2 ounces tequila made from 100 percent agave, preferably reposado or blanco
1 ounce Cointreau
1 ounce freshly squeezed lime juice
Salt for garnish

Steps:

  • Combine tequila, Cointreau, and lime juice in cocktail shaker filled with ice. Moisten rim of Margarita or other cocktail glass with lime juice or water. Holding glass upside down, dip rim into salt. Shake and strain drink into glass and serve.

Simple tart made with margarita mix containing no tequila. The tart dough is based on one from Cooks Illustrated.

Number Of Ingredients 10

1 1/4 cups all-purpose flour
3/4 teaspoon salt
1/4 cup granulated sugar
4 tablespoons shortening, chilled
4 tablespoons butter, frozen and cut into tablespoon pieces
1 egg yolk, large
2 tablespoons water, cold
1 (14 ounce) can sweetened condensed milk
3/4 cup margarita mix
4 egg yolks, large

Steps:

  • For the tart shell:.
  • In a food processor, process the flour, salt (1/4 teaspoon extra is used because of the nature of the filling, for any other sweet tart application, this would be 1/2 teaspoon), and sugar. Add the shortening and butter and process the mixture until there are no visible butter chunks left, approximately 8-10 long pulses.
  • In a small bowl, whisk together the egg yolk and water. Set aside.
  • Place the flour mixture into a large bowl and add the egg yolk mixture. Mix together with a spatula until it comes together. Place dough in plastic wrap and refrigerate for 1/2 hour.
  • Roll out tart dough between two pieces of plastic wrap or press evenly into a 9 inch tart pan or ring. Make sure the sides are not too thin and that the bottom meets the sides at a 90 degree angle (so there is not a lot of dough in the corners where the bottom meets the sides). Roll the rolling pin over the top of the tart pan to clean any dough off of the rim.
  • Place the tart shell in the freezer for at least 1/2 hour.
  • Preheat oven to 375°F.
  • Remove the tart shell from the freezer and press two sheets of aluminum foil across the tart pan. Press the foil into the pan so that it is form fitting and no dough rim is exposed. Dock the foil and dough with a fork only a few times. Place pie weights, dry beans or rice into the tart pan.
  • Place the tart pan on a baking sheet and bake the tart shell for 10 minutes, rotate pan and bake for 10 more minutes. Remove tart shell from oven, remove the pie weights and foil and place the tart shell back in the oven for 10 more minutes.
  • For the tart filling:.
  • While the dough is in the oven, in a large bowl, whisk the 4 egg yolks, sweetened condensed milk, and margarita mix.
  • Pour the mixture into the hot tart shell and return to the oven. Turn the heat down to 350°F.
  • Bake for 15 minutes. Remove and cool.
  • Serve chilled.

2 limes
Pink salt or sea salt, coarsely ground
2 ounces blanco tequila
1 ounce orange liqueur, such as Cointreau
1 ounce fresh lime juice

Steps:

  • Juice one lime to make 1 ounce and set aside. From remaining lime, slice a thin wheel for garnish and a wedge for salt rim.
  • Run lime wedge around one side of the rim of a chilled rocks glass; dip rim in salt to coat. Partially fill glass with ice (we prefer 1 large sphere for minimal melting and dilution).
  • Fill a cocktail shaker halfway with ice. Add tequila, orange liqueur, and reserved lime juice. Shake vigorously until outside of shaker is cold and frosty, about 10 seconds; strain into prepared glass. Garnish with lime wheel and serve immediately.

50ml tequila
1 ½ tbsp lime juice, plus extra for the glass (1 lime should be sufficient)
1 tbsp triple sec
salt and slice of lime, to serve

Steps:

  • Put a little salt on a saucer, then wipe the rim of your martini glass with lime juice. Turn the glass upside down in the salt and twist to coat.
  • Stir the ingredients and a little ice together or put them in a cocktail shaker to combine. Strain into a chilled martini glass. Serve with a slice of lime.

  • To prepare the crust, preheat oven to 350° F. Combine butter and sugar in a sauce pan over medium heat. Stir frequently until the butter has melted and the sugar loses its gritty consistency.
  • Mix in finely ground tortilla chips, stirring until well combined. Transfer crumbs to a 9 to 9/ 1/2-inch tart pan with a removable bottom or a 9-inch pie pan. Working carefully -- the mixture will be quite warm -- distribute crumbs evenly and firmly press them into the bottom and up the sides to form a crust (a small measuring cup helps, although fingers work best for the sides).
  • Bake crust until it smells fragrant and has just started to brown, about 15 minutes. Remove from oven and set aside.
  • For the filling, whisk together sugar and eggs in a medium saucepan. Add lime zest, juice, tequila, triple sec, and salt; whisk until smooth. Cook over medium-low heat, stirring constantly, until mixture thickens to the consistency of loose pudding, about 10 minutes. Reduce heat to low and whisk in butter, a few slices at a time, until completely melted and smooth.
