TRADITIONAL GYROS

I absolutely love being able to make my own gyros at home! You have to try them!

1 small onion, cut into chunks
1 pound ground lamb
1 pound ground beef
1 tablespoon minced garlic
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon dried marjoram
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon freshly ground black pepper
¼ teaspoon sea salt
boiling water as needed
12 tablespoons hummus
12 pita bread rounds
1 small head lettuce, shredded
1 large tomato, sliced
1 large red onion, sliced
6 ounces crumbled feta cheese
24 tablespoons tzatziki sauce

Steps:

  • Place onion in a food processor and blend until finely chopped. Transfer onion to a piece of cheese cloth and squeeze out the liquid. Place onion in a large bowl.
  • Mix lamb, beef, garlic, oregano, cumin, marjoram, thyme, rosemary, black pepper, and salt with the onion using your hands until well mixed. Cover bowl with plastic wrap and refrigerate until flavors blend, about 2 hours.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Place meat mixture in a food processor and pulse until finely chopped and tacky, about 1 minute. Pack meat mixture into a 7x4-inch loaf pan, ensuring there are no air pockets. Place loaf pan into a roasting pan and pour enough boiling water around the loaf pan to reach halfway up the sides.
  • Bake in the preheated oven until no longer pink in the center, 45 to 60 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Pour off any accumulated fat and cool slightly.
  • Thinly slice the gyro meat mixture.
  • Spread 1 tablespoon hummus onto each pita bread; top each with gyro meat mixture, lettuce, tomato, red onion, feta cheese, and tzatziki sauce.

MARJORAM BREAD

This was originally a recipe for "Easy French Bread" that I found on "Holy Cow! Vegan." I like experimenting with breads and making them my own. Let me say now, that this bread is no longer vegan.

1/2 teaspoon active dry yeast
1/2 cup warm water
1/2 teaspoon sugar
3 1/2 cups all-purpose flour
1 cup water
1/2 teaspoon salt
1 tablespoon rendered bacon fat or 1 tablespoon lard
1 teaspoon marjoram

Steps:

  • In a large bowl, mix the yeast, warm water, and sugar and leave sit 5 minutes until the mixture appears frothy.
  • Add in the flour, 1 cup water, salt and bacon fat or lard. Mix thoroughly with your hands until it all comes together.
  • Pour dough out onto a floured surface and knead for 5 minutes.
  • Sprinkle the marjoram evenly over the the dough and knead for another 10 minutes, until the dough is slightly sticky.
  • Pull the dough into a ball and place in a greased bowl, turning to coat the dough. Cover and let rise for 2 hours or until the dough is doubled.
  • Punch the dough down and divide into two equal pieces. If it feels too sticky to work with, sprinkle lightly with flour.
  • Shape each piece of dough into a log about 10 inches in length. Cover loosely with a kitchen towel and let rise for 1 and a half hours. About 20 minutes before the rise time is done, put the bottom part of broiler tray in the oven on the bottom rack and preheat to 450 degrees.
  • When the logs have risen, quickly cut the tops of the bread with a sharp knife and immediately put in the oven. Now quickly pour 1 cup of hot water into the broiler tray and quickly shut the oven door. Bake for about 25 minutes or until the crust is golden.
  • After the bread is done, cool on a cooling rack and enjoy. Bon Appétit!

2 teaspoons active dry yeast

Steps:

  • Place ingredients in the bread machine in the order suggested by the manufacture. Select Basic or White Bread setting. Start.
