2 tablespoons fresh lemon juice
2 tablespoons prepared horseradish
2 tablespoons seafood sauce or 2 tablespoons ketchup
1 tablespoon finely chopped chives
1 teaspoon hot pepper sauce (tobasco)
1 clove garlic, smashed
1 teaspoon Dijon mustard
salt
2 lbs medium shrimp, cooked,peeled and deveined

Steps:

  • Combine all ingredients except shrimp in large bowl.
  • Add shrimp and toss to coat.
  • Cover and refrigerate 4 to 6 hours or overnight.
  • Transfer shrimp mixture to serving bowl and serve with toothpicks.

Broiled Shrimp Appetizer image

Allow 3 to 4 of the large shrimp per person. If only the smaller are available, you will need about 6 per person.

Yield Serves 5 as an appetizer

Number Of Ingredients 6

20 large shrimp
1 cup olive oil
juice of 3 lemons
1/4 cup soy sauce
1/4 cup finely chopped parsley
3 tablespoons of fresh or dried tarragon

Steps:

  • With sharp scissors cut down the back of each shrimp shell and remove the black vein but do not remove the shell. Wash the shrimp thoroughly and place them in a large bowl. Over them pour olive oil, the lemon juice, soy sauce, parsley and tarragon. Let the shrimp stand in this mixture for 2 hours, tossing them around now and then so that they will be equally marinated.
  • When you are ready to cook them, arrange them in basket grills and cook over hot coals for 5 to 6 minutes, turning twice. They should be tender and moist with lightly charred shells. Have finger bowls and pass plenty of paper napkins.

2 pounds jumbo shrimp, peeled and deveined
⅔ cup olive oil
⅔ cup Italian-style salad dressing
1 head garlic, crushed and peeled
1 large jalapeno pepper, diced
coarse salt to taste

Steps:

  • Bring a 6-quart pot of water to a boil; cook shrimp until bright pink and cooked through, 2 to 2 1/2 minutes. Transfer shrimp using a slotted spoon to a bowl of ice water to cool; drain and pat shrimp dry. Place shrimp in a large resealable bag.
  • Mix olive oil, salad dressing, garlic, and jalapeno pepper together in a glass or plastic bowl; pour marinade into bag of shrimp, coat shrimp with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 20 minutes to 1 hour.
  • Line a baking sheet with aluminum foil and spread a thin layer of salt over foil.
  • Preheat the oven's broiler.
  • Remove shrimp, 1 at a time, from marinade and place on the salted baking sheet. Discard unused marinade.
  • Place baking sheet on rack furthest away from the broiler. Broil in the preheated oven until shrimp begin to brown and peel back, 7 to 10 minutes. Turn off broiler and crack oven door open for 3 minutes before removing shrimp from oven.

This was a recipe that was submitted to Bon Appetite magazine by an Air Force Colonel many years ago. I love broiled shrimp and this is great. I prefer broiling in one large pan. He recommended serving this with French, Italian or sourdough bread to mop up the sauce.

3 lbs medium shrimp
1 cup olive oil
1 cup dry sherry
12 garlic cloves, crushed
2 tablespoons mixed fines herbes
salt and pepper (to taste)

Steps:

  • Shell and devein shrimp.
  • Make a marinade with the remaining ingredients.
  • Place shrimp and marinade in a large zip-lock gallon bag. Marinate the shrimp for at least 4 hours, turning occasionally.
  • Divide the shrimp and marinade into 6 individual earthenware dishes, or spread them on a shallow broiling pan.
  • Broil the shrimp until they are lightly browned on both sides, approximately 5-6 minutes on each side.
