ASIAN MARINATED EGGPLANT

Number Of Ingredients 7

1/4 cup tamari
2 tablespoons loosely packed cilantro leaves
1 tablespoon rice-wine vinegar
1 teaspoon toasted sesame oil
1 1/2 medium-size cloves garlic, smashed and peeled
3/8 ounce peeled fresh ginger (a 1-by- 1/4-inch piece), cut crosswise into 1/4-inch slices
4 medium-size Chinese eggplants (2 ounces each)

Steps:

  • Combine all ingredients, except eggplants, in a blender. Process until smooth.
  • Prick the eggplants several times with a fork and pull off the leaves. Cut in half lengthwise. On the open side of each half, make three deep diagonal slashes in each direction. Place eggplants skin side down in a 13-by-9-by-2-inch oval dish.
  • Spoon 1 1/2 teaspoons of the marinade over each eggplant half. Rub the marinade into the flesh so that it runs into the cuts. Turn eggplants skin side up. Pour remaining marinade into dish. Let stand for 45 minutes.
  • Turn eggplants skin side down. Cover tightly with microwave plastic wrap. Cook at 100 percent power in a high-power oven for 10 minutes. Prick plastic to release steam.
  • Remove from oven and uncover. Spoon sauce over eggplants.

1 large thin prepared pizza crust (like Boboli)
1 teaspoon olive oil
3 tablespoons prepared pesto sauce
1 1/2 cups peeled and sliced eggplants, in pieces about 1/4 inch thick
2 cups thinly-sliced mushrooms
1 1/4 cups crumbled feta cheese
salt & freshly ground black pepper, to taste
red pepper flakes, for garnish (optional)

Steps:

  • Place the oven rack on the middle rung; preheat oven to 450 degrees F.
  • If your pizza crust is unbaked, pre-bake it for 5 minutes.
  • Combine the olive oil and pesto, then spread crust with the mixture.
  • Place eggplant and mushrooms evenly over the pesto, then sprinkle with the feta cheese.
  • Season the pizza with salt and freshly ground pepper, to taste.
  • Bake on pizza pan or on pizza stone in preheated oven for 15 to 20 minutes or the eggplant is cooked to preference, the crust edges are golden, and the feta is soft and beginning to brown (make sure to check it occasionally so that pizza doesn't burn).
  • Note: those folks who like it a bit spicier can garnish their servings with red pepper flakes; also it's even better if you use prepared eggplant - take a look at my posted recipe "Hopvine's Marinated Roasted Eggplant".

These are spicy little marinated eggplant strips that are great slipped into a sandwich, on the side of grilled meats or as an antipasto. Use equal amount vinegar to water. My grandmother used to make jars of this all the time.

1 lb eggplant
1/2 cup white vinegar
1/2 cup water
1/4 teaspoon salt
6 garlic cloves
dried oregano or fresh parsley
fresh hot pepper
olive oil

Steps:

  • Peel eggplant.
  • Cut the eggplants into thin long strips, like french fries.
  • Place in a colander, sprinkle with the salt, and set a plate and a weight on top. Set the colander in a large bowl and set aside for at least 2 hours.
  • Squeeze as much water as you can from eggplant.
  • Place water and vinegar to boil.
  • Place eggplant in boiling water for 3 minutes only. Don't over cook or will be mushy.
  • Drain in colander, set a plate and a weight on top. Set colander in a large bowl and set aside for at least 4 hours I do overnight.
  • Squeeze any remaining liquid you can out of eggplant. Put eggplant in glass jar with fresh garlic cloves , fresh cut into big chunks hot peppers, fresh mint and good drizzle of olive oil. Shake up and refrigerate. Makes 1 quart. Enjoy!

12 baby eggplants, topped and tailed,halved lengthwise
1 cup extra virgin olive oil
1 lemon, juice of
2 tablespoons balsamic vinegar
3 cloves garlic, minced
1/3 cup pine nuts, toasted
2 tablespoons raisins
1 tablespoon sugar
1 bay leaf
1 pinch red pepper flakes

Steps:

  • Preheat the grill to high.
  • Place the eggplants, cut side up, in the grill pan and brush with a little of the olive oil.
  • Grill for 10 minutes, until slightly blackened, turning them over half way through cooking.
  • To make the marinade: Put the remaining olive oil, the lemon juice, vinegar, garlic, pine nuts, raisins, sugar and bay leaf in a clean, screw-top jar.
  • Add the red pepper flakes and salt and pepper and mix well.
  • Place the hot eggplants in an earthenware or glass bowl, and pour over the marinade.
  • Leave to cool, turning the eggplants once or twice.
  • Serve at room temperature.

1 lb eggplant, peeled and sliced
1 egg white, lightly beaten
1/2 cup seasoned dry bread crumb
1 Boboli pizza crust
1 cup pasta sauce
1 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, grated

Steps:

  • Preheat oven to 375º. Spray 1 large baking sheet w/ fat-free cooking spray.
  • Dip eggplant slices into eggwhite, then breadcrumbs.
  • Arrange on prepared baking sheet. Bake 15 minutes. Turn slices over. Bake 10 minutes longer or until browned on both sides. Remove from oven.
  • Increase oven to 400º.
  • Top pizza crust with pasta sauce, eggplant, and cheeses. Bake 10-15 minutes.

1 tablespoon cumin seed, lightly crushed
8 tablespoons olive oil
1 red chile, deseeded and chopped
1 large aubergine, sliced thinly
200 g new potatoes, thinly sliced
2 (175 g) pizza crust mix
200 ml sour cream
1/4 cup fresh coriander, chopped
chili flakes, to serve

Steps:

  • Heat oven to 220C/425°F.
  • Mix together the potato, aubergine, oil and chilli and leave to stand.
  • make up the pizza bases according to the packet and roll into 2x23 cm circles.
  • Place on baking trays and top with the potato mix. Leave to rise covered for 15 minutes.
  • Bake for 20 mins until crisp and golden.
  • Cut the pizzas into wedges and top with the sour cream, chilli flakes and coriander.

50g bag rocket

Steps:

  • Heat oven to 200C/180C fan/gas 6. Toss the aubergine with 2 tbsp olive oil and seasoning in a large roasting tin and roast for 30 mins until golden and soft.
  • When cooked, toss with the vinegar, sultanas and remaining oil. Scatter over the rocket just before serving. Can be served warm or at room temperature.
