MARIA'S TOMATO-BASIL SPAGHETTI SAUCE
Homemade tomato sauce that doesn't take hours to make! This sauce can be different every time or can be your own signature sauce, but the basics are the same! Included are directions for using real tomatoes, but if time doesn't permit canned tomatoes will work nicely as well. Enjoy!

Steps:
- Puree tomatoes in a food processor until smooth; strain through a fine-mesh sieve into a bowl.
- Heat olive oil in a large, deep pot over medium heat. Stir strained tomatoes, onion, Parmesan cheese, basil, garlic, and red wine together in the pot with the oil; season with salt and pepper. Bring the mixture to a boil, reduce heat to medium-low, and cook at a simmer until thickened, about 25 minutes.

SPAGHETTI WITH FRESH TOMATO AND BASIL SAUCE
This recipe is from Foodland Ontario and I love to make it when my garden is full of delicious tomatoes. I hope that you enjoy it as much as I do.

Steps:
- Cook pasta according to directions.
- Melt butter over medium high heat until foamy.
- Add garlic and cook and stir for 2 minutes.
- Stir in tomatoes and bring mixture to a boil.
- Reduce heat, cover and simmer 5 minutes.
- Remove from heat and stir in basil (I use anywhere from 1/4-1/2 cup of basil) and vinegar.
- Add salt and pepper to taste.
- Drain pasta and return to pot. Pour tomato mixture mixture over pasta; toss to combine. Sprinkle with parmesan and hot pepper flakes, if desired.
- Enjoy.

TOMATO-BASIL SAUCE
This is the second recipe from 30 Minute Meals Episode: Dinner and a Song. Okay, the first two reviewers have said this is a bit thin. So I'd suggest draining the crushed tomatoes also. But retain the juice incase it is needed later during cooking. Or you could add 1 or 2 tablespoons of tomato paste.

Steps:
- Put large pot of water on to boil for penne.
- Salt boiling water and cook penne to al dente.
- Heat a medium pot on stove top over medium low to medium heat.
- Add extra-virgin olive oil, garlic and onion for the tomato basil sauce.
- Let onions cook with garlic slowly over 15 minutes, be careful not to brown onions.
- After 15 minutes, stir in tomatoes and raise heat to warm tomatoes.
- Season with salt and pepper.
- Stir in basil and wilt it into the sauce.
- Remove sauce from heat.
- When ready to serve, place sauce in the bottom of a large serving bowl to toss with hot pasta.

- Cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, stirring often, about 8 minutes.
- Meanwhile, combine the next 7 ingredients in a food processor. Pulse just until the tomatoes are coarsely chopped (do not puree).
- Drain the pasta, reserving some of the pasta water. Toss the pasta with the tomato mixture and fresh mozzarella in a large bowl. Add some of the reserved pasta water (about 1/4 cup) if the sauce looks dry. Serve immediately.
TOMATO BASIL SPAGHETTI
This is a great dish when you have little time to cook but something fulfilling and with great taste. The original recipe calls for 1 lb of spaghetti, but since I like more sauce I decreased the amount to 3/4 lb. It's up to you how much pasta you'd like to use. The sauce comes together quickly and the results are always excellent. Begin the sauce as soon as you turn the pasta water on to boil. It's that fast! Recipe courtesy of Eva Longoria.

- Bring a large pot of salted water to boil. Cook the spaghetti to al dente, about 8 minutes or according to your package directions.
- Meanwhile, heat the oil in a large skillet over medium heat. Add the onion, garlic, half of the basil and a pinch each of salt and pepper. Cook, stirring occasionally, until translucent - about 5 minutes. Add the tomatoes and the tomato sauce. Bring to a simmer while you break up the tomatoes with the side of a spoon. Simmer gently for about 4 minutes. Season with salt and pepper to taste.
- Drain the pasta and put in a large serving bowl. Pour over the sauce and add all but a handful of the left over basil. Toss until the pasta is well coated with sauce. top with the remaining chopped basil, grated cheese and dried red pepper flakes. Enjoy!

- Heat the olive oil in a large sauce pan. Lower to medium heat and add the chopped onion. Saute until it starts to brown, 5-10 minutes.
- Add the minced garlic and cook for 2-3 more minutes.
- Add the wine to deglaze the pan, making sure to scrape up all the browned onion and garlic. Cook on medium-high heat until almost all the liquid evaporates, about 5 minutes.
- Stir in the tomatoes, basil, oregano, salt, and pepper. Cover, and simmer on low heat for 15 minutes.
