Number Of Ingredients 10

1 cup flour
1/2 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 medium egg
1 cup milk
2 teaspoon butter, melted
1 cup oil
6 ripe but firm saba bananas, peeled and sliced lengthwise into about 1/4 inch-thick pieces
sugar, for sprinkling

Steps:

  • Mix the flour, sugar, baking powder, salt, egg, milk and butter in a bowl. Then add the bananas and mix well. In a preheated pan with oil, using a ladle, scoop the batter with bananas into the oil and fry until golden brown. Remove from pan and drain on paper towels. Dust with sugar before serving.

½ cup milk
2 bananas, mashed
2 cups all-purpose flour
½ teaspoon salt
3 teaspoons baking powder
2 eggs, beaten
1 tablespoon margarine, melted
1 quart vegetable oil for frying
½ cup confectioners' sugar

Steps:

  • In a mixing bowl, combine the milk and bananas. Sift in the flour, salt, and baking powder. Thoroughly mix in the eggs and margarine.
  • Heat the oil in a large skillet to 365 degrees F (180 degrees C).
  • Carefully place spoonfuls of the mixture into the hot oil and fry until brown. Flip the fritter and continue to brown. Remove fritters from the oil and drain on paper towels. Dust the fritters with confectioners' sugar and serve while warm.

  • In a bowl, mix together all the dry ingredients. Pour in the milk and mix using a spatula or spoon just until combined. Never mind if there are a bit of small lumps.The batter will be thick.
  • Add the mashed bananas to the batter and mix using a spatula or wooden spoon until well combined .
  • Heat enough oil in a pan over medium heat. Scoop a ladleful of the mixture into the hot oil and flatten it a bit with a spatula. Fill the pan with 3-4 scoops at a time.
