COQUILLE OF SEAFOOD WITH MUSHROOMS IN MORNAY SAUCE (BUXTON INN)
This recipe is taken from the cookbook Great Cooking with Country Inn Chefs. I grew up in Granville and had this dish at the beautiful and historic Buxton Inn when I was only four years old, and I never forgot it. It's quite a classy meal, one that would work perfectly for a romantic or holiday dinner. You must serve it in scallop shells for the ultimate effect! I was so excited to find this recipe. Haven't made it yet, so if you beat me to it, let me know how it is! Cooking times are just a guess. (Scallop shells can be found in kitchen supply shops. Can be served as an appetizer or as a main dish.)

Steps:
- In a medium skillet, melt 2 tablespoons of butter and saute the mushrooms until tender and the liquid disappears.
- Set the mushrooms aside.
- In a medium saucepan, simmer the scallops, shrimp, sherry, salt, pepper, bay leaf, and scallions for 5 minutes in enough water to cover.
- Drain the liquid in a separate saucepan and cook it over higher heat, reducing it to 1 cup.
- Set it aside for making sauce.
- Add the crabmeat, pimiento, and mushrooms to the scallops and shrimp.
- Spoon about 2 ounces of the mixture into each shell.
- Place the shells in a shallow baking pan.
- Pour a little water in the pan to create a moisturizing steam around the shells.
- In the top of a double boiler, combine all of the sauce ingredients except the butter and flour.
- Bring the mixture just to a boil.
- Remove the pan from the heat and set it aside.
- Preheat the oven to 400 degrees.
- In a small saucepan, make a roux by cooking the butter and flour over medium heat for about 2 minutes, stirring with a wooden spoon.
- Add the sauce to the roux, stirring constantly until the sauce thickens.
- Pour the sauce evenly over the seafood, but don't allow the sauce to spill over the shell.
- Sprinkle with cheese and paprika.
- Bake the shells for 10 minutes or until the top is brown and bubbly.

SHRIMP-MUSHROOM MORNAY
This can also be made used using cubed chicken breast or lobster. Serve this creamy sauce over cooked pasta, this complete recipe may be doubled.

Steps:
- Melt butter in a medium saucepan; add in onions, garlic and dried thyme and saute for about 3 minutes or until softened.
- Add in sliced mushrooms and cook until until they release their moisture.
- Add in shrimp and cook until the shrimp is no longer pink; remove only the shrimp to a bowl (leave the onion/mushroom mixture in the saucepan).
- Reduce heat to medium-low and add in flour; whisk for 1 minute (you might need to add in a couple tablespoons more butter).
- Slowly add in broth, wine (if using) and whipping cream; cook over medium-low heat stirring or whisking constantly until bubbly and thickened (about 5 minutes).
- Season with seasoned salt or white salt, black pepper and hot sauce or cayenne (if using) to taste.
- Add the shrimp back into the sauce and then mix in the Parmesan cheese; simmer for 5 minutes over low heat.
- Serve over cooked pasta.

SHRIMP AND RICOTTA STUFFED JUMBO PASTA SHELLS
Found this in a local grocery store flyer. It was delicious and quite easy to make! Crab could be substituted for the shrimp, I think, and I might try that in future.

- Bring a large pot of salted water to boil. Cook the pasta shells as per the package directions. Drain, reserving 1/4 cup of the cooking liquid. Cool the pasta shells in cold water and drain well again. Set aside.
- Set 24 of the shrimp aside in a small bowl and refrigerate until needed. Coursely chop the remaining shrimp and place in a medium bowl. Mix in the ricotta, pesto, eggs, 1/2 cup mozzarella cheese, flour, salt, pepper, and nutmeg.
- Preheat the oven to 350°F Pour the jar of pasta sauce into a large, wide baking dish; stir in the reserved pasta cooking liquid. Spoon the ricotta/shrimp mixture into the pasta shells and set them on top of the pasta sauce. Set a whole shrimp on top of each shell. Sprinkle the shells with the 1 cup mozzarella cheese and the Parmesan cheese. Cover with foil and bake 30 minutes. Uncover and bake 15 minutes more, or until the tops are golden and the sauce is bubbling.
- Suggested serving size is 4 shells each.
STUFFED SHRIMP WITH GARLIC CREAM SAUCE

- To prepare the garlic cream sauce: Heat 3 tablespoons of oil with the butter in a medium skillet over medium heat. Add the onion, shallots, garlic, and cook, stirring frequently, until the onions are tender and translucent, about 7 minutes. Add the anchovy paste and cook until fragrant. Add the half-and-half and simmer over medium-low heat.
- In a small bowl, combine the cornstarch with an equal amount of water and mix well. Whisk 1 1/2 tablespoons of the cornstarch mixture into the sauce. Whisk the sauce as it returns to a simmer. Simmer for 1 to 2 minutes then check the consistency. Repeat the process if the sauce is too thin. Season the sauce with salt and pepper and keep warm over very low heat.
- To prepare the artichoke, shrimp, and stuffing: Put the artichoke in a medium saucepan, add about 2 inches of water and a little salt. Cover the pot and steam the artichoke over medium heat until a leaf pulls off easily, about 40 minutes. Allow the artichoke to cool then pull away the leaves and scrape the fibrous 'hair' from the heart. Slice the artichoke heart and reserve.
- Preheat the oven to 400 degrees F.
- Heat 2 tablespoons oil in a medium skillet over medium heat. Add the onion, garlic, and shallots. Cook, stirring frequently, until the onions are tender and translucent, about 7 minutes. Remove the pan from the heat and add the bread crumbs, half the parsley and season with salt and pepper. Moisten the stuffing with enough chicken stock so that it holds together. Set the stuffing aside.
- Butterfly the shrimp. Remove the veins then lay the shrimp flat, cut-side up. Spoon stuffing into each shrimp. Place the artichokes in the bottom of a greased baking dish. Re-form the shrimp and place them in a snug single layer over the artichokes. Drizzle the shrimp with the melted butter and a little olive oil and bake until they are firm and opaque, about 10 minutes.
- Arrange the shrimp and artichoke on appetizer plates then drizzle with garlic cream. Garnish with the remaining parsley and serve.

- In medium bowl, beat all crepe ingredients with wire whisk or hand beater until smooth. For each crepe, lightly butter 7- or 8-inch skillet; heat over medium heat until bubbly. Pour slightly less than 1/4 cup batter into skillet; rotate skillet until batter covers bottom. Cook until light brown; turn and cook other side until light brown. Stack crepes, placing waxed paper between each. Keep crepes covered to prevent them from drying out.
- In 2-quart saucepan, melt butter over medium heat. Cook mushrooms and 2 tablespoons of the onions in butter, stirring occasionally, until onions are tender. Stir in shrimp, crabmeat, half-and-half and cream cheese. Cook over medium heat, stirring constantly, until cheese is melted.
- Spoon about 1/4 cup seafood mixture down center of each crepe; roll up. Place in 11x7-inch (2-quart) glass baking dish. Sprinkle with Swiss cheese.
- Microwave uncovered on High 4 to 6 minutes or until cheese is melted and crepes are heated through. Sprinkle with remaining 2 tablespoons onions.

SHRIMP MORNAY IN SHELLS

- At least 1 1/2 hours or up to 24 hours before serving: Bake pastry shells according to package directions. If making ahead, cool, cover and store in a cool place.Meanwhile, prepare white sauce mixes according to package directions, using only a total of 2 1/2 cups milk and adding bouillon granules and hot pepper sauce. Remove from heat. Stir in Swiss cheese. Parmesan cheese and sherry. Cover and set aside.In a 5- to 6-quart Dutch oven over medium heat, saute mushrooms and green onions in butter for 3 to 4 minutes or until wilted. Add asparagus. Increase temperature to medium-high and, stirring occasionally, cook for 6 to 8 minutes or until asparagus is tender.Stir in shrimp and sauce. Reduce heat to low and cook for 5 minutes or until heated through, stirring occasionally (do not boil). If making ahead, cool, cover and refrigerate.About 15 minutes before serving: If made ahead, warm patty shells in a preheated 350° oven for 5 minutes and reheat shrimp mixture over low heat about 15 minutes or until heated through, stirring occasionally.
