1/2 cup steel cut oats, preferably McCann's
Skim milk, golden raisins, brown sugar, and cooked brown rice (optional)

Steps:

  • In a small saucepan, bring 2 cups water to a boil over medium-high heat; stir in oats. When oatmeal begins to thicken, reduce heat, and simmer, stirring occasionally, for 30 minutes.
  • Divide oatmeal between 2 bowls; stir in milk, raisins, brown sugar or brown rice, if desired. Serve.

1 1/2 cups quick-cooking (not instant) oatmeal
1/2 teaspoon kosher salt
1 banana, sliced
1/2 cup dried cherries
1/2 cup golden raisins
Pure maple syrup or brown sugar, for serving

Steps:

  • Heat the milk plus 2 cups of water in a medium saucepan until it starts to simmer. Add the oatmeal and salt, bring to a boil, then lower the heat and simmer for 4 to 5 minutes, stirring occasionally, until thickened. Off the heat, stir in the banana, cherries, and raisins. Place the lid on the pot and allow to sit for 2 minutes. Serve hot with maple syrup or brown sugar and extra milk.

3 slices white bread, crusts removed
1/2 cup milk
2 tablespoons olive oil
1 large yellow onion, finely chopped
1 celery rib, finely chopped
2 garlic cloves, minced
2 carrots, peeled and finely grated
1 lb ground sirloin
1/2 lb ground pork
2 large eggs
1/4 cup roughly chopped fresh parsley
2 tablespoons Dijon mustard
1 tablespoon coarse salt, plus more to taste
1/2 tablespoon fresh ground pepper, plus more to taste
1/2 lb thinly sliced smoked bacon
1 lb fingerling potato, scrubbed
4 leeks, white and light-green parts only, split in half lengthwise and rinsed well
1/2 cup light-brown sugar, packed
1 tablespoon Coleman's dry mustard (yellow)
1 teaspoon tomato paste

Steps:

  • Heat oven to 375 degrees. Cut the bread into 1 inch cubes and place in a small bowl. Pour the milk over the bread. Set aside for five minutes.
  • Heat the olive oil in large skillet over medium heat. Add onion, celery, and garlic. Cook until soft and translucent, about 3-5 minutes. Remove from heat. Let cool for five minutes.
  • Place carrots in a large mixing bowl. Add the milk and bread mixture, ground sirloin, ground pork, eggs, parsley, Dijon mustard, salt, and pepper. Add onion mixture. Combine well using your hands or a rubber scraper.
  • Place mixture in a large ungreased baking dish or roasting pan. Shape into a 5 by 12 inch loaf. Overlap bacon slices across the top, covering the meat. Place potatoes and leeks around the loaf. Season with salt and pepper as needed.
  • In a small bowl, combine the brown sugar, ground mustard, and 2 tablespoons of water. Stie in tomato paste making a glaze. Brush the meat loaf all over with the glaze.
  • Bake, brushing every fifteen minutes with glaze until juices run clear when loaf is pierced with a two-pronged fork and bacon is crisp, 1 to 1 and 1/4 hours. Let cool 10 minutes before slicing. Serve with potatoes and leeks on the side.

1 1/2 cups flour, sifted
1 teaspoon baking soda, sifted
1 cup butter, room temperature
3/4 cup white sugar
3/4 cup brown sugar
1 egg
1 teaspoon vanilla
1 cup dried cherries
1 cup chocolate, chopped
1 cup toffee pieces (Skor is good)
1 1/2 cups oatmeal

Steps:

  • Cream the butter, add the white and brown sugar.
  • Scrape down the bowl, add egg and vanilla.
  • Mix together the flour and the baking soda and add to the creamed mixture.
  • Add the oatmeal, cherries, chocolate, and toffee.
  • Using plastic wrap, divide into 3 logs and wrap.
  • Chill and slice 1/2" thick.
  • Bake on parchment (or wax papered) covered baking sheet at 350* for 8-10 mins.
  • Cool on rack.

¾ cup goji berries
¾ cup raisins
¾ cup dried cranberries
¼ cup brown sugar
¼ cup pumpkin seeds
2 teaspoons ground cinnamon

Steps:

  • Bring water to a boil in a large pot. Add oats, flaxseed meal, and chia seeds, whisking well after each addition to prevent clumps. Add goji berries, raisins, cranberries, brown sugar, pumpkin seeds, and cinnamon. Reduce heat and simmer, stirring occasionally, until oatmeal reaches desired consistency, 40 to 45 minutes.
