CHOCOLATE COOKIE CHEESECAKE DIP

One 8-ounce block cream cheese, at room temperature
1/4 cup mascarpone, at room temperature
3 tablespoons brown sugar
1 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
1 1/4 cups crushed crispy chocolate chip cookies, such as Tate's (from about 6 cookies)
Serving suggestions: pretzel crisps, pretzel rods, potato chips, shortbread or other sweet and salty items to dip

Steps:

  • Combine the cream cheese, mascarpone, brown sugar, vanilla and salt in a medium bowl. Mix together with a rubber spatula until smooth and combined. Add the crushed cookies and fold together. Refrigerate until ready to serve. (The dip is best if made at least 1 hour in advance.) Bring to room temperature for 30 minutes before serving.

This recipe is from my favourite Food Network Canada chef, Anna Olson. She says that the elderflower cordial can be found in the water section of the grocery store. If it is unavailable, subsitute with blackcurrant cordial or fresh raspberry sauce (or just increase the lemon juice) I have not tried this recipe, but I do hope you enjoy! Please note that the cook time and size of the puff pastry package are guestimates!

1 (8 ounce) package puff pastry
1 large egg (for egg wash)
2 tablespoons water (for egg wash)
1/2 cup sugar
1/2 cup whipping cream
1/2 cup mascarpone cheese
5 tablespoons sugar
1 lemon, juice and zest of
3 tablespoons elderflower cordial

Steps:

  • For the pastry dippers, preheat oven to 375.
  • On a lightly floured surface, roll out pastry to 1/4 inch thick.
  • Brush liberally with egg wash and sprinkle with sugar (don't be skimpy!).
  • Cut pastry into strips and twist tightly.
  • Place on parchment lined baking sheet (can weigh ends down with pie weights or dried beans if you wish).
  • Bake for 18-20 minutes or until golden brown.
  • For the mascarpone cream, whip cream (whipping) to soft peaks.
  • Add mascarpone and remaining ingredients and whip until it holds it shape when whisk is lifted.
  • Be careful not to overbeat! Due to the fat content in both the whipping cream and mascarpone, if you overbeat you will end up with sweet butter!
  • Enjoy!

I whipped these up to take to a friends house in less than 45 minutes today. They are so yummy and would make a perfect valentine dessert. They are even faster when you buy sugar cookies from the local bakery! (I do not know the exact size of the package of cookie dough, so it is estimated)

1 (12 ounce) package refrigerated sugar cookie dough (miniature cookie size)
8 ounces mascarpone cheese
1/2 cup confectioners' sugar
10 strawberries

Steps:

  • Prepare sugar cookies as directed on the package and cool.
  • Mix mascarpone with confectioner's sugar.
  • Place the cheese mixture in a pastry bag and pipe through a star tip onto the cookie.*.
  • Remove stem from strawberry and slice in half.
  • Place one half of a strawberry on each cookie. You can use a single raspberry or blackberry instead of strawberries if you prefer.
  • * You can carefully spoon the cheese mixture on the cookie if you don't have a pastry bag.
