MINUTE CHOCOLATE MUG CAKE
What's not to love about warm chocolate cake spiked with chocolate, coconut, and chocolate chips and topped with melting vanilla bean ice cream? This literally takes less than a minute to cook up and a couple minutes to prepare.

Steps:
- Whisk egg, sugar, salt, 2 tablespoons cocoa powder, butter, vegetable oil, and vanilla extract together in a bowl until smooth. Stir coconut, almonds, and chocolate chips into the mixture; whisk in milk.
- Place flour into a small bowl or measuring cup and stir baking powder into flour with a mini whisk or fork. Pour flour mixture over batter and whisk just until you can't see visible flour.
- Divide batter evenly between 2 coffee cups. Gently tap the cups on a work surface to eliminate air bubbles.
- Place cups into microwave oven, one at a time. Microwave each cup on High for 45 seconds. Nothing will happen in the first 30 seconds; in the last 10 to 15 seconds, batter will begin to rise in the cup. Cooked cake will collapse after microwaving. Remove from oven and let cool 2 to 3 minutes.
- Lightly dust each serving with confectioners' sugar and 1/8 teaspoon cocoa. Place each coffee cup onto a saucer and serve.

Steps:
- In a microwave-safe 2-cup measure, stir together a heaping 1/3 cup granulated sugar, 1/2 cup King Arthur Unbleached All-Purpose Flour, 1 teaspoon baking powder, 1/4 teaspoon salt, and 2 tablespoons unsweetened cocoa powder. Add 6 tablespoons (3 ounces) milk, and a teaspoon of vanilla. Stir till smooth.
- Mix 2 tablespoons brown sugar, 1 tablespoon granulated sugar, 1 tablespoon cocoa, and 3 tablespoons hot or cold coffee. Pour into the cup.
- Gently swirl it in; don't mix thoroughly.
- Cook in the microwave for 2 1/2 to 3 minutes, depending how powerful your microwave is. When done, it'll look set on top, and kind of mushy around the edges.
- Turn the cake onto a plate. It'll be layered with... well, let's call it sauce. It's actually semi-baked batter, but since there are no eggs in here, it's fine.

SIX-MINUTE CHOCOLATE CAKE
A Moosewood recipe. I usually make this without the glaze when the kids are requesting chocolate cake and they actually deserve a treat for dessert but I want something that doesn't require too much effort. And its great when you have run out of eggs!

Yield 1 9 inch round cake, 10-12 serving(s)
Number Of Ingredients 12
Steps:
- Preheat the oven to 375°F.
- Sift the flour, cocoa, baking soda, salt and sugar into an ungreased 8 inch square or 9 inch round baking tin.
- In a 2 cup measuring cup, measure and mix the oil, water or coffee and vanilla.
- Pour the liquid ingredients into the baking tin and mix the batter with a fork or small whisk.
- When the batter is smooth, add the vinegar and stir quickly. Pale swirls will occur where the vinegar and baking soda react. Stir just until the vinegar is even distributed throughout the batter.
- Bake for 25-30 minutes. Set aside the cake to cool.
- If you are making the glaze, reset the oven to 300°F.
- Melt the chocolate in small ovenproof bowl or heavy skillet in the oven for about 15 minutes. Stir the hot liquid and vanilla into the chocolate until smooth.
- Spoon the glaze over the cooled cake. Refrigerate the glazed cake for a minimum of 30 minutes before serving.

Steps:
- Preheat your oven to 350 degrees.
- Mix first 6 items.
- Melt other 4 and add.
- Pour in a 9x13 pan.
- Bake in a 350 oven for 38 minutes.
- That's it. You don't have to grease and flour the pan. You don't have to cream anything. It is so simple there should be a law against it. Just be sure it has cooked through into the middle of the top. It may take a few minutes more or less in your oven. In mine, it takes exactly 38 minutes.
- You can use this cake as the basis for Better than sex cake, or it will take any icing or frosting.

3-MINUTE MOLTEN DOUBLE CHOCOLATE MUG CAKE
Jessie Sheehan's easy 3-minute chocolate mug cake recipe is rich, tender, and moist, with a soft center reminiscent of a molten lava cake.
Provided by Jessie Sheehan
Time 3m
Yield Yield: 1 mug cake
Number Of Ingredients 11
Steps:
- Stir together the oil and sugar in a 12- or 14- ounce ceramic, microwave- safe mug, using a fork. Stir in the egg yolk and vanilla, and then the sour cream. Stir in the baking powder and salt, and then the flour and cocoa powder.
- Stir in the chocolate chips and microwave on high for 1 to 2 minutes, depending on your microwave (in my microwave, 1 ½ minutes is just about golden). The cake is done when it rises above the edge of the mug (or close to it) and its top looks glossy and set, but not wet.
- Let cool briefly- it will collapse-sorry, but true. The center will be more molten-like than cake-like, very soft, and very hot-be careful! Enjoy ASAP with vanilla ice cream.
