14 ounces (396g) extra firm tofu, cut into bite size cubes1/3 cup (78ml) white wine vinegar1/3 cup (78ml) water1 tablespoon lemon juice2 tablespoons nutritional yeast1 tablespoon white miso2 teaspoons Braggs liquid aminos (or low sodium soy sauce)1 teaspoon onion powder1 teaspoon basil1 teaspoon oregano1/2 teaspoon thymecracked pepper

Steps:

  • Place the tofu cubes into a container that has an airtight lid.
  • Add the remaining ingredients into a small mixing bowl and whisk until the miso is completely dissolved.
  • Pour over the tofu.
  • Seal the lid onto the container and shake to cover all of the tofu.
  • Let marinate in the refrigerator overnight.
  • Good for up to a week in the refrigerator.

1 lb firm tofu, drained and pressed
4 tablespoons lemon juice (about 2 lemons)
1/4 cup white wine vinegar
2 tablespoons miso
1 teaspoon sea salt
3 garlic cloves, smashed but left whole

Steps:

  • Press the tofu between two plates, weighted down with some heavy cans or a cast iron pan, to drain the excess liquid out.
  • Slice into 1/2 inch slices.
  • Wisk together the ingredients for the marinade in a large container with a lid.
  • Add the tofu to the marinade and refrigerate for at least 24 hours, preferably 2-3 days.
  • Flip the container every few hours to ensure even coverage.
  • Tofu pieces can be patted dry, and crumbled over your favorite Greek-style salad or pizza.
