Maui chicken is a festive dish featuring succulent chicken breast, sweet red and orange peppers and mushrooms. This colorful dish is then simmered in a spicy ginger, garlic, and pineapple sauce. The combination is as delightful as the Maui sunset. Serve over white or brown rice.

4 skinless, boneless chicken breast halves - diced
2 tablespoons soy sauce
1 (8 ounce) can pineapple tidbits with juice
2 tablespoons olive oil
1 red bell pepper, diced
1 orange bell pepper, diced
4 crimini mushrooms, sliced
3 cloves garlic, minced
2 tablespoons fresh ginger root, minced
1 (8 ounce) can pineapple tidbits with juice
2 teaspoons black bean sauce
1 teaspoon crushed red pepper
salt and ground black pepper to taste

Steps:

  • Combine the chicken, soy sauce, and 1 can of pineapple tidbits with juice in a bowl. Allow chicken to marinate for 20 minutes. Remove the chicken from the marinade; strain the marinade in a colander, reserving the juice. Discard the pineapple.
  • Heat the olive oil in a large skillet over medium heat. Add the red bell pepper, orange bell pepper, mushrooms, garlic, and ginger. Cook and stir the vegetable mixture until the garlic is fragrant and the peppers begin to soften. Stir in the chicken and cook until the juices from the chicken run clear, about 15 minutes.
  • Pour in the reserved chicken marinade, 1 can of pineapple tidbits with juice, black bean sauce, and crushed red pepper; season with salt and pepper; simmer 5 minutes.

Number Of Ingredients 6

1 1/2 cups soy sauce, such as Kikkoman
1/2 cup packed golden brown sugar
2 Tbsp. finely chopped fresh ginger
2 to 3 large garlic cloves, crushed
2 tsp. sesame oil 8 (5 to 6 bone, 1/2" thick) strips of beef short rib (see Note)
Vegetable oil for the grill 2 to 3 green onions, thinly sliced

Steps:

  • Place the ribs in a sided dish just large enough to hold them in a slightly overlapping layer. Place remaining ingredients, except green onions, in a bowl, whisk to combine, and then pour over the ribs. Cover and marinate in the refrigerator overnight, turning occasionally. Preheat your grill to medium-high. Remove the ribs from the marinade; discard the marinade. Lightly oil the grill. Grill the ribs 4 to 5 minutes per side, until cooked through, nicely coloured, but still juicy in the middle. Sprinkle the ribs with green onions before serving.

I have not tried this recipe. I'm posting this recipe for safe keeping. I got this recipe from Mr. Food's Quick And Easy Side Dishes. I recommend serving this with roast pork or turkey.

1 1/3 cups water
8 ounces pineapple tidbits, undrained
1/4 cup firmly packed brown sugar
1/4 teaspoon ground cinnamon
2 tablespoons soy sauce
2 tablespoons butter
1/2 cup chopped green bell pepper (1 large)
1 1/3 cups instant rice, uncooked
10 maraschino cherries

Steps:

  • In a medium sized saucepan, combine all the ingredients except the rice and the marashchino cherries. Bring to a boil, then stir in the rice. Reduce the heat to low, cover, and simmer for 10 minutes, or until the liquid is aborbed. Garnish with the cherries.

  • Spam. Okay we’re starting with my beloved Hawaiian spam. If you had followed my social media posts during this trip, you’d know that I ate spam every single day during my week-long visit to Maui.
  • Loco Moco. A Loco Moco is another traditional Hawaiian comfort food that has humble roots. The Loco Moco is said to have been created at a restaurant on the Big Island in 1949 as a dish to feed hungry teens cheaply.
  • Poke. Poke is a Hawaiian cuisine that is perhaps most recognizable on the mainland. Over the last few years, poke shops serving delicious, diced raw fish have been popping up all over North America including in my hometown of Edmonton (where there are two poke places Ono Poke and Splash Poke).
  • Fresh Fish/Seafood. Speaking of fresh fish and seafood, eating any fish dish in Hawaii should taste incredible because the fish is RIGHT THERE!! We loved the grilled garlic shrimp rice plate from Ono Kau Kau in Lahaina, the breaded mahi mahi from Da Kitchen in Kihei, and the seared fish with coconut shrimp from Joey’s Kitchen K’aanapali.
  • Noodles (Saimin, Somen and Ike Mazemen) There are some excellent noodle dishes in Maui! Our very first meal after we landed was at a popular local comfort spot Sam Sato’s in Wailuku for their saimin dry noodles and plate lunches.
  • Pie, specifically from Leoda’s Pie Shop. Leoda’s Kitchen & Pie Shop is a beloved institution in Maui. It’s on the side of the road on your way in and out of Lahaina / K’aanapali so it can’t be missed.
  • Plate Lunch or Mixed Plate. In Hawaii, there’s a standard dish called a plate lunch or a mixed plate, which is essentially a plate with rice, some kind of meat/protein, and a salad.
  • Malasadas. During my Maui trip I learned about Malasadas, which are basically oval-shaped, deep-fried doughnut-like balls, dusted with sugar or cinnamon (typically), very popular in Hawaii but with roots in Portugal.
