Every January, we host a family get-together to watch "the big game" on TV. I'm not much of a football fan, but I do enjoy that annual opportunity to try out new recipes. These tasty finger sandwiches scored a "touchdown" with everyone who tried them! If you don't want to miss a play, you can prepare this appetizer ahead and heat it up at halftime.

- In a medium bowl, combine the soy, rice wine vinegar, chili sauce, ginger, garlic, scallions and orange zest. Place the pork in a large container or bowl and pour the marinade over the pork. Cover with plastic wrap, and let sit for 2 hours at room temperature, or overnight in the refrigerator.
- Remove the pork from the container, put the marinade in a small saucepan and bring it to a boil over medium heat. Remove from the heat and reserve it for drizzling over the pork when serving. *WARNING: This liquid MUST be brought to a boil to kill any bacteria from raw meat juices.
- Preheat the grill to medium-high heat.

- Place the tenderloins in a large ziplock bag and cover with the BBQ Sauce. Refrigerate for 4 hours or overnight.
- When ready to cook, set the tenderloins out at room temperature for 30-minutes.
- Prepare the grill. Light all burners on high for 10 minutes. Leave the primary burner on high and turn the others off. Clean the cooking grates with a grill brush. Using tongs, lightly oil the grates with a clean paper towel dipped in vegetable oil.
- Remove the pork from the sauce and place on the hot side of the grill. Season with salt and pepper. Cover the grill and cook, turning occasionally, until all sides are charred. Use any sauce from the ziplock bag to baste the pork when turning. Discard any remaining sauce after cooking the pork.

- Place pork tenderloin on a plate and pat dry. Combine your Dry Rub ingredients in a small bowl. Rub all over pork tenderloin ensuring you get into every nook and cranny. If you have extra dry rub simply save for another use.
- Combine your Marinade ingredients in a small bowl; whisk to combine. Place pork tenderloin in a glass container or a gallon-sized silicone bag. Pour marinade over top and coat the pork tenderloin all over. Pressing out as much air as possible, seal the bag and place in the refrigerator for 30 minutes. (You can also prep this ahead of time and marinate overnight in the refrigerator).
- Ensure grill grates are clean and bring grill to medium-high heat (350-450 degrees F). Remove pork tenderloin from marinade and reserve about 1/4 cup of the marinade (put it in a little bowl) to be used to baste the pork tenderloin as it grills.
- Place pork tenderloin on grill over direct heat. Close the lid and let the pork tenderloin sear for 3 minutes.
- Open the grill and turn the pork tenderloin 90 degrees and then brush the seared side with a little marinade. Close the lid and let it sear for another 3-4 minutes. Then open and turn it 90 degrees again and brush with the marinade. Continue to do this every 3-4 minutes until the internal temperature reaches 140-145 degrees F at the thickest point.
- If the marinade browns too much you can turn down the heat a bit or move the pork tenderloin so it is on the outside edge of the fire.
- Once the internal temperature reaches 140-145 degrees F, remove the pork tenderloin from the grill and place on a plate. Let rest until the internal temp rises to 145 degrees F, but as least 5 minutes.
- Slice and serve - we love this grilled broccoli and grilled corn in the husk!

- Place pork tenderloin(s) into gallon sized freezer bag (if freezing) squeeze our air, seal tightly and lay flat in freezer.

- Trim the tenderloins of all fat and silverskin. Place them in a shallow baking dish large enough to hold them without crowding.

- 1. Sprinkle tenderloins with meat tenderizer on both sides. Sprinkle cumin and chili powder on the top side of each tenderloin. Sprinkle 2 cloves of minced garlic on the top side of each loin and slightly press into meat. Allow to rest at room temperature for about 30 minutes.
- 2. In a food processor, add chopped green onions, chopped jalapeno (seeds and all), and cilantro. Pulse until minced and blended. Add mixture to a large Ziploc bag.
- 3. Squeeze the juice from the lime and orange into the Ziploc bag. Add tequila, then add the seasoned tenderloins.
- 4. Squeeze all of the air out of the bag and seal. Squish the tenderloins around until well coated with the marinade mixture.
- 5. Place bag in refrigerator and chill for at least 2 hours, turning a couple of times.
- 6. Grill temperatures and times will vary from grill to grill and from gas to charcoal. We use charcoal with hickory wood for the added flavor. Place the tenderloins over the hottest part of the fire and pour the excess marinade, carefully over them. Sear all sides to seal in the juices. Then, move the loins out to medium heat and finish grilling, turning frequently.
- 7. Once the tenderloins are cooked through, remove them to a platter and let them rest for 5 minutes. Then slice into medallions. Serve and enjoy.

- With paper towels, pat the pork tenderloins to absorb as much moisture as possible.
- In a small bowl combine all of the BBQ rub ingredients and stir to combine.
- Smear the pork tenderloins with the BBQ rub and spread out until evenly and fully covered - a nice thick layer.
- Optional step - let the pork tenderloins marinate for 30 minutes to 8 hours.
- Preheat grill to high heat, 450℉. Once preheated, place the pork tenderloins on the grill and cook for 2 minutes on each side. - Serve topped with Avocado Green Sauce and your favorite sides.

- Trim off any excess fat on the tenderloin.
- Prepare souvlaki marinade ingredients. Half two whole lemons, 2 TBSP of Souvlaki Seasoning and 3 TBSP of Olive Oil.
- Put the tenderloin, seasoning and oil in a Ziploc bag.
- Squeeze the lemon juice from the fresh lemons into the ziploc bag.
- Close the ziploc bag and mix the marinade all around the tenderloins. Make sure they are mixed well. Refrigerate for 2-4 hours.
- Preheat your grill to 450F (I'm using a Camp Chef Pellet Grill) and once to temp, add the tenderloin.
- Roll the tenderloin 90 degrees every couple minutes until the tenderloin gets to 145-150F. Then remove.
- Quickly wrap in foil and let rest for 8-10 minutes. Then cut to whatever size you please and serve. Tender, juicy and delicious.
