AUNT MARY'S APPLE CAKE
My friend Robin's Aunt Mary, both of whose parents were born in Hungary, was a legendary cook. This is one of her cakes--a very moist and delightful cake.

Steps:
- Preheat over to 350 degrees F.
- Sprinkle apples with sugar and let stand.
- Mix beaten egg and butter.
- Sift in flour, soda, salt and cinnamon and mix very well.
- Fold into apples and make sure the apples are well and evenly coated.
- Mix in raisins and, if desired, nuts.
- Note: we use raisins which have been soaked in bourbon.
- Note 2: If using regular raisins, make sure you plump them in warm water or rum or the like, then drain before adding.
- Place in a buttered 8" x 8" square baking dish or in a buttered bundt pan and bake for about 50 minutes.
- Cool briefly on rack in pan; turn out of the pan and allow to cool to room temperature on a rack.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Make the topping by mixing together 1/4 cup brown sugar, 1/4 cup white sugar, chopped walnuts and 1/2 teaspoon cinnamon. Set aside.
- In large bowl, mix together 1 cup white sugar, 1/2 cup brown sugar, flour, salt, baking soda and cinnamon. Make a well in the center, and pour in the oil, eggs and sour milk. Beat until smooth, then fold in chopped apples.
- Pour batter into prepared pan. Sprinkle with topping mixture. Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Steps:
- Place the grated apples in a large mixing bowl. Break the eggs over the apples. Add the sugar, cinnamon, nutmeg, oil and nuts.
- Mix well with a fork. Sift in the flour, salt, baking soda and mix well with fork again.
- Bake at 350 degrees for 1 hour in a sheet pan.

RAW APPLE CAKE
A favorite at my house around the Thanksgiving and Christmas holidays, but we enjoy it anytime. One reviewer suggested the title was misleading because the apples are actually baked in the cake. This is what my mother called the cake and what I have always called it so I will let the recipe title stand as it is.

- Mix together eggs, oil and sugar in large bowl.
- Sift together flour, salt, soda and cinnamon.
- Add dry ingredients to eggs, oil and sugar.

- Spread apple fruit filling over the bottom of the 9 x 13 inch pan. Combine flour, sugar, baking soda and salt. Sprinkle over fruit filling. Blend beaten eggs, oil, vanilla and 1/2 cup walnuts.
- Pour over ingredients in the pan and stir with a fork only until well blended. Smooth batter evenly in the in the pan. Bake at 350 degrees for 40-50 minutes or until the cake springs back when lightly touched.
- To make cream topping: Combine sugar, sour cream and baking soda in sauce pan. Cook over medium heat stirring constantly until mixture comes to a boil. Remove from heat and pour over the top of the warm cake. Sprinkle with remaining walnuts, Serve warm or cold.
