SAVORY GARLIC MARINATED STEAKS
This beautiful marinade adds an exquisite flavor to these already tender steaks. The final result will be so tender and juicy, it will melt in your mouth.

- In a medium bowl, mix the vinegar, soy sauce, garlic, honey, olive oil, ground black pepper, Worcestershire sauce, onion powder, salt, liquid smoke, and cayenne pepper.
- Place steaks in a shallow glass dish with the marinade, and turn to coat. For optimum flavor, rub the liquid into the meat. Cover, and marinate in the refrigerator for 1 to 2 days.
- Preheat grill for medium-high to high heat.
- Lightly oil the grill grate. Grill steaks 7 minutes per side, or to desired doneness. Discard leftover marinade.

STEAKHOUSE STEAKS
Steps:
- Preheat the oven to 400 degrees F.
- Heat a large, well-seasoned cast iron skillet over high heat until very hot, 5 to 7 minutes.
- Meanwhile, pat the steaks dry with a paper towel and brush them lightly with vegetable oil. Combine the fleur de sel and cracked pepper on a plate and roll the steaks in the mixture, pressing lightly to evenly coat all sides.
- When the skillet is ready, add the steaks and sear them evenly on all sides for about 2 minutes per side, for a total of 10 minutes.
- Top each steak with a tablespoon of butter, if using, and place the skillet in the oven. Cook the steaks until they reach 120 degrees F for rare or 125 degrees F for medium-rare on an instant-read thermometer. (To test the steaks, insert the thermometer sideways to be sure you're actually testing the middle of the steak.)
- Remove the steaks to a serving platter, cover tightly with aluminum foil and allow to rest at room temperature for 10 minutes. Serve hot with Roquefort Chive Sauce on the side.
- Bring the heavy cream to a boil in a small heavy-bottomed saucepan over medium-high heat. Cook at a low boil, stirring occasionally, until the mixture has become thick and creamy, about 20 minutes. Remove the pan from the heat, add the cheese, salt, pepper and chives and whisk rapidly until the cheese melts.
- Yield: 4 servings

- Heat a large heavy-bottomed skillet (preferably cast iron) over high 5 minutes. Generously season steaks with salt and pepper. Add 1/2 teaspoon butter to pan, then immediately top with one steak. Repeat with remaining 1/2 teaspoon butter and steak. Cook without moving steaks until a golden brown crust forms, 3 to 4 minutes. Turn and cook 2 minutes more for rare, or 3 to 4 minutes more for medium-rare. Transfer to a cutting board and let rest 5 minutes. Slice steaks against the grain; serve with sauce, if desired.
- Heat a 10- or 12-inch cast-iron skillet over high heat. Season the steaks liberally with salt and pepper. Seconds before adding a steak, drop 1/2 teaspoon of the butter into the pan and immediately top with the steak. Repeat with the remaining steak. Sear for 3 minutes without moving the steak (to form a crust). Turn and cook for 2 minutes for rare or 3 to 4 for medium rare. Remove the steaks from the pan and let them rest on a board or platter for a few minutes before serving.
EASY PAN FRIED SWEET POTATOES

STEAK AND SWEET POTATO SKILLET
Marinated steak bites sauteed with sweet potatoes and peppers. A delicious combination of savory with a little kick of sweetness.

- Marinate the steak bites for at least 30 minutes or up to a few days ahead of time. The longer, the better, but even 30 minutes makes such a difference. You can even just let the meat swim happily in the marinade while you cut up & cook your veggies.
- Preheat the oven to 425
- On a baking sheet, toss your veggies (excluding kale, if using) with olive oil and salt and pepper.
- Bake for 20 minutes, toss, then bake for 10 minutes more, remove from oven.
- Once the veggies have baked, add olive oil to a large cast iron pan, or skillet of choice over med/high heat until the olive oil starts to ripple.
- While this is happening, discard any leftover marinade and then place your steak bites in a single layer in the pan, and saute for about 5 minutes, browning all sides of the meat. Likely no more than 5 minutes is needed.
- Add the roasted veggies to the skillet and stir everything together and sautéing about 2 more minutes.
- Remove from heat and then add the chopped kale and stir.
- Serve and Enjoy!

- Dice onion very finely.
- Add all other ingredients.
- Stir well.
- Pour over chicken or steak.
- Cover and marinate in the refrigerator for at least 8 hours.
- Remove meat from marinade and cook on barbecue to desired doneness.
- Pour marinade into a small pot and bring to a boil.
- Reduce heat and simmer until fairly thick.
