- Add some olive oil to a pan and sauté the mushrooms, cap side down until they begin to brown slightly. Flip them over and continue to sauté until water starts coming out. Remove and let stand in a bowl for 5 minutes.
- Mix all remaining ingredients for marinade and pour over (still warm) mushrooms. Allow to sit for at least an hour or even over night.
- Serve as a side dish, with charcuterie, on a bbq skewer, in a sandwich or salad. Save the marinade and use it to marinate meat the next day.

BEST MARINATED MUSHROOMS
Easy & the best tasting Marinated Mushrooms I have ever had! Found this recipe in Cook's Illustrated. Leave whole if mushrooms are small, halved if medium, quartered if large. Skillet size limits the yield of this recipe; if you would like to double it, cook the mushrooms in two separate batches but marinate them together. Thyme, parsley, or basil makes a good last-minute addition--use only one, however, not all three. Enjoy!!

- Heat 3 tablespoons oil, red pepper flakes, and 1/2 teaspoon salt in 12-inch skillet over medium-high heat until shimmering but not smoking.
- Add mushrooms and 2 tablespoons lemon juice; cook, stirring frequently, until mushrooms release moisture, moisture evaporates, and mushrooms have browned around edges, about 10 minutes.
- Spread mushrooms in single layer on large plate or rimmed baking sheet; cool to room temperature, about 20 minutes.
- When cooled, transfer mushrooms to medium bowl, leaving behind any juices.
- Stir garlic, shallot, and bell pepper into mushrooms.
- Cover with plastic wrap, and refrigerate at least 6 or up to 24 hours.
- Before serving, allow mushrooms to stand at room temperature about 1 hour.
- Stir in remaining 1 tablespoon olive oil, 1 tablespoon lemon juice, and thyme and adjust seasonings with salt and pepper just before serving.

MARINATED MUSHROOMS
Steps:
- Clean mushrooms and trim stems. Place into a small saucepan and cover with cold water. Bring to a boil, reduce heat and simmer until soft. Approximately 5 minutes.
- WHILE mushrooms are cooking, into a small bowl add: onion, garlic, parsley, oil and vinegar. Season with salt and pepper. Mix to combine.
- Strain mushrooms from water and toss in oil mixture.
- Transfer to a glass jar with lid. Place in refrigerator for minimum 2 hours to marinate.
- Bring to room temperature prior to serving.
GRILLED PORTOBELLO MUSHROOMS
Grilled portobello mushroom caps are a terrific vegetable-forward entree for your cookout. Serve them as a main course, or pop them into a bun as a sandwich.

- Clean portobello mushrooms with a damp cloth. Remove stems using your fingers or a knife. If you'd like, use a spoon to remove the dark brown gills from underneath the mushroom. They don't affect the flavor at all, but they do release dark brown liquid while they cook.
- In a mixing bowl, combine olive oil, red wine vinegar, minced garlic, dried parsley, dried basil, dried oregano, a generous pinch of salt, and a dash of pepper. (For the garlic, I like to use a Microplane zester, so that it's almost paste-like & easy to combine with the other ingredients.)
- Add the mushroom caps to the mixing bowl. Use your hands to make sure that each cap gets covered front & back with the marinade. If your mushroom caps are especially large, you can add more oil if needed to make sure it's all evenly dispersed.
- Put the bowl with mushrooms in the refrigerator, and let them soak in the marinade for 30 minutes to an hour. (If your refrigerator isn't large enough to hold a mixing bowl, the mushrooms can go into a freezer bag instead to marinate.)
- Bring a grill, fire pit with grate, or grill pan to a medium high heat. (For a gas grill, I aim for about 500 degrees.)
- Put the marinated mushroom caps on the grill, grate, or grill pan. Cook for about 4 minutes on each side & then flip. (Don't flip until the mushrooms have nice grill marks.) Remove from heat & serve.

- Prep the mushrooms: Snap the stem out of each Portobello mushroom cap. Rub the caps with a paper towel to remove any obvious dirt. Use a spoon to gently scrap the gills out of the underside of the cap.
- Make the marinade by whisking together balsamic vinegar, olive oil, Italian seasoning, soy sauce and salt in a medium bowl.
- Marinate the mushrooms: Place the mushrooms in a shallow baking dish or plastic bag. Pour in the marinade, making sure that the mushrooms are thoroughly coated. Marinate at room temp or in the fridge for 15-30 minutes.
- Grill method: Preheat the grill to 450 degrees F. I use this grill thermometer to double check the temp. Add the marinated mushroom caps directly to the grill or onto a grill topper. Grill for about 4 minutes on each side (close the grill while they are cooking), or until softened and lightly charred. Once cooked through, add a slice of cheese to the top of the mushroom cap. Close the grill for a minute to let the cheese melt.
