MASHED PUMPKIN WITH BAY LEAVES

Mashed Pumpkin with Bay Leaves image

Sometimes I make this buttery pumpkin mash as a side dish instead of mashed potatoes. You can use any kind of winter squash or pumpkin.

Provided by wiebke

Categories     Side Dish     Vegetables     Squash

Time 1h10m

Yield 6

Number Of Ingredients 6

2 winter squash, halved lengthwise and seeded
1 tablespoon butter, melted
½ cup butter
7 fresh bay leaves
½ teaspoon salt, or to taste
1 tablespoon maple syrup, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place squash cut-side up on a baking sheet and brush with 1 tablespoon butter.
  • Bake in the preheated oven until squash flesh is soft and can easily be pierced with a fork, about 1 hour.
  • Meanwhile, combine 1/2 cup butter and bay leaves in a saucepan over medium heat until melted. Remove from heat and set aside for at least 10 minutes to allow bay leaf flavor to infuse butter.
  • Scrape the squash flesh from the skin into a bowl using a spoon. Remove bay leaves from butter; discard leaves. Pour butter over squash and mash everything with a fork. Season with salt. Stir in maple syrup.

MASHED POTATOES

Mashed Potatoes image

Tyler Florence's Mashed Potatoes recipe from Food Network is foolproof: Butter and cream guarantee richness, while the bay leaf and chives add herbal notes.

Provided by Tyler Florence

Categories     side-dish

Time 35m

Yield 6 to 8 servings

Number Of Ingredients 6

4 pounds golden creamer potatoes, peeled and cut into quarters
1 bay leaf
Kosher salt and freshly ground black pepper
2 cups heavy cream
3 tablespoons unsalted butter
2 tablespoons chopped chives

Steps:

  • Put the potatoes into a large pot, add the bay leaf, 2 tablespoons salt, and cover with cold water. Bring to a boil over medium-high heat and cook until the potatoes are tender, about 20 minutes. Drain them well and remove the bay leaf. Meanwhile, heat the cream and butter in a small saucepan. Put the potatoes through a ricer or food mill into a bowl. Add the hot cream and season with salt and pepper. Mix together with a spoon and add the chives.

MASHED PUMPKIN

Mashed Pumpkin image

Mashed pumpkin has a creamy texture and delicate flavor. It's a delicious alternative to mashed potatoes or sweet potatoes.

Provided by Vered DeLeeuw

Categories     Side Dish

Time 50m

Number Of Ingredients 6

1 small pumpkin (3 lb. whole, 2 lb. peeled and cleaned)
1/4 cup heavy cream
1/2 cup grated Parmesan ((not shredded))
2 teaspoons minced fresh garlic
2 teaspoons Diamond Crystal kosher salt (or 1 teaspoon fine salt)
1/4 teaspoon freshly ground black pepper

Steps:

  • If using the oven for cooking the pumpkin, preheat it to 425°F, set an oven rack to the lowest position, and line a rimmed baking sheet with parchment paper.
  • Wash and dry the pumpkin. Place it in the microwave and microwave it for one minute on each side to slightly soften.
  • Using a very sharp chef's knife and a back-and-forth sawing motion, cut a thin slice off the stem end. Place the pumpkin on this newly formed flat area and, again using a back-and-forth sawing motion, cut it in half.
  • Use a large metal spoon to scoop out the seeds and the pulp, saving the seeds and washing them to make roasted pumpkin seeds if you wish.

CREAMY MASHED PUMPKIN

Creamy Mashed Pumpkin image

I found this recipe from Kraft and the family loved this version of mashed pumpkin for a change. Potatoes are also wonderful done this way. It depends on the moisture in the cooked pumpkin as to how much cream you may need and of course I do prefer the good "ol" aussie Kraft cheddar for this recipe! :-)

  • To make the pasta, add flour and eggs into a food processor and combine until the mixture just starts to come together as a ball. Sprinkle a little flour onto your bench to prevent the pasta from sticking.
  • Remove from the bowl and begin to work the dough with your hands for around 2-3 minutes. It should become quite silky to the touch and bounce back a little when you push it with your finger. Cover with cling film and let rest for at least 20 minutes at room temperature.
  • Meanwhile, make the filling by adding the mashed pumpkin, feta, 1 garlic clove and basil into a bowl, season to taste. Combine thoroughly and set aside.
  • Unwrap pasta and cut in half. Put it through your pasta machine on the widest setting. Fold the pasta like a book and repeat this process 10 times. Then begin to reduce the setting and roll out your pasta.
