Toss well to coat the onions. Transfer the contents of the bowl into a vacuum sealer bag, arranging the onions in a single layer. Vacuum seal the bag and place it into the 85ºC water bath. Cover the water bath with aluminum foil to retain heat and minimize evaporation.
4. Immediately plunge the sous vide bag into an ice bath to chill completely. The cold water from the ice water bath will stop the cookin process.
