2 medium sweet potatoes
2 cloves garlic
1 cup vegetable or chicken broth
2 tbsp butter
2 tsp fresh sage
1/2 tsp sea salt
1/4 tsp black pepper

Steps:

  • Peel sweet potatoes and cut into 1/2-inch cubes. Place in a medium saucepan with whole garlic cloves and broth. Add water as needed to just cover the sweet potatoes.
  • Bring sweet potatoes to a boil. Reduce heat and simmer until sweet potatoes are tender, about 20 minutes.
  • Meanwhile, make the sage-infused brown butter. Finely chop sage. Add butter to a small skillet and heat over low heat, stirring, until butter is golden. If you listen carefully, the butter will stop crackling when it is browned. Add sage and stir, then turn off heat.
  • Drain sweet potatoes, reserving 1 cup of the cooking liquid. Add browned sage butter, salt and pepper. Use a potato ricer or masher to mash sweet potatoes until smooth, adding cooking liquid as needed until the desired consistency is reached.
  • Serve hot. Store leftovers in an airtight container in the refrigerator.

5 lbs sweet potatoes, scrubbed
1/2 cup orange juice
1/2 cup heavy cream
6 tablespoons butter
1/4 cup light brown sugar
1 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
kosher salt
black pepper
4 tablespoons butter
4 bosc pears, peeled, cored, cut into 8
1/4 cup light brown sugar
1 teaspoon freshly grated fresh ginger
1/4 teaspoon dried sage

Steps:

  • prepare potatoes.
  • bake in oven 375 F oven until soft-1 hour.
  • scoop out insideof potatoes when cooled.
  • mix with mixer.
  • add remaining ingredients until just combined.
  • transfer to large baking dish.
  • melt butter in skillet.
  • add pears, brown sugar,ginger and sage.
  • cook until pears are light brown on both sides.
  • pour over potatoes.
  • bake for 30 minutes.

1 1/2 pounds sweet potatoes (2 large), peeled and cut into 1/2-inch pieces
1/2 teaspoon salt
3 tablespoons unsalted butter, softened
2 teaspoons chopped fresh sage

Steps:

  • Cover sweet potatoes with water in a 2-quart heavy saucepan and add salt. Cook, covered, over moderately high heat until tender, 15 to 20 minutes. Reserve 1/4 cup cooking liquid, then drain sweet potatoes in a colander. Transfer sweet potatoes and reserved cooking liquid to a bowl and mash with a potato masher.
  • Mash together butter, sage, and salt and pepper to taste, then stir half of sage butter into sweet potatoes. Serve potatoes topped with remaining sage butter.

5 pounds Yukon gold potatoes
2 1/2 sticks (1 1/4 cups) salted butter, at room temperature
1 1/2 packages cream cheese (12 ounces total), at room temperature
1/2 cup half-and-half
1/2 cup heavy cream
Kosher salt and freshly ground black pepper
Milk, if needed, for thinning
Chopped fresh parsley, for garnish

Steps:

  • Peel the potatoes, rinse in cold water and cut into fourths. Place the potatoes in a large pot and cover with water. Bring to a boil and cook until fork-tender, 20 to 25 minutes.
  • Meanwhile, add the butter to a saucepan over medium heat. Allow the butter to brown, 2 to 3 minutes, being careful not to burn it. Swirl the pan as you go, stopping when the solids turn medium to deep golden brown.
  • Drain the potatoes, then return them to the pot. With the burner on low heat, mash the potatoes with a potato masher; the more steam that's released while you mash, the better. Mash for about 5 minutes. Turn off the burner.
  • Add the cream cheese, half-and-half, cream, some salt and pepper and three-quarters of the brown butter to the pot and stir to combine. If the mixture needs thinning, add some milk. Check the seasonings, adding salt and pepper to taste. Drizzle the remaining brown butter over the top. Sprinkle with fresh parsley.

2 pears, peeled and sliced
½ cup dry white wine
¼ cup water
3 sweet potatoes, peeled and cubed
1 cup evaporated milk
¼ teaspoon vanilla extract
¼ cup brown sugar
2 tablespoons butter
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • Place the pears, wine, and water in a small saucepan and bring to a boil over high heat. Turn heat to medium-low and simmer until pears are soft, about 5-10 minutes. Remove pears from wine and reserve.
  • Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to potatoes to steam dry for a minute or two.
  • Stir the reserved pears, evaporated milk, vanilla, brown sugar, butter, cinnamon, and nutmeg into the sweet potatoes and mash until smooth. Transfer to a serving dish and serve hot.

1 (15.25 ounce) can Del Monte® Sliced Pears in Heavy Syrup or Del Monte® Lite Sliced Pears, drained and chopped
2 tablespoons chopped fresh sage
1 pinch Salt and black pepper

Steps:

  • Preheat oven to 425 degrees F. Scrub sweet potatoes thoroughly and prick with a fork. Bake for 40 to 60 minutes or until tender.
  • Meanwhile, for browned butter, melt butter over medium-low heat in a large saucepan. Cook, swirling pan occasionally, for 10 to 12 minutes or until lightly browned and fragrant. Remove pan from heat.
  • Carefully halve potatoes and scoop out pulp. Mash to desired consistency in a large mixing bowl. Stir mashed potatoes, canned pears and sage into the browned butter in saucepan. Cook and stir until heated through. Season to taste with salt and pepper.
