BEEF TIPS AND TOTS
I'm going to show you this very old-school method of making beef tips, which, once made, can be used to top lots of things--but my favorite thing to top with tips is probably Tater Tots®. And if you're looking for new ways to prepare lean, cheap, tough cuts of beef, this is one of my all-time favorite methods. You can give this an upgrade by topping with diced red onion, grated Cheddar cheese, and freshly sliced green onions, or you can serve the beef tips over hot mashed potatoes instead of tots, if you like.

Steps:
- Slice beef into 3/4-inch strips; then slice these pieces, at an angle, into smaller "tips." Season beef with salt and pepper.
- Heat oil in a large skillet over high heat until shimmering. Transfer in beef, arranging in a single layer. Let the meat sear until browned, 3 to 5 minutes, before turning over and browning the other side.
- Reduce heat to medium and add tomato paste, garlic, and butter. Stir everything until the butter melts, and then stir in the flour. Cook and stir for 1 minute.
- Stir in broth. Raise heat to high and bring to a simmer. Reduce to low, cover, and cook until beef is starting to get tender, about 1 hour and 15 minutes.
- Meanwhile, preheat the oven to 425 degrees F (220 degrees C).
- Uncover, turn heat to medium, and simmer, stirring occasionally, until the sauce has thickened, and the meat is tender, about 30 minutes.
- While meat simmers, bake potato nuggets in the preheated oven until crispy and heated through, 20 to 25 minutes.
- Taste beef tips and adjust the seasoning. Serve immediately over hot potato nuggets.

This is my husband's favorite of my "One Pot Wonders". So simple to make and only one pan to wash!

Steps:
- In baking dish layer potatoes to cover bottom.
- Pop rings out of onions and layer on top of potato slices.
- Place meat on top of onion rings.
- Sprinkle with Mrs. Dash (or any other favorite spices).
- Place small pieces of butter on top of meat and potatoes.
- Place a small amount of water in bottom of dish (to keep potatoes from burning).
- Cover with tinfoil and bake 350* for an hour or until meat is desired doneness.
- (Also great with baby carrots added in).

GRANDMA'S MEAT AND TATER HOTDISH
Very good hotdish recipe from my late grandmother that can also be eaten as a meal with a salad.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain grease. Add onion and cook until soft and translucent, about 5 minutes.
- Meanwhile, combine condensed soup, sour cream, and green bean liquid in a small bowl. Set sauce aside.
- Add green beans to the cooked beef and onions; mix to combine and transfer to a casserole dish. Top with sliced cheese and cover with frozen potato nuggets. Pour sauce over top.
- Bake in the preheated oven potatoes are browned and sauce is bubbly, about 1 hour.

TACO TATERS
This quick dinner was inspired by many other posts while looking for easy, gluten-free meal idea for a large crowd. It got such rave reviews i had to post for future meal. I failed to take a picture though.

- Preheat oven to 400 degrees F (200 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add corn, salsa, processed cheese, cream cheese, and taco seasoning to ground beef and stir until combined.
- Spread beef mixture over bottom of 9x13-inch baking dish. Arrange potato nuggets over beef mixture, sprinkle black olives, jalapenos, and Cheddar cheese on top.
- Bake in preheated oven until potato nuggets are crisp and cheese is bubbly, about 25 minutes. Garnish with sour cream.

The kids (or grandkids) are gonna love this one! It's a very simple fun-to-prepare dish that the kids can help with. Sometimes I substitute with cream of onion soup instead of cream of mushroom, but both ways are tasty.

- Salt and pepper ground beef, add onion and spread in bottom of 9x13 inch casserole dish.
- Poke holes in the meat with finger, making sure each hole reaches bottom of dish.
- Insert one tater tot in each hole.
- Pour cream of mushroom soup evenly over top of meat and taters.
- Bake 45 mins-1 hr--.

Steps:
- Heat the oil in a pan and sauté the onion until it is brown.
- Add in the mince and cook until well browned.
- Drain off the liquid.
- Add the carrots and oatmeal, mix well and pour in enough water to just cover.
- Crumble in the stock cubes, season and stir.
- Cover the pan and simmer the mince for about 20 minutes.
- Once the mince is cooked thicken the mince with about 3 teaspoons of gravy powder or cornstarch mixed with a little cold water.
- Serve the mince with boiled potatoes.

- Brown beef in a large skillet over medium-high heat, breaking meat up with a wooden spoon if necessary. Once beef starts to brown add onions to the skillet. Cook for a few minutes until vegetables start to soften, but not brown. Add garlic and cook stirring for 1-2 minutes. Add wine and deglaze pan by scraping the bottom with spoon. Allow wine to reduce and evaporate by more than half.
- Meanwhile, place potatoes and bay leaves (if using) into a large sauce pan and cover with 2-3" of cold water. Add 1 tsp of salt and bring to a boil over high heat. Reduce heat to a strong simmer and cook for around 20-25 minutes until tender.
