After many years of experimentation, I think these are the best biscotti I've ever made. They are nice and dry and crunchy the way real biscotti should be - they are not cookie-like like many you buy in the store these days. They are perfect for dipping, they have a long shelf-life, they are delicious and flavorful. My toddler LOVES them and even asks for them before bed with a cup of milk for dipping. Another great recipe from Alice Medrich.

Number Of Ingredients 9

2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/8 teaspoon salt
3 large eggs
2 tablespoons Amaretto (OR 2 tbs rum with 1 tsp. almond extract)
1 teaspoon vanilla
1 teaspoon anise extract (optional)
1 cup whole almond, toasted and chopped a few times, not too fine

Steps:

  • Preheat oven to 300°F.
  • Line 2 baking sheets with parchment.
  • Combine dry ingredients and set aside.
  • Whisk the eggs, amaretto (if using, or the almond extract and rum), vanilla and anise extracts in your mixer until well blended.
  • Add the dry ingredients and mix until combined.
  • Dough should be thick and sticky at this point--do not worry, and DO NOT add more flour!
  • Scrape the dough out onto a parchment lined sheet pan.
  • Flour your hands and shape into a long flat loaf about 10 inches long and 5 inches wide.
  • This will be kind of messy, so don't worry about how neat it is, just try to get it in that general shape.
  • Bake until firm and dry, about 50 minutes.
  • Remove from the oven and cool 10 minute.
  • Use a long serrated knife and slice into 1/2-inch wide slices.
  • Lay the slices cut side down on the baking sheet and bake another 20 minutes.
  • Turn the slices over and bake 20 minutes more, or until the cookies are a light golden brown.
  • Cool the biscotti on a rack; cool completely before storing.

The Best Almond Biscotti image

I don't know where my mother got this recipe but it produces the best biscotti I have ever had- and I am Italian so I have eaten A LOT of biscotti. Also, I will be publishing the chocolate version of this recipe which is also to die for. I've also made these with 1/4 cup dark chocolate chips and 2/4 cups hazelnuts in place of the almonds. For a sweeter variety, I have also mixed 1/2 cup almonds with 1/4 cup butterscotch chips. I have also made them plain without nuts when I've been low on ingredients. You can't mess up this recipe- it's fool-proof!.

2 cups all-purpose flour
3/4 cup slivered almonds
3/4 cup sugar
2 large eggs
1 teaspoon baking powder
1/4 cup butter, melted
1/4 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Adjust rack to center position and heat the oven to 350 degree. Line a cookie sheet with wax or parchment paper.
  • Place the flour, sugar, baking powder, salt and nuts in a large bowl and stir to combine. In a small bowl combine the eggs, butter and vanilla and whisk to fully combine.
  • Make a well in the center of the dry ingredients and pour in the egg mixture. Using a rubber spatula, mix to combine until a rough dough forms.
  • Dump the dough onto a work surface and knead a couple of times until the dough comes together, adding extra flour sparingly and only if necessary. Start to form the dough into a big, fat cigar and cut it in half. Form each half into a cigar about 1 inch thick, 2 inches wide and about 12 inches long. Place them onto the cookie sheet and lightly press with fingers to slightly flat cigars.
  • Bake for 25 minutes reversing the pan halfway through. The bars will be firm to the touch and just slightly browned. Remove from the oven and lower the temperature to 300 degrees. Let the cookies cool on the cookie sheet for 15 minutes.
  • Remove cookies to a cutting board using two spatulas. Using a serrated knife, slice the bars on an angle about 1/2 inch tick to form the biscotti. Lay them back on the cookie sheet with either cut side down and place back in oven for 15 minutes. Turn each cookie to expose the other cut side and place in oven for another 15 minutes. Let cool on a rack to room temperature. Place cookies in an airtight container.

Number Of Ingredients 10

1 cup sugar
1 stick unsalted butter, melted
3 tablespoons brandy
2 teaspoons pure almond extract
1 teaspoon pure vanilla extract
1 cup whole almonds with skin, lightly toasted , cooled, and coarsely chopped
3 large eggs
2 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt

Steps:

  • Stir together sugar, butter, brandy, and extracts in a large bowl, then stir in almonds and eggs. Stir in flour, baking powder, and salt until just combined.
  • Chill dough, covered, 30 minutes.
  • Preheat oven to 350°F with rack in middle.
  • Using moistened hands, halve dough and form 2 (16-by 2-inch) loaves on an ungreased large baking sheet.
  • Bake until pale golden, about 30 minutes. Carefully transfer loaves to a rack and cool 15 minutes.
  • Cut loaves into 3/4-inch slices with a serrated knife.
  • Arrange biscotti, with a cut side down, on a clean baking sheet and bake until golden, 20 to 25 minutes. Transfer to rack to cool completely.

This recipe was my first attempt at making biscotti and they came out pretty good! Excellent with a cup of coffee or glass of your favourite Italian wine.

1/2 cup butter, softened
1 1/2 cups granulated sugar
2 eggs
1/2 cup dry marsala wine
1 tablespoon orange zest
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/2 teaspoon salt
4 cups all-purpose flour
2 teaspoons baking powder
1 cup natural almonds, very coarsely chopped
1/2 cup slivered almonds

Steps:

  • Preheat the oven to 325 degrees F.
  • Line a large cookie sheet with parchment paper or foil coated with baking spray.
  • In a large bowl, stir the butter with the sugar.
  • Beat in the eggs, one at a time, then the Marsala, zest, lemon juice, vanilla and salt until just combined.
  • In another bowl, stir the flour with the baking powder.
  • Stir the flour mixture along with the chopped almonds into the egg mixture until combined; the dough will be sticky.
  • Divide the dough in half; dollop lengthwise on the lined baking sheet.
  • Wetting your hands with cold water, flatten the dough into long rectangular logs about 1/2 inch thick extending from one end of the sheet to the other. Logs should be at least 2 inches apart on the sheet.
  • Sprinkle the tops with slivered almonds; gently pat down the dough.
  • Bake in the centre of the oven until lightly golden on the edges and firm to the touch, about 30 minutes.
  • Slide the parchment or foil onto a cutting board.
  • Using a large sharp knife, cut crosswise into the slices about 1/2 inch thick.
  • Picking up the segments, stand the biscotti upright about 1/2 inch apart on the unlined cookie sheet.
  • Reduce the oven temperature to 300 degrees F; bake the biscotti in the centre of the oven for 35 to 40 minutes or until lightly golden and crisp.
  • Cool on a rack, then store in an airtight container for up to a month, or freeze.

1-1/4 cups sugar, divided
3 large eggs, room temperature
1 teaspoon anise extract
2 cups all-purpose flour

2 teaspoons 2% milk

Steps:

  • In a large bowl, cream butter and 1 cup sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in extract. Combine dry ingredients; gradually add to creamed mixture and mix well. Stir in almonds. , Line a baking sheet with foil and grease the foil. Divide dough in half; on the foil, shape each portion into a 12x3-in. rectangle. Brush with milk; sprinkle with remaining sugar. , Bake at 375° until golden brown and firm to the touch, 15-20 minutes. Lift foil with rectangles onto a wire rack; cool for 15 minutes. Reduce heat to 300°., Transfer rectangles to a cutting board; cut diagonally with a serrated knife into 1/2-in. slices. Place cut side down on ungreased baking sheets. , Bake for 10 minutes. Turn and bake until firm, 10 minutes longer. Remove to wire racks to cool. Store in an airtight container.

1/2 cup whole raw almonds with skins
1 1/4 cups all-purpose flour, plus more for dusting
2 teaspoons baking powder
1 1/4 teaspoons ground cinnamon
3/4 teaspoon coarse salt
2 large eggs
1/3 cup Marsala wine
1/2 cup finely chopped candied orange peel
4 ounces semisweet chocolate, chopped
3 tablespoons honey

Steps:

  • Preheat oven to 350 degrees. Toast almonds in oven on a rimmed baking sheet until fragrant and lightly toasted, about 12 minutes. Let cool; coarsely chop. Reduce oven temperature to 250 degrees.
  • Stir together flour, baking powder, cinnamon, and salt. Beat 1 egg with the wine; stir into flour mixture. Stir together almonds, orange peel, and chocolate; stir into flour mixture. Stir in honey.
  • Knead dough on a generously floured work surface just until it holds its shape. Divide dough into 2 pieces; pat each into a 10 1/2-by-1 1/2-by-1-inch rounded log. Refrigerate dough 15 minutes.
  • Cut each log into 3/4-inch-thick slices. Gently press edges of each slice to flatten. Lightly beat remaining egg. Place cookies, standing vertically, on a parchment-paper-lined baking sheet. Brush tops with beaten egg.
  • Bake 20 minutes. Raise oven temperature to 350 degrees; bake until cookies are deep golden brown, 10 to 12 minutes. Let cool on sheet on a wire rack.
