1/2 cup achiote paste
2 tablespoons chopped chipotle chile pepper
1 ripe banana
1 cup orange juice
2 tablespoons kosher salt
10 large boneless chicken breasts

Steps:

  • Blend marinade ingredients in a food processor until the mixture is thick. Pour into a sealable plastic bag, add the chicken and marinate overnight in the refrigerator. Barbeque with marinade on chicken, being careful not to burn the chicken as it cooks. Watch closely. The finished chicken will have nice orange red color.

Flavorful and spicy, it's one of our favorite ways to fix chicken these days. It's especially handy when you mix it up the night before,and marinade overnight. I found this on the web somewhere, and have thanked the person who posted it each time we have it. I usually serve it with Black beans,yellow rice and a fruit salad with mango, strawberries and kiwi.

1/2 cup bitter orange juice (or 1/4 C orange juice C grapefruit juice)
1/4 cup grapefruit juice
3 -4 garlic cloves, chopped
1 -4 teaspoon minced habanero (or use jalapenos)
2 tablespoons cilantro, fresh, chopped
2 tablespoons anchiote oil (annato, or mix vegetable oil with 1 tsp paprika)
1 tablespoon red wine vinegar
1 tablespoon lime juice
2 teaspoons ground cumin
2 teaspoons dried oregano
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
1 1/2 lbs chicken breasts (I use boneless, skinless breasts cut into wide stips)

Steps:

  • Combine everything except the chicken and whisk until well mixed.
  • Add chicken and coat throughly. Cover and chill 2-4 hours or overnight.
  • Stir once in a while.
  • Grill over medium to hot oiled grill 5-7 min on each side until chicken.
  • is white in the center. Serve with beans and rice.

1 lb chicken thigh
1/2 teaspoon coarse sea salt
1/2 teaspoon coarse black pepper
2 celery ribs, finely chopped
1 teaspoon light margarine
1 1/2 cups green beans, washed and chopped
1 yellow squash, washed and chopped
1 teaspoon garlic powder
1 teaspoon chili powder
1/2 teaspoon cumin powder
1 red pepper, chopped
1 teaspoon Worcestershire sauce
2 cups quinoa (cooked)
1/2 cup cilantro, washed and chopped
1/2 cup water

Steps:

  • Place chicken , water, salt, pepper, margarine, and celery in a large skillet over medium heat.
  • Cook one side 8 minutes then add spices.
  • Turn chicken and add veggies.
  • Cover & cook 10 minutes. Veggies should be tender & chicken cooked through.
  • Add cooked quinoa and heat until all liquids are absorbed.
  • Spoon into individual plates and sprinkle with cilantro.

  • Place chicken drumsticks and thighs in a large bowl, and season with 1 teaspoon salt and ground pepper; set aside.
  • Cut 1 garlic head in half crosswise. Peel cloves from remaining garlic head, and set aside. Combine halved garlic head, 3 quarts water, cilantro bunch, spearmint bunch, scallions, 2 onion halves, 2 teaspoons black peppercorns, 2 teaspoons allspice, and 1 tablespoon salt in a large stockpot. Bring to a boil over medium-high. Reduce heat to medium-low, and simmer 20 minutes.
  • Add chicken to pot; return to a boil over high. Reduce heat to low, cover, and simmer, skimming off and discarding foam occasionally, until chicken is tender but not falling apart, about 30 minutes. Remove chicken pieces with a slotted spoon, and transfer to a large bowl; cover with plastic wrap until ready to use. Pour broth through a fine wire-mesh strainer into a bowl (you should have about 9 cups of broth); discard solids. Wipe stockpot clean, and return strained broth to pot; set aside.
  • Heat a large cast-iron skillet over medium-high 2 minutes. Reduce heat to medium; add cinnamon stick, remaining 1 teaspoon peppercorns, and remaining 1 teaspoon allspice. Cook, stirring constantly, until fragrant, about 15 seconds. Transfer to plate; let cool 5 minutes. Add pepitas and sesame seeds to skillet; cook, stirring constantly, until lightly toasted, about 40 seconds. Transfer to a plate; let cool 5 minutes. Process cinnamon mixture in a spice grinder until finely ground, about 15 seconds; transfer to a small bowl. Working in batches, add pepita mixture to spice grinder, and process until finely ground, about 15 seconds. Transfer to a separate small bowl.
