 5 minutes or so. Add the tomato puree, spices and salt and bring to a simmer. Simmer for 10 minutes, then add the pine nuts and chopped dates. Cook until the filling becomes a cohesive mass, about 10 minutes. Turn off the heat.
  • Make the sauce. Buzz the chiles, onion and garlic in a blender, adding the sauce to combine. Heat the lard in a saute pan over medium-high heat until it's hot, then pour in the sauce. It will spatter, but stir it vigorously for a minute or two, then turn the heat down. Add salt to taste and turn the heat to its lowest setting.
  • Char the skins of the poblanos over a gas burner if you have one. This is the best method because it doesn't cook the peppers too much. If you don't have a gas range, use a grill or a broiler. When the skins are all blackened, put the peppers in a closed environment -- a bag, a bowl with a lid, etc. -- and let them sit for 20 minutes before wiping the skins off with your fingers. Try not to use water to do this, as it will rinse away some of the flavor of the chile.
  • Now make a slit in each chile from the top to about 1 inch from the bottom. Carefully remove the seeds (you may need a paring knife to cut the seed ball out) and flush the seeds out of the inside of the pepper with running water; yes, this saps some flavor, but it beats picking out every damn seed by hand.
  • To make the batter, beat the egg whites with the salt until they just begin to hold a peak. Beat in one egg yolk at a time, then add a tablespoon or two of flour. Set aside.
  • Get your oil going. You want it to reach 1 inch up the side of your pot, and you want it to hit 375°F. This will take a bit of time.
  • While the oil is heating, stuff your peppers. Lay some cheese into each pepper and then stuff the filling into them. Keep in mind you will need to reclose each pepper, so don't overfill.
  • Dust each pepper in the flour, then, when your oil is ready, coat with the batter. Lay a pepper or two in the hot oil seam side up. Fry until golden brown, about 3 minutes. Carefully turn and fry the seam side another 3 or 4 minutes. If you can't get all the peppers fried quickly, set the finished ones on paper towels in a baking sheet, and put the baking sheet in an oven set to "warm."
  • To finish, pour some sauce on everyone's plate and top with a relleno. Garnish with cilantro if you'd like.

5 red plum tomatoes, cored and coarsely chopped
1 garlic clove, minced
1/3 cup chopped white onion
1 tablespoon olive oil
Salt and freshly ground black pepper
1 1/2 cups Monterrey Jack cheese
1 tablespoon dried oregano
6 poblano chiles, charred, seeded, and deveined *see Cook's Note
3 egg whites, at room temperature
1 egg yolk, at room temperature
All-purpose flour, for dredging
Vegetable oil, for frying

Steps:

  • Sauce: Put the tomatoes, garlic and onion in a blender. Blend until smooth. In a medium saute pan, heat the oil over medium heat. Add the sauce and simmer for 5 minutes. Season with salt and pepper, to taste.
  • Chile rellenos: Mix the cheese and oregano in a small bowl. Cut a slit through 1 side of the charred chiles and fill each chile with 1/4 cup of the cheese mixture. Close with toothpicks to hold the filling in place. In a medium bowl, using an electric hand mixer, beat the egg whites on high speed until soft peaks form. Add the egg yolk and continue to beat for about 1 minute.
  • In a large heavy-bottomed saucepan, pour in enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 375 degrees F. (If you don't have a thermometer a cube of bread will brown in about 3 minutes.) Dredge the filled chiles in flour until fully covered. Shake off any excess flour, then dip the chiles into the egg mixture, until well coated. Fry until golden brown and drain on paper towels.
  • Arrange the chiles on a serving platter, spoon the sauce on top and serve.

2 pounds lean ground beef
1/2 cup chopped onion or 2 green onions, chopped

1 cup diced tomatoes

2 medium tomatoes, diced
1 green bell pepper, diced
1/2 large onion, chopped

12 poblano chiles

Steps:

  • For the filling: Heat the oil in a large skillet. Add the ground beef and cook until browned. Next add the onions and garlic; stir for 1 minute. Add the tomatoes, cumin and 1/2 teaspoon salt and black pepper. Cook, stirring constantly, until the filling is dry, 10 to 15 minutes. Set aside to cool.
  • For the salsa ranchero: Heat the oil in a skillet until hot. Add the tomatoes, bell peppers, onions and garlic. Cook until the onions are browned, about 2 minutes. Add the canned tomatoes and simmer until the sauce is lumpy, 10 to 15 minutes.
  • For the poblanos: Roast the poblanos over a gas flame, turning until blistered and slightly charred all over. Place in a heavy plastic bag and set aside for 10 to 20 minutes to steam. Scrape the skin off the poblanos. Carefully make a lengthwise slit in each poblano and remove the seeds and membranes; rinse and drain well, using paper towels to pat the poblanos dry.
  • Stuff the poblanos with the filling and top with salsa ranchero. Before serving, garnish with shredded cheese and cilantro.

This is a great traditional Mexican dish. It takes a little bit of time, but it is worth every minute! Provecho! Serve with a side of Spanish Rice.

4 fresh poblano chile peppers
½ pound lean ground beef
1 onion, chopped
1 clove garlic, chopped
salt and pepper to taste
3 eggs, separated
1 cup shredded mozzarella cheese
2 roma (plum) tomatoes, chopped
½ cup all-purpose flour
1 cup corn oil

Steps:

  • Place whole peppers over an open flame (gas burner) or under the broiler. Roast, turning frequently until evenly black and blistered. Remove from heat, place in a plastic bag, and let them sweat for a while. This will allow the skins to peel of easily.
  • While the peppers are sweating, place the ground beef in a skillet over medium-high heat. Cook, stirring to crumble, until evenly browned. When beef is fully cooked, add the onion, garlic and tomato, and cook for a few more minutes. Season to taste with salt and pepper.
  • Remove the peppers from the bag, and peel off the burnt skin. You may wish to wear protective gloves. Run peppers under cool running water to rinse away any burnt pieces. Make a small vertical slit in the side of the peppers, and remove the seeds and veins. Stuff each pepper halfway with the ground beef mixture, then fill the rest of the way with shredded cheese. Close the slits, and secure with toothpicks.
  • Whip egg whites in a large glass or metal bowl until thick and fluffy. Add the egg yolks, and whip for a minute to blend in.
  • Meanwhile, heat 1/4 inch of oil in a large heavy skillet over medium-high heat. Coat the stuffed peppers with a light dusting of flour, then dip them in the egg so they are fully covered. Carefully place in the hot oil, and fry on both sides until golden. Drain on paper towels, then serve on a large platter.

I love chili rellenos and with poblano chilies, they are super good! I hope you enjoy this classic recipe, using poblano chilies! This chile pepper is often mislabeled 'Pasilla', which is a different pepper entirely.It is one of the most popular chiles in Mexico and has won the appreciation of many a chef worldwide because of the superior flavor it has over regular bell peppers. They have a tough outer skin that usually requires roasting and peeling before use. These very large chile peppers are most popular in chiles rellenos recipes, but cooking with these as a substitute for bell peppers in any recipe will enhance the flavor.

8 -10 poblano chiles (about 7-inch )
3/4 lb grated mild cheddar cheese (about 3 cups)
1/2 cup all-purpose flour

4 large egg yolks, beaten
4 large egg whites, beaten until foamy
1/4 lb grated sharp cheddar cheese (about 1 cup)

Steps:

  • Roast the chiles:.
  • Roast the chilies by broiling three to five minutes on each side. The skin will begin to char and get black spots. Remove, cool a minute or two, then wrap in plastic wrap and let it sit five minutes. Remove the wrap and peel chilies.
  • Keep the broiler on.
  • Carefully cut a lengthwise slit into each chile and stuff with some cheddar cheese. Combine the flour, salt and pepper and dredge the chiles.
  • In a large saucepan, heat 1/2" of shortening till very hot.
  • Fold the egg yolks into the whites and working with 2 chiles at a time, dip the chiles into the egg batter and fry, turning occasionally, until golden brown, no more than a couple of minutes. With a slotted spoon transfer the chiles (careful--they are delicate) to paper towels to drain.
  • Arrange the chiles on a flameproof plate and sprinkle with sharp cheddar. Broil the chiles just long enough to melt the cheese.
  • Serve immediately, accompanied by your favorite salsa. Enjoy!

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place poblano peppers with cut sides down onto the prepared baking sheet.
  • Cook under the preheated broiler until poblano pepper skins have blackened and blistered, 5 to 8 minutes. Place blackened peppers into a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 10 minutes.
  • Heat a large skillet over medium-high heat. Add beef, chili powder, garlic, cumin, oregano, cayenne pepper, paprika, chipotle pepper, salt, and black pepper. Cook and stir until beef is no longer pink, about 4 minutes. Add onion; cook until slightly softened, about 2 minutes. THE PICADILLO
2 pounds boneless pork with some fat, cut into 1-inch cubes
1/2 white onion, sliced
2 garlic cloves
salt to taste
1/4 cup lard or vegetable oil
2/3 cup findely chopped white onion
3 garlic cloves, finely chopped
8 peppercorns
5 whole cloves
3 heaped tbps. raisins
2 tbps. blanched and slivered almonds
2 heaped tbps. cubed acitron or chopped candied fruit (dried pineapple)
1/14 pounds tomatoes roughly chopped
THE TOMATO BROTH
1 1/4 pounds tomatoes, roughly chopped
3 tbps. roughly chopped white onion
2 garlic cloves, roughly chopped
2 tbps. lard or vegetable oil
4 whole cloves
6 peppercorns
2 mexican bay leaves
3 sprigs fresh thyme, or 1/4 tsp. dried
1 inch cinnamon stick, broken into two pieces
3 cups reserved pork broth
salt to taste
THE CHILES
6 poblano chiles, charred and peeled
THE BATTER
Vegetable oil for frying
4 large eggs, separated
1/4 tsp. salt
1/3 about 1/3 cup all-purpose flour

Steps:

  • Put the meat into a large saucepan with the sliced onion, garlic, and salt and barely cover with water. Bring the meat to a simmer and continue cooking over low heat until the meat is tender-about 40 minutes. Leave the meat to cool in the broth. When cool, strain the meat, reserving the broth. First shred and then choop the meat to a medium texture-there should be about 3 cups. Skim the broth. Melt the lared in a large skillet and cook the chopped onion and garlic until translucent-about 2 minutes. Add the meat and let it cook until it begins to brown, about 8 minutes. Crush the spices roughly and add them, the the rest of the picadillo ingredients, except the tomatoes, to the meat mixture. Cook the mixture a few momnents longer. Blend the tomatoes briefly and add them to the mixture in the pan. Continue cooking the mixture over high heat for about 10 minutes, stiring it from time to time to avoid sticking. Add salt to taste. It should be moist but not juicy. TO PREPARE THE TOMATO BROTH: Blend the tomatoes with the onion and garlic until smooth. Melt the lard in a wide pan and fry the blended tomatoes over high heat for about 3 minutes, stirring to prevent sticking. Add the rest of the ingredients, except the broth and salt, and cook them over high heat for about 5 minutes, stirring. Add the pork broth and continue cooking the broth over medium heat for about 10 minutes. By that time it will be well seasoned and reduced somewhat-but still a broth rather than a thick sauce. Add salt as necessary. TO PREPARE THE CHILES: Make a slit in the side of each chile andcarefully remove the seeds and veins. Bea careful to leave the top of the chile, the part around the base of the stem, intact. Stuff each chili with about 1/2 cup of the picadillo until they are well filled out but the cut edges still come together. TO PREPARE THE BATTER: Meanwhile, beat the egg whites until they are firm, but not too dry. Add the salt and egg yolks one by one, beating well after each addition. Prepare one chile at a time: pat the chile completely dry (or batter will not adhere)and sprinkle them lightly with flour. Coat with batter. Fry in the hot oil, turning it from time to time, until the batter turns a deep golden color-about 2 minutes. Drain the chiles on paper toweling and place them in the tomato broth-it should come about halfway uup the chiles-to heat through over low heat. Serve immediately. NOTE: You can prepare the stuffing and the sauce the day before, and clean the chiles. But do not put the stuffing into the chiles until about 2 hours before cooking. If you do prepare the chiles 2 hours ahead, do not put them into the broth. Place them on a rimmed cookie sheet lined with several layters of paper toweling, and reheat in a 350 F over for about 20 minutes. This method has the added advantage that the paper absorbs quite a lot of the grease. Then place the chiles in the broth or pour broth over and serve with hot tortillas. i do not recommned freezing.
