TRADITIONAL ENGLISH TOFFEE
Ingredients250g Butter (A Whole block)500g Sugar (Half a pack)2 x Tbsp Lyles Golden Syrup 2 x Tbsp Brown Vinegar (Like you put on your fish n chips)MethodStep 1Melt butter in a heavy based sauce pan over a gentle heat. Step 2Once melted add all other ingredients and stir while dissolving all together and bring to a boil.Step 3Turn the heat down to a simmer and keep stirring until the molten lava like mixture turns a darker golden brown. Test your toffee by dropping some in a glass of iced water - You'll know it's ready if it sets when it hits the water. Once you're happy with the toffee, pour out the mixture in to a greased baking tray and leave to cool

CLASSIC ENGLISH TOFFEE RECIPE
My English Toffee recipe is a quintessential holiday candy - delicious and crunchy! It's also the perfect thing to have on-hand for a beautiful and simple gift!

- Line a medium baking sheet with parchment paper and set aside.
- In a heavy-bottomed saucepan over medium heat, combine butter, sugar, vanilla, and salt.
- Let the butter melt and sugar dissolve and then bring to a simmer, then cook, stirring constantly with a whisk, so the butter and sugar don't separate, until mixture turns dark amber, 15 - 20 minutes or 285ºF on a candy thermometer. Note: if your toffee is still pale at this temperature then continue to simmer until you reach the color in the video.
- Pour toffee mixture into the prepared baking sheet and set aside to harden for 20 minutes.
- Gently melt the chocolate and using a spatula spread it thinly and evenly over the hard candy. Sprinkle the chopped almonds and pecans all over the wet chocolate.
- Refrigerate to JUST set the chocolate, about 1 hour. Then remove from the fridge and break into pieces and enjoy. Store the toffee at room temperature in an airtight container. Note: Don't store the toffee for too long in the fridge as it will make the toffee damp and not as crisp.

Steps:
- Line a large jelly roll or half-sheet pan with heavy-duty foil and butter the foil or just use a Silpat.
- Melt the butter with the salt in a heavy 3 quart saucepan over medium heat. Slowly add the sugar, stirring constantly with a wooden spoon. Add the water about halfway through this process.
- After all the sugar is added, begin testing the mixture to see if the sugar is dissolved. The mixture will probably be boiling at this point.
- When sugar is dissolved, add the almonds, and increase the heat to medium high. Cook to the hard-crack stage, or about 310-320 degrees on a candy thermometer, stirring often to keep the candy from burning on the bottom. When it's done, it should be a medium-dark amber color and have a caramel aroma. The almonds should have a toasted color but they should not burn. I use a temperature right in the middle, 315 degrees.
- Remove from heat and pour into the prepared pan, spreading as evenly as possible with an offset spatula. Be careful, this stuff is hot! Sprinkle the chocolate chips all over the toffee, and wait a couple of minutes until they melt. Then spread the chocolate evenly over the toffee. Sprinkle with chopped nuts, and press them in gently with a spatula or bottom of a glass to anchor them in the chocolate.
- Allow the toffee to harden at least 6-8 hours. Break into pieces. Store in an airtight container in a cool place.

YS ENGLISH TOFFEE
I get more requests for this candy than any other I make for the holidays. Not sure where I got the recipe because I have been making it so long. This recipe takes alot of stirring but worth every minute.

Remove from heat and pour onto a greased cookie sheet. While hot, cover with chocolate chips. Spread when melted. Sprinkle with chopped nuts. Break into pieces when cooled.

- In heavy saucepan, combine butter, sugar, water, and salt.
- Cook to hard-crack stage (300°F) stirring with a WOODEN SPOON constantly and watching carefully. Do not try a plastic spoon, it will melt into your delicious candy!
- Immediately pour into ungreased 13"x9" pan.
- Cool until hard.
- Melt chocolate over hot, but not boiling water.
- Spread over toffee; sprinkle with nuts, pressing them into chocolate.
- Let stand 2-3 hours or chill 30 minutes.
- Break into bite-size pieces.

- Melt the butter in a saucepan.
- Add sugar, salt and vanilla.
- Boil gently several minutes, stirring frequently to prevent burning. Until it reaches 300 degrees on a candy thermometer.
- Arrange 1 cup pecans on 8 inch square pan.
- Pour the boiled mixture over top and spread to cover evenly.
- Let toffee set up for 15minutes until slightly firm but still VERY warm.
- Sprinkle with chocolate chips and allow them to melt completely.
- Gently Spread chocolate to cover completely.
- Arrange pecan halves over top.
- Cool to set.
- Drizzle with melted white chocolate and let cool completely.
- Break into chunks to serve.
