3 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon baking soda
1 tablespoon ground cinnamon
1 teaspoon salt
1 1/2 cups butter, room temperature
1 1/2 cups granulated sugar
1 1/2 cups light-brown sugar, packed
3 eggs
1 tablespoon vanilla extract
3 cups semisweet chocolate chips
3 cups old-fashioned rolled oats
2 cups sweetened flake coconut
2 cups chopped pecans

Steps:

  • Heat oven to 350°F.
  • Mix flour, baking powder, baking soda, cinnamon and salt in bowl.
  • In 8-quart bowl, beat butter on medium speed until smooth and creamy, 1 minute. Gradually beat in sugars to combine, 2 minutes. Add eggs, one at a time, beating after each. Beat in vanilla.
  • Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans.
  • For each cookie, drop 1/4 cup dough onto ungreased baking sheets, spacing 3 inches apart.
  • Bake in 350°F oven 17 to 20 minutes, until edges are lightly browned; rotate sheets halfway through. Remove cookies to rack to cool.

1 cup granulated sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder
2 cups rolled oats
1/2 cup chopped pecans
1 (6-ounce) package chocolate chips
1/2 cup shredded coconut

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, with an electric mixer, cream the shortening, granulated sugar, and brown sugar. Add eggs and the vanilla and beat until well blended. Stir in the flour, baking soda, salt, and baking powder. Add oats, nuts, chocolate chips and coconut, mix until combined. Spoon cookie mixture onto greased foil lined cookie sheet. Bake for 8 to 10 minutes. Transfer the cookies to a wire rack to cool.

2 cups (200 grams) old-fashioned rolled oats
1 cup (90 grams) sweetened shredded coconut
1 1/2 cups (150 grams) chopped pecans, toasted
1 teaspoon baking soda
2 sticks (16 tablespoons; 226 grams) unsalted butter, at room temperature
1 cup packed (215 grams) dark brown sugar
1 cup (200 grams) granulated sugar
1 3/4 teaspoons kosher salt
2 large eggs, at room temperature
2 teaspoons pure vanilla extract
2 cups unsweetened cornflakes

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Whisk together the flour, oats, coconut, pecans and baking soda in a medium bowl until combined.
  • Beat the butter, brown sugar, granulated sugar and salt in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs and vanilla and beat on high speed until creamy, about 3 minutes more. Add the flour mixture and mix on low speed, scraping the sides and bottom of the bowl with a rubber spatula to combine completely. Add the cornflakes and mix on low speed until evenly distributed.
  • Using a 1-ounce (2-tablespoon) scoop, arrange 12 scoops of cookie dough on the prepared baking sheet, leaving about 2 inches between each.
  • Bake until the cookies are lightly golden around the edges, 14 to 16 minutes. Let cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely. Let the baking sheet cool slightly, then continue baking with the remaining cookie dough.

Steps:

  • Sift together dry ingredients; set aside.
  • Blend together margarine (or shortening) and sugars.
  • Add egg & beat until light & fluffy then stir in vanilla.
  • Combine with dry ingredients & mix well.
  • Add remaining ingredients& mix well.
  • Drop by teaspoon onto greased or parchment-lined cookie sheets and bake in preheated 350°F oven for 12 minutes.
  • Allow a few minutes longer if you prefer crisp cookies.

1 1/2 cups margarine, at room temperature (3 sticks)
2 cups brown sugar
2 cups white sugar
4 eggs
2 teaspoons pure vanilla extract
1 teaspoon salt
2 teaspoons baking soda
1 teaspoon baking powder
4 cups unbleached white flour
4 cups old fashioned oats
2 cups hershey's chocolate chips
1 cup coconut
1 cup chopped nuts

Steps:

  • With an electric mixer, whip up the margarine and sugar in a large mixing bowl until fluffy. Add the eggs, vanilla and salt and beat well.
  • Blend the baking soda and baking powder into the flour, either directly in the measuring cup or in a large bowl, and then tap this mixture into the creamed ingredients, mixing slowly. Using a sturdy spoon, mix the rest by hand.
  • Add oats and stir until the dough comes together. Stir in chocolate chips, coconut and nuts.
  • Line a cookie sheet with baking parchment and scoop the dough with a 2-ounce ice cream scoop. Press the top of the cookie dough mound down slightly.
  • Bake in a preheated 350°F oven for 7-12 minutes, until lightly golden in color with tiny cracks on top of the cookies.

Steps:

  • Place coconut and pecans on a jellyroll pan.

  • Set aside to cool.
  • In a large bowl, cream butter and sugars.
  • Add eggs and beat well.
  • Add dry ingredients and vanilla.

My mom clipped this recipe out of a local newspaper a few years ago. I have made them several times since then, especially at Christmas. They are usually the first to disappear from the cookie plate. The recipe has alot of mix-ins and will get hard to stir, I suggest you use a BIG bowl and sturdy wooden spoon. This makes a Texas-size batch!!

3 cups flour
1 tablespoon baking powder
1 tablespoon baking soda
1 tablespoon cinnamon
1 teaspoon salt
1 1/2 cups butter, at room temp
1 1/2 cups sugar
3 eggs
1 tablespoon vanilla
3 cups oatmeal
2 cups coconut
3 cups chocolate chips
2 cups chopped pecans

Steps:

  • Mix first five dry ingredients in a bowl and set aside.
  • In a BIG bowl, mix butter until creamy, gradually mixing in sugar.
  • Add eggs one at a time and mix well.
  • Add vanilla and mix well.
  • Gradually add flour mixture, stir well.
  • Add remaining ingredients one at a time, stirring well. (this is where the stirring starts getting harder).
  • Use a medium size cookie scoop and drop rounded balls of dough onto ungreased baking sheets. Flatten slightly.
  • Bake at 350 degrees for 17-20 minutes.
  • Remove from baking sheet and cool.
  • Makes approximately six dozen cookies or you can use a large scoop and make approximately three dozen jumbo cookies.
