1 ripe mango
2 kiwis
2 ripe passion fruits
1 large knob preserved ginger stem*
1 1/2 tablespoons ginger syrup*
Juice of 1/2 lime
Ice cream or cream, as needed
*Can be found at specialty Asian markets.

Steps:

  • Cut both cheeks from the mango stone (pit) and crosshatch the flesh, making sure your knife goes right down to the skin but not through it. Press the center of each mango skin with your fingers so that the straight-cut flesh side becomes rounded and the cubes will protrude.
  • Peel and quarter the kiwis and carefully carve out the central white core. Slice each quarter into 3 long pieces to get curved, elegant slithers of fruit. Combine the mango cubes and kiwi slices in a serving bowl with the scooped-out flesh of the passion fruits.
  • Finely dice the preserved ginger and scatter it over the fruit salad. Drizzle with the ginger syrup, and squeeze over the lime juice. Toss the ingredients together carefully. Serve the fruit on its own or with ice cream or cream, and enjoy the sweet rewards of bliss.

Every occasion I went to as a child, I can remember seeing this cake. I hated it back then. I guess I have acquired a taste for it as the years have gone by. I love it now. This is not overly sweet. This is very similar to date squares.

1 1/2 cups all-purpose flour
1 1/2 cups rolled oats
1 cup brown sugar, packed
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup butter, softened
2 cups dates, chopped, pitted
1/2 cup sugar
1 teaspoon lemon juice
3/4 cup boiling water

Steps:

  • Filling: In saucepan, cook dates, sugar, lemon juice and water over medium heat, stirring often, until the dates are soft, about 15 minutes.
  • Let cool.
  • In a bowl, combine flour, rolled oats, sugar, baking soda and salt; blend in butter until mixture is crumbly.
  • Pat half onto bottom of 9 inch square pan.
  • Spread filling evenly over the top.
  • Sprinkle with the remaining flour mixture, patting lightly.
  • Bake in a 350F oven for 30 to 35 minutes or until nicely browned.
  • Let cool; cut into squares.

2 cups oatmeal
2 cups flour
1 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup butter
1/2 lb dates, pitted
2/3 cup water
1/4 cup sugar
1 teaspoon lemon juice

Steps:

  • Base:.
  • In a large bowl, combine oatmeal, flour, brown sugar, baking powder, baking soda and salt.
  • Cut in butter until crumbly.
  • Spread 3/4 of the crumbs in a 9 x 13 inch cake pan.
  • Date Filling:.
  • Mix dates, water and sugar together in a saucepan.
  • Cook until thick, stirring frequently.
  • Remove from heat and add lemon juice.
  • Allow to cool before using.
  • Spread over the crumbs in the pan.
  • Sprinkle the remaining crumbs over top of the filling.
  • Bake at 350 degrees F.
  • for 20 minutes.

1 lb dates, chopped
1 1/2 cups water
2 tablespoons lemon juice
1 1/2 cups flour
1 1/2 cups rolled oats
1 cup brown sugar
1 teaspoon baking soda
1 cup butter or 1 cup margarine

Steps:

  • Date filling: Place water and dates in saucepan. Cover and cook on low heat for 15 minutes, stirring occasionally, until the filling is thickened and smooth. If the cooking mixture is too thick, add a little water.
  • Stir in the lemon juice. Set aside.

  • Mix flour, oats, brown sugar and baking soda.
  • Cut in butter until mixture is crumbly.
  • Press half of the crumbs into a greased 9 x 13 pan.
  • Top with Date filling mixture. Spread evenly with a spatula.
  • Top with remaining half of crumbs.
  • Bake 350 35 minutes til lightly browned.
  • Cut into 42 bars.
