MARY BERRY'S BLUEBERRY MUFFINS



Mary Berry's Blueberry Muffins image

Moist and delicious and stuffed with sweet berries!

Number Of Ingredients 8

1 3/4 cup plus 1 TBS (250g) self rising flour
1 teaspoon baking powder
3 1/2 TBS (50g) butter, at room temperature
6 1/2 TBS (75g) caster sugar (fine granulated sugar)
3/4 cup (175g) blueberries
the finely grated zest of one lemon
2 large free range eggs, beaten
9 fluid ounces (250ml) milk

Steps:

  • Preheat the oven to 400*F/200*C/ gas mark 6. Butter a muffin tin really well, or line with paper liners. (I used a six cup muffin tin and 2 ramekins.)
  • Measure the flour and baking powder into a bowl and give it a good stir. Drop in the butter and then rub it into the flour with your fingertips until the mixture resembles fine dry bread crumbs. Stir in the lemon zest, sugar and blueberries.
  • Mix the eggs and milk together and then add to the dry ingredients, stirring all together just until the mixture is combined. Its okay if the batter is a bit lumpy. In fact, this is desirable.
  • Spoon the batter into the muffin cups filling them almost to the top.
  • Bake for 20 to 25 minutes until well risen and golden brown. A toothpick inserted in the center should come out clean and they should spring back when lightly touched.
  • Leave to cool for a few minutes, then tip out onto a wire rack to cool for a bit longer.
  • Beautiful served warm with a nice hot cuppa!

Number Of Ingredients 18

100g unsalted butter, softened, plus 1 tbsp, melted, for the tin
140g golden caster sugar
2 large eggs
140g natural yogurt
1 tsp vanilla extract
1 tsp almond extract
2 tbsp milk
250g plain flour
2 tsp baking powder
1 tsp bicarbonate of soda
125g blueberries (or use frozen)
3 tbsp demerara sugar
¼ tsp ground cinnamon
3 tbsp flaked almonds , roughly chopped
2 tbsp ground almonds
3 tbsp plain flour
1 tbsp cold butter diced
12 tsp wild blueberry conserve (I used Felix wild blueberry jam, available from ocado.com)

Steps:

  • Heat oven to 200C/180C fan/gas 6 and line a 12-hole muffin tin with paper cases. Put all the topping ingredients, apart from the jam, in a bowl and rub together.
  • Beat the butter and caster sugar together until pale and fluffy. Add the eggs and beat in for 1 min, then mix in the yogurt, extracts and milk. Combine the flour, baking powder and bicarb in a bowl with ¼ tsp fine salt, then tip this into the wet ingredients and stir in. Finally, fold in the blueberries and divide the mixture between the muffin cases. Top each muffin with 1 tsp blueberry jam, then scatter over the crumble mixture.
  • Bake for 5 mins, then reduce oven to 180C/160C fan/gas 4 and bake for 15-18 mins more until risen and golden, and a cocktail stick inserted in comes out with just jam on it - no wet cake mixture.
  • Cool in the tin for 10 mins, then carefully lift out onto a wire rack to finish cooling. Will keep for up to four days in an airtight container - after a day or two, pop them in the microwave for 10-15 secs on High to freshen up.

140g golden caster sugar

140g natural yogurt
1 tsp vanilla extract
2 tbsp milk
250g plain flour
2 tsp baking powder
1 tsp bicarbonate of soda
125g pack blueberries (or use frozen)

Steps:

  • Heat oven to 200C/180C fan/gas 6 and line a 12-hole muffin tin with paper cases. Beat the butter and caster sugar together until pale and fluffy. Add the eggs and beat in for 1 min, then mix in the yogurt, vanilla extract and milk. Combine the flour, baking powder and bicarb in a bowl with ¼ tsp fine salt, then tip this into the wet ingredients and stir in. Finally, fold in the blueberries and divide the mixture between the muffin cases.
  • Bake for 5 mins, then reduce oven to 180C/160C fan/gas 4 and bake for 15-18 mins more until risen and golden, and a cocktail stick inserted into the centre comes out clean.

100g unsalted butter, softened
65g caster sugar
65g light brown sugar
2 large eggs, room temperature
125g Greek yogurt
1 tsp vanilla paste
5 tbsp milk
250g self-raising flour
1 tsp baking powder
200g blackberries (fresh or frozen), halved if large

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and line a 12-hole muffin tin with paper cases.
  • Beat the butter and sugars together for 5 mins until pale and fluffy. Add the eggs gradually and beat in until combined. Mix in the yogurt, vanilla and milk.
  • Fold in the flour, baking powder and a pinch of fine salt until you have a smooth batter. Finally, fold in 150g of the blackberries and fill the muffin cases ¾ full. Poke 2 blackberries (or 4 halves) into the top of each muffin, so that they are sticking out slightly. Bake for 8 mins, then reduce the oven to 180C/160C fan/gas 4 and bake for 20-25 mins more until risen and golden, and a cocktail stick inserted into the centre comes out clean.
